    This was really helpful. I just made these. I would have added flour at the beginning there, but instead just kept patient and finally reached a window pane. I will say it took 4 times as long in my Ankarsrum mixer than the 10 minutes in the recipe. I don’t know if there is something I’m doing wrong. I did follow the recipe with weights exactly. I’m really pleased though on how these look. Still waiting for them to cool.

    Thanks for video. Just wondering, why couldn't you split the dough in 4, and then into 3, to make 12 balls?

      You certainly can. For me it tends to be harder to visually eyeball when splitting into odd numbers.
