Yes I’m going to can pumpkin but I also cook, mash and then dehydrate pumpkin. When dry blend into a powder and can rehydrate and use as canned. I always put some pumpkin powder in homemade chicken noodle soup for added color, nutrition and a depth in taste.
I call it Autumn soup whenI add pumpkin to a chicken stock based soup with whatever veg I'm harvesting or have on hand. :) I also put it in potato soup with some sage and jalapeno.
I peel, remove seeds, cut into chunks, bake until soft then mash and pack jars with the pumpkin before canning. Using water in the jars makes a very watery pumpkin.

I'm just now watching your video for the second time before I actually can some pumpkin for the first time. My sweet husband cut them into manageable pieces for me after cleaning the insides out, took the skin off, and then helped me cut them up into cubes! we're taking a break so I can rest some (I've not been well for a while and tire easily.) before canning. I just finished baking two sugar babies, one cheese cake, and one Cinderella pumpkin to puree and freeze. I have six more sugar babies that I will be canning up too. Thanks for sharing the method you are using is the same as several other videos I watched...I like your reasoning for using fresh boiled water to pour over your cubed pumpkin to be canned.

Sometimes I give my blanching water to my chicken's, they love it and I love that they get any nutrients that may be left in that water :). I keep you and your precious children in my prayers often..
I picked up 4 pie pumpkins off of a produce stand today. $2 each. Last week I found a case of libbys at dollar general that hadn't been put out yet so I grabbed 2 cans, found out they were 1.89. I am surprised you didn't use salt or sugar. I am happy to have found what I found. Thanks so much for the tutorial. I love fall.

I have canned pumpkin for several years. It's 2020 finally used the last of the 2016 batch. I don't use the blanching water either. I cooled it down and pour the water on my garden.
I'm not canning pumpkin, but we had a huge butternut squash haul this year. We make our holiday pies from squash instead of pumpkin, so I will definitely use this recipe to can squash!! Thanks!!
(((((HUGS))))) I just wanted to let you know that right now I have 7 quarts of pumpkin in pressure canner #1. I still have 3 more pumpkins to can up. And in a 2nd pressure canner, I have 8 pints of taco meat. So I went shopping today and bought a 10# chub of 90/10 hamburger. Tacos for dinner and the rest to can up. There is some taco meat in the fridge for lunch and dinner for the next couple of days. GOD loves you and your family.

But now that I bought a pressure canner I’m so happy because we can save our freezer space and just put these up on the shelf. So glad I found your video when researching! I don’t blanch mine for that long, I drop it in for just a few minutes then straight into my jars with a light syrup. I’ve used regular pumpkins for canning as well and it still turns out fantastic..

I made a pumpkin pie with real pumpkin and didn't care for the texture, however I realize now that even if I don't use this for pie, there is a myriad of other recipes I could use it for where texture wouldn't be an issue. I'm going to be looking for pumpkins today!

When I had a house full of kids I would bake my pie pumpkins mash the meat and freeze them. I wrote the different amounts on the bags for different recipes. Yours look beautiful
My late husband and our daughter had a tradition from her early childhood of going to the pumpkin patch and from scratch homemade pumpkin pie, for fall and Thanksgiving. I started canning pumpkin about twelve years ago. It's fine for a quick pie, but their fresh pumpkin pies were always so much better. I canned about 7 quarts last year. I'll can more this year. Great for sausage soup also.
My dogs love pumpkin in their kibble, that or sweet potatoes, so I’m going to can up some to have on the shelf for them. Might can up the sweet potatoes too.

We have a frost forecast tonight so I rounded up all the pumpkins and squash that looked mostly ready and covered the rest and am crossing fingers. I ended up with 7 mini pumpkins...a bit smaller than Sugar Pies and bigger than Jack Be Littles. Those will make some nice pie but I have 7 ginormous Cushaw squash that still aren't ready and supposedly they make better pie than Sugar Pies. Yikes, I'll have to donate some of those to the food bank. Too much pumpkin! It doesn’t surprise me you ended up with 13. I canned pumpkin last week in wide mouth quart jars, and 3 pie pumpkins filled 7qts. I use an All American 915, so that was all I could do at one time. I had 3 more pumpkins and they filled 7 more with a bit left over that I cooked up for pumpkin spice pancakes this morning 😁

But I didn’t can them, I would bake a lot Some things went in freezer forfall and winter or give the goodies to the neighbors. I haven't seen pumpkins in my area yet. Might still be too warm. I do plan on getting a few pumpkins for pumpkin butter. I make a little bit of pumpkin butter every year. I've never canned pumpkin, but I might this year. I've always roasted, pureed it and put it in vacuum bags for the freezer. I premeasure for pies and breads.
Heather...you need to enter your canned foods into the Michigan State Fair. Everything you can turns out so BEAUTIFUL in the jars. I swear, you'll walk away with every first prize they offer in every canning category!!! :-D

I purchased some pumpkins and squash at a farmstand yesterday in anticipation of watching your video and doing just this, canning it. I'm so tired of getting pumpkins and squash and hoping they will last a few months into winter to use them a little at a time...Oh, and sweet potatoes...was gifted a bunch of them, and they will spoil before I could use them all, but we use them interchangeably with squash in a lot of dishes, so yes, planning to can as much as I am able. I picked my cabbages, so I'll be making sauerkraut in the next couple of days. Of course, it'll be a month and a half or so before it's done and I can post the video. :) Got a good start on clearing out the shed so I'm that much closer to getting the cookstove back in the house and I found a couple dozen half pint jars in the process.

I want to can some pumpkin this year. I was going to cook some up and freeze it, but I'm running low on freezer space and it's almost deer season here, so I think canning will be the way to go. I've got 4 pie pumpkins waiting to be processed, thinking about getting a few more and just doing a whole bunch.

Heather, I truly enjoy watching your videos & you're the reason why I want to start canning. Looking forward to learn more from you & Love it when you state that you're a Rebel. =0) I've not canned pumpkin yet (will try this year).. I'm new to doing the whole canning thing. =0) I don't use the pie pumpkins though.. I prefer to buy full sized pumpkins halfway through season mid-October when prices drop. You will get alot more pumpkin at better cost.. plus the taste is the same. BUT I breakdown the pumpkins same as your hubby does with cutting them up... then I've always processed by blanching until fork tender, drain & press extra liquid out then put in blender to make pumpkin mush. Then I measure out 3 cups (makes 2 pies) to put in quart size freezer bags & freeze it by laying bags out flat to freeze (saves space in freezer). Also get the benefit of alot of pumpkin seeds to roast. ♡ My standard is that I process anywhere between 6-10 large pumpkins a year. So you might want to try the larger pumpkins for more pumpkin for better price point... especially since the pie pumpkins are not as abundant this year.. just a thought. =0) In Friendship, Ruth S.

Pumpkin is also very good if eaten as a squash. If you like Acorn Squash you will like pumpkin prepared the same way.

Yes I have canned pumpkins before, but always made purée.
This time I’m canning it for my dog food, yes I make homemade.
So I’m going to make it chunky.

Hi Heather, hope you are well and family too. I used to cook pumpkins when my boys would pick them out of the garden and they love pumpkin anything. But I didn’t can them, I would bake a lot Some things went in freezer forfall and winter or give the goodies to the neighbors. I haven't seen pumpkins in my area yet. Might still be too warm. I do plan on getting a few pumpkins for pumpkin butter. I make a little bit of pumpkin butter every year. I've never canned pumpkin, but I might this year. I've always roasted, pureed it and put it in vacuum bags for the freezer. I premeasure for pies and breads.

I purchased some pumpkins and squash at a farmstand yesterday in anticipation of watching your video and doing just this, canning it. I'm so tired of getting pumpkins and squash and hoping they will last a few months into winter to use them a little at a time...Oh, and sweet potatoes...was gifted a bunch of them, and they will spoil before I could use them all, but we use them interchangeably with squash in a lot of dishes, so yes, planning to can as much as I am able. Thank you!

I picked my cabbages, so I'll be making sauerkraut in the next couple of days. Of course, it'll be a month and a half or so before it's done and I can post the video. :) Got a good start on clearing out the shed so I'm that much closer to getting the cookstove back in the house and I found a couple dozen half pint jars in the process.

I was my pumkins poke holes in set in cooking pans with about 1 to 2 inches water cook till tender then put all in blender so dint lose any vit or minerals and can with a little salt like half t

How exciting!!! Was worried you weren’t going to do the pumpkin video. My husband and I just made our first blackberry pie filling. Didn’t turn out as thick as it should have. We got overly excited and didn’t let the filling get thick enough. But it was fun. Thank you for all you share.

I want to can some pumpkin this year. I was going to cook some up and freeze it, but I'm running low on freezer space and it's almost deer season here, so I think canning will be the way to go. I've got 4 pie pumpkins waiting to be processed, thinking about getting a few more and just doing a whole bunch.

I've not canned pumpkin yet (will try this year).. I'm new to doing the whole canning thing. =0) I don't use the pie pumpkins though.. I prefer to buy full sized pumpkins halfway through season mid-October when prices drop. You will get alot more pumpkin at better cost.. plus the taste is the same. BUT I breakdown the pumpkins same as your hubby does with cutting them up... then I've always processed by blanching until fork tender, drain & press extra liquid out then put in blender to make pumpkin mush. Then I measure out 3 cups (makes 2 pies) to put in quart size freezer bags & freeze it by laying bags out flat to freeze (saves space in freezer). Also get the benefit of alot of pumpkin seeds to roast. ♡ My standard is that I process anywhere between 6-10 large pumpkins a year. So you might want to try the larger pumpkins for more pumpkin for better price point... especially since the pie pumpkins are not as abundant this year.. just a thought. =0)
