  • Hi, Welcome to the Baby Back Maniac and my very first video on TH-cam. Today we are smoking a brisket on the Komodo Kamado. I chose this as my first video basically just because I like to watch videos to learn about new cookers and there isn't a ton of content on TH-cam about the KK...yet! ;-) Just to be clear, I am not affiliated with Komodo Kamado in any way. I'm just a normal customer with a video camera.

    This Kamado is a piece of art! Looks fantastic just like the brisket. Hope I will have a Kamado in my garden somewhen, everything that has to do with BBQ is way more expensive here in Germany. Really like your channel and the way you do your videos, good luck for the future!!

    That is a Gorgeous Grill!!! I bet that lid weighs 100 pounds. I love to go back and watch everyone's first video. It inspires me to keep filming!

    Beautiful smoker, I’m trying to learn the Char-Griller 980, the wife made me get rid of two 😩. The Weber and the Santa Maria had to Go by by so I could get the 980. She thinks I have a problem.

    Really enjoyed the video and the result. The video editing was perfect and that bass player sounded great. I am going to watch all the videos and maybe get more into the grilling arts. Thanks for sharing your skill with the rest of us.

      I have a friend named "Josh Geering." He could be a grilling Jedi, I sense the force is strong with him. The problem was he was 7 feet tall and was way too strong to shoot free throws or handle grilling times with finesse.
      (this comment is going to look really strange to anyone who doesn't know us.)

    Back for another watch... Kind of in a nostalgic sorta' way. I remember the days when Brisket was actually affordable, and ya didn't have to sell off 2 cars and acquire a 2nd mortgage to be able to afford a full Packer. *sigh*, those were the daze!

      +Rick Short Thank you, Rick. That was really nice of you to say. This was actually the first video I ever made beyond some home videos I did of the kids. I wish I could go back in time and bring the music level down but I was really happy with how it turned out.

      +Rick Short You should do it! I can't wait to see it! I use Final Cut Pro X. it's expensive but you can try it for a month for free. It's basically and iMovie on steroids. I'm glad I have it now because I've learned a ton but had I realized I had access to iMovie for free I probably would have used that first.

    How do you feel about the Komodo Kamado Compared to the Weber Summit and the Kamado Joe ?

    It looks good but also looked a little dry. it's ok to leave a little layer of fat so it'll stay moist and it can be a tough if you trim the fat completely.

      @@BabyBackManiac Wow. You are probably one of the few people in the world who voluntarily let go of a KK! I’m the opposite. Every time I think about getting a kettle, or a pellet grill, or an offset, maybe a PK, I realize I don’t need it. I can cook ANYTHING in my KK. For grilling, for smoking, for roasting, baking, pizza, you name it you can do it on a KK. But you have your reasons and no doubt it redounded to the new owners benefit😃

      +jim carson Thanks Jim! I really appreciate it. I'm really proud of this one (except for the music being too loud...lol) because I've never done anything like this before. I pretty much had to google my way through the entire editing process with Final Cut Pro X (editing software). So for not having any idea what I was doing, I was really happy with the way it turned out.

      I did too. It's a beautiful cooker built to last a million years. However, I discovered after about a year of owning it that I actually prefer to cook on my other cookers more and wasn't using it very much. I ended up making the very difficult decision to sell it last year (too much money tied up in it not to be completely in love with it.)
      It worked out great though because the guy who bought it loves it (nice guy) and uses it often and I got much of my investment back and he pretty much through in a Big Green Egg minimax to sweeten the deal so alls well that ends well.

    What's you opinion of the KK compared to the new Kamado Joe's? Worth the extra money??

      It depends on what you are looking for. I enjoy cooking on the Kamado Joe and the Summit more because I like the personality of those cookers better. (meat closer to the coals, bigger more stable fire, easy to split the firebox, less heavy, easier to clean out ash.) From that stand point, the KK wasn't worth the extra money to me and that's why I ended up selling.
      However, the build quality and beauty of the KK is otherworldly (like, literally, the aerogel insulation they use is also used on the Mars Rover). There really isn't anything like it so from that standpoint, the KK is a bargain.

    You took off more fat then I would have. I remove the big chunks but leave a 1/8 inch of the fat for flavor. I also like to take all my scraps and render the fat down and save it. This beef fast is the best for seasoning cast iron / raw iron pans. And for making popovers.

      Yeah, I don't normally take that much off. I was actually doing an experiment and didn't really think to explain it. This was literally my first video ever and I didn't have any subs when I uploaded it. If I would have had any idea it would get viewed almost 7K times, I probably would have worked that information in there because I get that comment alot. lol. You live, you learn.

    I've never tried a prime brisket Justin. I'm dying to do a prime or even a Wagyu, but they're just so dang expensive having to order from a special place. I don't know any place around me that carries prime or the wagyu

      Yeah, Dan, I get mine at Costco and it's not much more expensive than buying choice. For what it's worth, I've had Wagyu from SRF and it was great, but I don't think it's worth the premium over regular prime.
      The best I've ever had was the Lobel's of New York prime at T-roy's. If I was going to splurge on one, that is where I would get it. But for day to day stuff, prime grade from costco is good enough and if I didn't have that, I'd get choice and be fine with it. Everything is a big step up from select. In fact, that was one of the biggest things that improved my brisket was when I starting biting the bullet and skipping the select grade.

      lol. I usually don't trim it that much. Check out my more recent brisket video cook if you haven't already. That said, this brisket turned out pretty good even without the fat.
