Back in the 70s our home lost power for 5 days. Thank goodness we had a natural gas home. My mother had 2 canners going all day freezer canning and emptying our freezer. She kept me and my 2 sisters busy. Saved all the food. Great memory.

Here’s my tip: if you have no power you may also not have easy access to water to heat these up. If you leave a bit more space for water in your jars, you’ll use that water in the pot to heat them up. Then just add a bit of cornstarch or flour and some seasoning to make a creamy sauce.
If you're able to get into a Sams Club, a Costco or some other pallet store, they have a section typically off to the side of the exit doors that are bins of cardboard boxes that the shelf products come in, for people to use and easier transport their bulk items. I like to rifle through there and pick out the cardboard trays to use in my pantry to store my finished jars in and easier transport and store.
WOW! NEVER THOUGHT TO CAN FROZEN VEGGIES. I’ve always canned most of my meats when they get close to freezer burn, but didn’t think of veggies. THANK YOU! I know exactly what you mean when weather situations change you, I live in N Georgia and have lived through ice storms and hurricanes. My husband has always worked in food distribution delivering milk and now bread, 2 huge items bought during bad weather. Because of this we also see how crazy people act in stores when these storms show up. I love canning, but find my hobby of being prepared comes in handy during these times and keeps me out of the stores during crazy times. 😅

Now that I'm retired, I took it down, replaced the gasket, gauge and relief valve and will be taking it to the extension office to be tested. My regulator weight appears to be a 15 pound weight though...I didn't realize there was a difference till watching your video! I guess I need to order a 10 pound weight.
I bought a lot of frozen veggies and I cut up a couple onions and chopped potatoes and tomatoes,and cooked all for about 20 minutes and then I pressure cooked them in quart jars,
I have been concerned about losing power so I have been using up my frozen vegetables also (pressure canning). I also like to get a big chunk of meat, doesn't matter as long as it is cheap, and adding frozen vegetables to about 1/3 jar of meat...Instant meal. You explain things well. Good video!
I absolutely agree. I'm working towards more canned on my pantry shelves and less frozen for the same reason and anytime it's a full meal, that's an added bonus!
7/30/24 Since the global tech disruption hit I started canning everything possible from my freezer! There were areas in my city that were affected by the tech disruption AND storm damage - all at the same time!
@@dancinginabundance I understand. Since I had just about emptied my freezers with canning, they are full again. Now my tomatoes are starting to come in, not enough yet to can but I put them in the freezer until I have enough to process. I guess I will be starting over with emptying out my freezers. It is a lot of work but it is better than being hungry and saying "if I had only canned all my food......". Good luck to you.

I have a question about canning frozen veggies. When I cook can or frozen frozen corn or peas, I always add a Tablespoon of sugar. Can I add that when I'm canning too? Or do I need to wait until I'm ready to cook them.

I have been dehydrating frozen veggies that I can grab at a cheap price, I bought gallon jars and filled one up for my mom to have assortment for her soups she is 89 and prefers to eat soups. I also gave one gallon to my grand daughter . Now I am doing 3 jars for my home, I can up meat and veggies. Thank you for this vid waste not want not 😊
PERFECT, i am obsessed with frozen veggies and i need room in my freezer!!!!! Frozen veggies are exactly like fresh but having so many bags in my freezer can get bulky so If I can them which will extend them I'm all for it! I just will not use anything but frozen veggies...except now a "can" of them will be fine.
I clicked on your video so fast when my brain connected the idea of shelf stable foods in case the freezer goes out. We have been saving up for a generator but you never know when the power will go out or something happens. Thankful for finding your channel ma'am!

Thank you, Mrs Joan, for teaching the correct and safe way to can vegetables. Some people erroneously encourage others to waterbath low acid foods. It is extremely difficult to kill the botulism spores in low acid foods with waterbath boiling. Waterbath temperature is 212°F, and it takes 240-250°F to kill botulism spores, which is why pressure canning is recommended for low acid foods. Thank you also for emphasizing that there are specific times and pressure recommendations, depending on the food and it's acid level. The USDA makes these recommendations based on research and safety. Again, I appreciate that you are current with your information. I will not take the chance of poisoning my family with botulism by following outdated practices. It only takes one spore...

I'm just learning about canning, and I'm 77. Growing up we had a commercial freezer so other than pickles and jam Mom didn't can. (plus we weren't allowed to be in the kitchen when she was doing such things cause we got in her way. Then my husband and I were in the Army and they didn't allow us to move jars (cause of breakage). So here I sit all alone and I care about being ready for bad winters in WV and food shortages and such. Thank you for the lesson. I was kind of afraid of pressure canning - but thanks to you I don't think I will be.

@@janiefox3458 When you pack to move you cushion to glass, so i don't understand why they didn't let you move jars. Have you seen the cost of pectin?! I'd swear they have 1/2 less in them too. So online I looked for larger size pectin by the pound and organic flours. Much better prices!

After 20+ moves our last one when hubby retired we did a DITY move (DO IT YOURSELF) from San Antonio TX to the Eastern Panhandle of WV. I had come ahead to accept a job at the VA so my husband did the packing - - I thank God I wasn't around for that one.
I like the idea of adding more water so you can cook with it when you open the jar. One thing I learned growing up was to use the freezer as a temporary holding place until whatever we had in there could be canned, not for long term storage. It keeps the rotation going and freezer burn to a minimum.
I was just thinking about this this morning, and here you are on my feed. I needed to see this again. Thank you. I had to toss food from my freezer because it freeze-burned and i found it while my freezer iced up to overload, so I have to defrost. I found food 3 yrs old. it breaks my heart. I didn't know how to can or have a canner then. Thank God i have one now. It's the small presto 16qt but at least i have that. This will save a lot of money, as those frozen veges can get too expensive to lose.
I just found your channel! Last year in July, we had a terrible storm where I live in Springfield, Illinois. Called a derecho. Scariest storm I've ever been thru and I've lived here all my life. ( I'm 57) our town was shut down for over a week. The next week I bought my first pressure canner. I had water bath canned for years, but, I was scared of pressure canning. Not any more. I 100% agree with everything you just showed and said. You never know when you might lose power. That storm shocked us just like the snow storm you got shocked you. And it changed us all I believe. I subscribed ❤
FYI - I figured out that pint jars have different circumferences. Different ones I measured were 1/4 inch different around which meant I got more of the "ever so slightly" smaller ones into my canner. I noticed that while watching someone can pints in my same canner, he got more in his. That's when I measured the 2 brands I have.
Hey Miss Joan, I'm a new subscriber. I have been looking for someone to upload this type of video! There are so many packages of veggies from our garden just crowding up the deep freeze. And sometimes a package will be overlooked or go missing in the corners or the back known as the deep abyss, and it will be freezer burned when I finally dig it up! This way I can harvest, freeze, and can when i have the time and opportunity. I like to think of my freezer being a temporary holding place, like first base. Then the runner needs to advance to second when he can, and on to third and home plate! I see home plate like my dinner plate, the final destination 😋 I learned early that to harvest, wash, chop, blanche, cook down, and either freeze or can, 'CAN' NOT be done in one day! Especially if I have several veggies or fruits coming off on the same day. Yikes! Blessed beyond my daily capabilities 😇 Start calling family, friends, and neighbors begging them to come and get some of these yellow crook necks, zucchini, okra, ... Garden to freezer in a few hours is the way!

A great video! Just the information I was looking for. Have started canning for the same reason, get good food out of the freezer. I can but i dehydrate frozen veggies n fruits In half gallon jars with oxygen absorbers or vac seal. I think i might try canning some just in case later shtf need the water to cook with. Its also why i keep commercial canned veggies and beans in case i need the juice to cook with. I pressure can beans too.
I was blessed to find a national 1935 preasure cooker. I inherited my brothers double canner the size you are using! I was so happy! I have always used a mirror 4 QT preasure cooker! I love it that I learned about the possibility of pressure canning frozen vegetables in this video. But my quandary is: Why not just buy already canned veggies? They are already self stable for years. The work is done for a great price! We really need to guard our freezer space. My go to veggie is frozen, fresh with some. I live alone. When I buy 24 cans of cubed beets in season for under $1, I sing Hallelujah. I think it’s our buying and using practices that we need to identify and recognize. Personally, I would not like to pressure can my frozen veggies that I overstocked on. Seems like a waste of time unless they are truly better pressure canned after frozen. But, in a pinch, I would pressure can everything I could in my freezer with available gas on my stove. So, thank you. I know it’s possible now. Gonna get me a canner like yours!! I’ve been using the gifted old school one too long. Loved it the way you told other pressure canning folks that your regulator showed the dial’s accuracy❤

Frozen vegetables are frozen at peak freshness and are good candidate for canning. Also I manage the amount of salt or no salt in my food. I too have bought cans of all I did, but the home canned taste better and not taste like the can. Thanks for your very good comments.

Thank you for that tip on using a different weight thingy! I have a canner just like that and always watching the gauge. This was my first canner with the gauge. I had, what I call, a fail safe canner and as long as I could hear the weight rocking, I knew it was maintaining 10 lb. pressure. With this, I'm constantly watching. Lol I'd never thought about canning frozen veggies, but will be now.

I'm so glad see this. A friend gave me a lot of fresh carrots, and i don't have time to can them just yet. But, before they get too old, I'll blanch them and freeze them. Then, when i have more time, and the weather is much, much cooler, i will pressure can them. Trust me, summertime in Texas is NOT the time to do your canning 😅

If you buy a canner a book will come with it. I still watched videos for months before I canned. It’s been 3 years now and I have canned a lot - whenever I find a good sale 😉. It has taken a lot of worry away from me about power outages etc. And I really enjoy it. Good luck
I'm emptying a freezer to defrost it and canned up a 5lb bag of green beans the other day. Also did some pork butt ans chicken breast. Next week I'm canning a brisket and I'll be almost done.

How well I remember 93 and 2011! Blizzard of 93 totally got me to thinking my household should be better prepared for sudden total life change such as no electricity, heat, etc. In 93 we were in a total electric house when the blizzard hit and we survived in one room with a kerosene heater. To this day my daughter won't eat pork and beans out of a can because we ate so much of it during the blizzard!

Sometimes freezers just get too crowded. In an apartment you just need to be able to clear it out for fresh use. In times of prolonged power outage a crowded freezer is a terrible waste. Making stews to can will be my next project.
@@AtHomewithMrsJoan Mom n I had chest freezers, but being alone I couldn't keep one in an apartment. I forgot how we'd bulk buy and harvest to can n freeze in July- Sept. and can from the freezer in fall n winter.

Definitely dehydrate my frozen corn! In my opinion the best way to preserve frozen corn.
You don’t need a pressure canner for vegetables, just water bath them.
Not safe to water bath veggies, except tomatoes. You can water bath fruit.

PERFECT, i am obsessed with frozen veggies and i need room in my freezer!!!!! Frozen veggies are exactly like fresh but having so many bags in my freezer can get bulky so If I can them which will extend them I'm all for it! I just will not use anything but frozen veggies...except now a "can" of them will be fine.

Some people erroneously encourage others to waterbath low acid foods.
It is extremely difficult to kill the botulism spores in low acid foods with waterbath boiling. Waterbath temperature is 212°F, and it takes 240-250°F to kill botulism spores, which is why pressure canning is recommended for low acid foods. Thank you also for emphasizing that there are specific times and pressure recommendations, depending on the food and it's acid level.
The USDA makes these recommendations based on research and safety.
Again, I appreciate that you are current with your information. I will not take the chance of poisoning my family with botulism by following outdated practices. It only takes one spore...

I'm just learning about canning, and I'm 77. Growing up we had a commercial freezer so other than pickles and jam Mom didn't can. (plus we weren't allowed to be in the kitchen when she was doing such things cause we got in her way. Then my husband and I were in the Army and they didn't allow us to move jars (cause of breakage). So here I sit all alone and I care about being ready for bad winters in WV and food shortages and such. Thank you for the lesson. I was kind of afraid of pressure canning - but thanks to you I don't think I will be.

When you pack to move you cushion to glass, so i don't understand why they didn't let you move jars.
Have you seen the cost of pectin?! I'd swear they have 1/2 less in them too. So online I looked for larger size pectin by the pound and organic flours. Much better prices!

After 20+ moves our last one when hubby retired we did a DITY move (DO IT YOURSELF) from San Antonio TX to the Eastern Panhandle of WV. I like the idea of adding more water so you can cook with it when you open the jar. One thing I learned growing up was to use the freezer as a temporary holding place until whatever we had in there could be canned, not for long term storage. It keeps the rotation going and freezer burn to a minimum.

I was just thinking about this this morning, and here you are on my feed. I needed to see this again. Thank you. I had to toss food from my freezer because it freeze-burned and i found it while my freezer iced up to overload, so I have to defrost. I found food 3 yrs old. it breaks my heart. I didn't know how to can or have a canner then. Thank God i have one now. It's the small presto 16qt but at least i have that. This will save a lot of money, as those frozen veges can get too expensive to lose.

I just found your channel! Last year in July, we had a terrible storm where I live in Springfield, Illinois. Called a derecho. Scariest storm I've ever been thru and I've lived here all my life. ( I'm 57) our town was shut down for over a week. The next week I bought my first pressure canner. I had water bath canned for years, but, I was scared of pressure canning. Not any more. I 100% agree with everything you just showed and said. You never know when you might lose power. That storm shocked us just like the snow storm you got shocked you. And it changed us all I believe. FYI - I figured out that pint jars have different circumferences. Different ones I measured were 1/4 inch different around which meant I got more of the "ever so slightly" smaller ones into my canner. I noticed that while watching someone can pints in my same canner, he got more in his. That's when I measured the 2 brands I have.

Hey Miss Joan, I'm a new subscriber. I have been looking for someone to upload this type of video! There are so many packages of veggies from our garden just crowding up the deep freeze. And sometimes a package will be overlooked or go missing in the corners or the back known as the deep abyss, and it will be freezer burned when I finally dig it up! This way I can harvest, freeze, and can when i have the time and opportunity. I like to think of my freezer being a temporary holding place, like first base. Then the runner needs to advance to second when he can, and on to third and home plate! I see home plate like my dinner plate, the final destination 😋 I learned early that to harvest, wash, chop, blanche, cook down, and either freeze or can, 'CAN' NOT be done in one day! Especially if I have several veggies or fruits coming off on the same day. Yikes! Blessed beyond my daily capabilities 😇 Start calling family, friends, and neighbors begging them to come and get some of these yellow crook necks, zucchini, okra, ... Garden to freezer in a few hours is the way!

A great video! Just the information I was looking for. Have started canning for the same reason, get good food out of the freezer. We were without electricity for three weeks after hurricane Rita and had to cook everything in our freezers to keep from going to waste. Now we want to can everything. Thanks, You are GREAT.

I can but i dehydrate frozen veggies n fruits In half gallon jars with oxygen absorbers or vac seal. I think i might try canning some just in case later shtf need the water to cook with. Its also why i keep commercial canned veggies and beans in case i need the juice to cook with. I pressure can beans too.

I was blessed to find a national 1935 preasure cooker. I inherited my brothers double canner the size you are using! I was so happy! I have always used a mirror 4 QT preasure cooker!

I love it that I learned about the possibility of pressure canning frozen vegetables in this video.
But my quandary is:
Why not just buy already canned veggies? They are already self stable for years. The work is done for a great price!
We really need to guard our freezer space.
My go to veggie is frozen, fresh with some.
I live alone.
When I buy 24 cans of cubed beets in season for under $1, I sing Hallelujah.
I think it’s our buying and using practices that we need to identify and recognize.
Personally, I would not like to pressure can my frozen veggies that I overstocked on. Seems like a waste of time unless they are truly better pressure canned after frozen.
But, in a pinch, I would pressure can everything I could in my freezer with available gas on my stove.

Frozen vegetables are frozen at peak freshness and are good candidate for canning. Also I manage the amount of salt or no salt in my food. I too have bought cans of all I did, but the home canned taste better and not taste like the can. Thanks for your very good comments.

Thank you for that tip on using a different weight thingy! I have a canner just like that and always watching the gauge. This was my first canner with the gauge. I had, what I call, a fail safe canner and as long as I could hear the weight rocking, I knew it was maintaining 10 lb. pressure. With this, I'm constantly watching. Lol I'd never thought about canning frozen veggies, but will be now.

I'm so glad see this. A friend gave me a lot of fresh carrots, and i don't have time to can them just yet. But, before they get too old, I'll blanch them and freeze them. Then, when i have more time, and the weather is much, much cooler, i will pressure can them. Trust me, summertime in Texas is NOT the time to do your canning 😅

I only have a boiling bath canner. This looks like a great way to get the stock of veggies out of the freezer
@@sparkleon8563 I haven't had any experience in waterbath canning these particular vegetables. I think they require pressure. But some people waterbath everything, but much longer processing times. Let me know what you learn in your search.

If you buy a canner a book will come with it. I still watched videos for months before I canned. It’s been 3 years now and I have canned a lot - whenever I find a good sale 😉. It has taken a lot of worry away from me about power outages etc. And I really enjoy it. Good luck

Blizzard of 93 and the April 2011 tornados. Yep. That will change you. I grew up in Oneonta, AL and live in St. Clair county now.
How well I remember 93 and 2011! Blizzard of 93 totally got me to thinking my household should be better prepared for sudden total life change such as no electricity, heat, etc. In 93 we were in a total electric house when the blizzard hit and we survived in one room with a kerosene heater. To this day my daughter won't eat pork and beans out of a can because we ate so much of it during the blizzard!

Sometimes freezers just get too crowded. In an apartment you just need to be able to clear it out for fresh use. In times of prolonged power outage a crowded freezer is a terrible waste. Making stews to can will be my next project.

Mom n I had chest freezers, but being alone I couldn't keep one in an apartment. I forgot how we'd bulk buy and harvest to can n freeze in July- Sept. and can from the freezer in fall n winter.
