  • This day is all about the Pumpkin - and what's funny, we actually filmed this on National Pumpkin Day! Who knew right. We're going to process our Gete Okosomin Squash, and all of our pumpkins and prep them for the pressure canner. And we'll also make some wonderful autumnal Pumpkin Soup, and grill some pork tenderloins our on the grill for dinner. This a fun video, there's even a special guest about mid-way through ♥

    The pumpkin ,being underripe is fine...in Asia they eat them at all stages of development.

    Thanks for the tips on canning pumpkins. We ended up with around 50 pumpkins this year 😁. I have discovered a great way to grow them. I make a 5 ft circle of chickenwire in the fall . I put landscape fabric on the inside and cardboard and start a hugel mound in it. Layers of corn stacks leaves and grass , then chickens bedding. I will add weeds, leaves , old tomato plants,sticks, wood chips or shredded paper. I keep layering it until it comes to the top. It sits all winter. It will sink to around 1/2 of what you started with. I save leaves and grass in plastic bags over the winter to add to my circles, I will add more chicken bedding, layer finished compost on the top then potting mix if needed.
    I use the top of this planter for strawberries and I plant the pumpkins plants or seeds at the base- the giant compost fertilizes the plants all season. You need about 20-30 ft around the hugel circles. I had 2 pumpkin plants at the base on opposite sides . Left me room to pick strawberries. I do this in my chicken yard. I had 3 circles and 6 plants that really produced. Last year we had 60 pumpkins. I gave a lot away. We and the chickens eat them all wInter. Happy growing everyone.

      Qweeknee the hugelkulture (sp?) actually works really well at keeping moisture. Should be great for your area.

    My family's favorite pumpkin meal is "Dinner in a Pumpkin". I have modified it to be similar to Shepherd Pie. Filling recipe is basically rice(cooked), mushrooms, mushroom soup, celery, onion, red bell peppers. Ground meat (we use venison) Soy sauce, garlic, brown sugar. Either stuff your pumpkin and bake, or I put in casserole dish and cover with mashed pumpkin and bake.

    I've seen a hack using a flat canning lid to scrape out the seeds from the insides. Russell is a great kid.

      I use a grapefruit spoon. The serrated edge makes it easy to scrape the goop next to the flesh.

    Where did you find your Native American squash seeds at? Definitely interested in growing some due to my Native heritage. Sure do miss the days when children knew how to say yes and no Ma'am or Sir. The soup recipe sounded wonderful. 🍀

    My husband and I love to watch you guys. He said that we are a lot alike so I needed to share my latest discovery when processing my pumpkins in NC. When making pumpkin butter and pumpkins chunks were cooked through, the juice in the crock pot was saved to be used as broth in other dishes. Used in Jambalaya and it was GREAT. Wanted to share this detail with you.

    I have been making pumpkin soup and chili for a few years. A lot of folks think it's so odd, since pumpkin is for pies. Boy, are they missing out on some good tasting soup on those cool/cold days of fall and winter.
    I love how homesteading youtubers are sharing what to do with what you store. It is helping the person new to gardening or homesteading realize there is more than making sure your pantry/store room is full. It also gives those who aren't new to homesteading diffhomesteaders.
    Thank you for all you do. And special thank you for incouraging a enthusiastic young man to becoming a future homesteader.

    Always good to see yawl!!!!! Cant believe people will buy pumpkins and just leave out on the front porch to rot. Hard to grow here in the central Texas heat so lot's of churches bring in and make a pumpkin patch to sell and raise money. We have grown but it's difficult. We always get a few and Rochelle will have me cut up and we can a freeze. I like to blanch a 2x4 piece and grill it, it's great! We subscribed to RJ's Farm and excided to help him. We are also thinking of starting our own page but I need to learn how to set it all up. Weather here is finally cool and the Fall/Winter garden is off to a good start.     You can roast and then freeze dry the pumpkin to save on jars and prep time. Powder the results and you can still use the results for soups mashed etc.

    I have huge Hubbard squash. I'm a small person so I drop my squash on the concrete to crack it open! Amazing help. I trim it into nice piece.

    Pumpkin soup is a staple winter dish here in Australia. I just do mine with some garlic, salt, pepper, sugar, (to taste) and curry powder fief off with pumpkin chunks at the beginning. A little chicken stock to cook the pumpkin till tender. Blend all together and top with cream or even plain yogurt. Yummo! This is the first time watching your channel as I’m canning pumpkin for the first time today. I’ve subscribed and will be watching lots more of your videos. Thanks for doing them.

    I got pumpkin down One regular jack-o-lantern pumpkin is 7 quarts. I will buy 3 medium pumpkins and get 21 quarts to last me all year.

    They say to salt brine them and rinse them helps with the roasting to but gives flavor I been wanting to try that and growing some pumpkin

    I just love Russell, recommended a few channels to him including "Gardener Scott". I also told Scott about Russell, and he loves him and will be willing to help him learn about raised bed gardening. He is a master gardener in CO and taught at a garden school for kids.     I saw somewhere on TH-cam to use a used canning lid to scrap out pumpkin guts. It has a curved sharp edge that works well.

    I save the seeds from pumpkins and soak them in salt water and roast them for a snack!! Yummy!

    I need to go watch the caramelized onion video, I didn't realize you could can then. We LOVE to add them onto our grilled cheese sandwiches after they're cooked. They're amazing on top of polenta, on top of focaccia bread, mixed into mashed potatoes 🤤
