Great recipe and instructions. I used just a little shaoxing wine instead. Added a dash of lemon juice and a pinch of msg and water. A sprinkle of mozzarella and parmigian. Toped with ground black pepper. I did laugh when you burnt your hand. 😂

The alcohol will be cooked off. Since mushrooms are difficult to overcook, you might as well spend more time to reduce the wine to cook off as much alcohol as possible. Taste taste taste! Then you'll know if the alcohol is gone. Alternatively, just skip it. Honestly, butter garlic cream are all damn good to begin with.
You should try to cook mushrooms (especially these brown ones) in a dry pan, and after all moisture evaporates, put some butter with little olive oil and fry them. After that pour some cognac, brandy, wine etc. Btw, like your recipes! Cheers👍🏼

Is mushrooms on toast a thing in the UK? I do quite often make some sort of creamy mushroom sauce, but afterwards serve it with pasta (papardelle mostly) But yeah.. might put it on toast next time I make some! Great video as usual :)
Personally I think that's too much cream so whenever I make a cream sauce, I use milk as a base and then add a bit of cream to make a lighter cream based sauce. Also need to use a bit of corn starch to thicken the sauce as cream is thicker than milk

Oh, I used vermouth because I didn't have madira and it was a good substitute. At least the flavor of the food was still nice.

Vinegar of your choice or even lemon juice. The primary reason for the addition of wine is for acidity.
