INGREDIENTS:
White Chocolate Ganache - 3 : 1 ratio i.e 3 parts Chocolate to 1 part Cream by weight.
Eg.
300 grams White Chocolate
100 grams Cream with minimum 25% fat (Amul Cream)

Thanks Aditi! Any tips to eliminate that oily residue that splits from the ganache? I used compound as well. I haven’t really made large quantities with couverture, so I’m not sure if I faced this issue with that as well.

I add espresso flavor to the milk when it is heating up. I use Bustelo's Instant Espresso powder. It's powerful stuff!

Does couverture set well for fondant covered cakes or is compound a better option.

Hey Aditi. Thanks for making the video. I have a question would be glad if you can answer while making ganache in double boiler it's thinking and not coming out runny. I am not mixing cream in it just plain compound white chocolate. Please tell me is it compulsory to add cream. Thank you
