So with the rapid growth part - it is actually a call back from season 1. If you remember when they run through the galactic check point they run past an alien that can do that. So Rick has obviously taken that to grow to a certain point.
I recommend either Bojack Horseman or Gravity Falls after you're done with Rick and Morty since you only have a few episodes left. Those two are some of the best recent animated series along with Rick and Morty.
