    Using an old jar lid to scrap the seed out works great!!
    It is sharp and gets the inside of pumpkin or squash smooth

    Yes, the old jar lid works great. Also, I peeled my pumpkin first, then cut and diced it! Game changer for me!

    My sweet daughter-in-law showed me a hack for gutting my pumpkins. She uses a used canning lid for scooping out the seeds and stringy pulp. It changed my pumpkin canning life!! Made things go SOOO much easier and faster!

      Works well, lids are sharp and wide enough for your fingers and is more stable. Be careful they are sharp.

    Carol, thank you for another informative tutorial. I LOVE pumpkin pie. So having pumpkin on my shelf would be great. I love it when you said, Ball wouldn't be having supplies until March . That's like telling a baker there's no flour. I'm a retired baker who not only loves to bake, but also loves to can. You make me smile😊

    Very informative and an excellent job of explaining how to use the all american pressure canner. I could have used something this detailed in regards to setting the heat/temperature when I started canning. Important to keep the jiggling or rocking of the weight to a minimum as to not run the vessel dry. Thank you and I look forward to more content!

    Nice job again, first pumpkin pie I ever made over 40 years ago was made from fresh pumpkins, served it to husbands family, they said it was the best pumpkin pie they ever ate, I complained about how hard it was to clean and cook the pumpkin just to make a pie, they were laughing at me, why didn't you just buy canned pumpkin, who knew, I was just learning. It is the only way I make pumpkin pie now, this would make it easier. Carol check with the Amish community I have heard you mention them before, if they have a store near you they usually have a good supply of lids, worth a try anyway.

    Great video! We did this today but made a mess peeling and scraping - our 2 small dogs happily cleaned up whatever hit the floor. With that, I decided to slice some of the pumpkin into 1/4" slices and put them in my dehydrator - I think they might make healthy treats for my pups. Thanks for sharing great video!!

    Thank you for actually showing/telling how much the rocker should rock. I think my gauge is off just a bit. I’ve been canning at too high a pressure since the rocker has been quite the dancer. When I’ve asked in FB groups I get conflicting info.

      Rena LaRue if you have an AA canner the gauge is just for reference. You should always go by the rocking as it is considered a weighted gauge canner 😊

      Carol - Thrifty Chic Housewife yes it is an AA921. I also have a 16qt Presto that I never used as it doesn’t have a gauge. Does that one also do an intermittent rock?

    I won't use a standard pressure canner until I have a different cook top. I just don't trust the glass cook tops for canning. I have ordered a digital pressure canner which should be here very soon. Thank you for all the information.

    I can’t believe I took one more look at my Walmart and they had pint size jars I got 6 cases and still left a good amount couldn’t believe it that’s why I always look just in case

    small seals went from 1.89 Canadian to 4.29. Only was able to get 4 dozen; thank goodness I had a stash of large ones to get me through this season as well as jars.

    I wish there was a board of some kind for canners. I don't do Facebook and won't but I hate to miss out on information. I am on a quilting board and love it! Maybe if anyone knows of a canning or cooking board please leave a link.

    have you tried white pumpkins ? i grew some again this year from the seeds I saved last year and got 4 medium ones. Just canned them today; running out of jars for turnips and chili so I am freezing the rest of the pumpkin and making puree out of it for soups and pies

    Couple questions ... New to pressure canning, and I want to start with pumpkin! (Why not, right?)
    You said 3" of water for pints. How much water do you put in the pot if it's quart jars? Do you keep it at high the entire time? (I've heard if you do this wrong it can literally blow up!) :o ... About how long does it take from start to finish (meaning, bringing the blanch pot to a boil all the way to the pressure goes back down to zero)? Wanting to know how long of a time I need to set aside to do this!
    Also, why vinegar the tops of the jars? I've never understood that step. Ok, many thanks :)

    This looks super easy. I'm going to get my pumpkins tonight after work. This will only be the 2nd time using my pressure canner so a little concerned but this seems like a good recipe to practice on.

      I got from the wife of an Alcoa aluminum exec (the plant is here)
      China dumped tons of cheap aluminum on the market.
      The demand for the quality aluminum drove the price sky high and then the shutdown hit so the plant slowed production and Ball never expected the mass amount of canning that would wiped out the stock, they couldn't make a profit with the high cost of aluminum so they didn't order more.

    I guess I will have to freeze mine, too hard to cut them open and cut the rinds off. Dang it. I have lots of pumpkins too.

    You know that’s the way I always did it for many years until my sister told me just to cut the pumpkin up and throw it in the boiling water and the skin would peel right off. Well she’s right but I don’t know if we can use that method when we are canning. What do you think? Could we boil it and peel it and then put it in the jars? Kind of like we do with tomatoes.

      Kathy Jenkins not sure. It would depend how long you have to cook it before the skin peels off. You really don’t want to cook your chunks more than 2 minutes or they will be too soft for canning

    Hi Carol, I enjoy your canning demonstrations so much! I watched you work with the pumpkins yesterday and wondered if an electric knife would work. If it does, it would be a lot easier to peal and cut the pumpkin. Just a thought, thanks for all your great info!

    Will go look now for jars!!! March are they insane? Prices just sorta came down for a hot minute on Amazon and Ebay... Now they're really going to gouge the canners!
    BUT! On a brighter note... Your Pumpkin looks Amazing! How many Sugar pumpkins did you use for the 8 pints? I am thinking of doing some Acorn and Butternut Squash also!     Nice ,canning pumpkin tomorrow , how many pumpkins did you use for what you got. Dehydrated foods are nice to have, maybe a few videos on that. I vacuum sealed some jars of dried apples using lids off opened canning jars,I check frequently not had any issues so far. So save your used lids as they might come in handy for dry storage.

    As a one year newbie to water bath canning I’m realizing one can never have enough jars and lids! So yikes until March! Maybe the focus could be changed to small batch canning vs large harvest canning.
    For some Christmas gifts (such as your delicious cocoa mixes), any suggestions for cute alternative containers?♥️☮️ As always, thank you for your great channel.

    Hi Carol! Loved the video! I have some pie pumpkin from the garden to can here soon so your timing is perfect. I do have a question. I have lots of spaghetti squash from the garden. I froze some of them but I still have lots left. Can you can spaghetti squash as well? If so can you give me pressure and times? Thanks!

      I grew very many spaghetti squash summer of 2020 to guard against any potential food shortages, I grew enough to have one a week for nearly a year.. if they are well hardened off to finish their ripening process then they can last a very long time on a shelf in a dark cool place with low humidity.. I actually still have 2 left that I harvested and hardened off in August and September of 2020. They are still hard with no exterior blemishes, I found them when I organized my pantry in October to add this year's harvest!! It has been 16 months since they were harvested off the vine.. I hate the idea of wasting any food but I am tempted to keep one in the same location it has been in just to see exactly how long it will stay in an edible state! Best wishes to you and yours!

    How is that you can buy mashed/pureed pumpkin but we cannot do it ourselves. What does the commercial process do differently?

      They use a different process than what can be done at home. There are a number of things that can be commercially canned but cannot be home canned …

      Those are not approved for canning by USDA standards. However I do believe they are used in other countries
