    I cooked your flat bread recipe after you passed on the recipe, I halved the amount. I will divide the recipe into four next time though, as even half was too much for the two of us. This will be a regular for us, easy to do and so tasty. Thank you.

    It's so sweet that the kids enjoy your cooking to the level of making regular meal requests. I would've loved it if my mother made the variety that you do. And, all basically from scratch. Your kids & husband are very lucky to have their personal gourmet chef.

      The kids really like their granola in clusters, and most of the recipes use a honey/sugar base to do that, so I just thought the starter could be an alternative way to get the same effect! :D

    I sneak zucchini into lay bolognese mince too (literally just did it for dinner). That and carrot are a great way to sneak in vegetables, especially for my 24 year old brother who is still adverse to fruit and vegetables haha

    I have learned, the hard way, that I need something to eat when watching your "what we eat in a week" videos. Everything looks so tasty and my stomach starts to growl. LOL! I love cooking and baking but there is just the two of us. Neither one of us wants to eat leftovers for a week and freezer meals never seem to taste as good as when freshly made. Thanks for the inspirations.

      I definitely think I would struggle if I didn't have a large family, we like fresh, I much prefer fresh made than from the freezer and I'm not a huge fan of leftovers myself (the kids and Darryl are though, luckily) I have a love/hate relationship with having to make so much food all the time lol.

    Nyssa you amaze me , you produce such amazing food with a very rudimentary kitchen. No offence meant just that most of us have more than a barbecue and a camping stove and don't produce such good results as yours. I have a question for a future FAQ . You've talked about updating your kitchen,what would your dream kitchen look like?

      I will def address it as we make improvements, but tbh, if I could just get the pantry built so everything was at hand rather than spread out over levels and distance it would make things so much easier lol

      Such a simple thing hey! If you are using thicker bacon I would cook off the bacon a little then add the eggs I think. But the ham was really thin.

    Oh boy..I really must choose a better time to watch your weekly meal videos...I had dinner a cup of tea..a big drink of water and now I want a portion of everything...lol...always such a pleasure spending time in the kitchen with you...can you do a full video when you do the cornbeef...I need something new to use up the one I have in the freezer....no pressure, no rush. I can't see it running out freezer to a pasture...oh....have you ever made a cabbage roll soup...I think your tribe would love it or a stuffed peppers soup...this would be right up you ally....prep wise I mean..one pot wonders..full of flavour...

      Cabbage is good every which way! hehe, it is such a versatile ingredient, love how well it lasts in the fridge too, might lose a few more outer leaves, but its still good in the middle!

    I love all these ideas! I love cabbage and zucchini so all these looked good to me! I have been making homemade naan which I assume is exactly like flatbread and even my husband is talking about making some quick sandwiches on it. So good! Great video as usual!!

      Definitely very similar! Most naans have some sort of enriching, yoghurt or something, but otherwise, very similar. Its such an easy bread to make! :D

      @@OurSmallFootprint I suppose they are blanched, not quite raw. They are either frozen shredded hashbrowns I use, or rehydrated dehydrated LOL hashbrowns with the water squeezed out.

      @@1sunchazer I’ve tried a bunch of things and haven’t found much that helps in general :). I have prescription meds I take 2-3 times a day depending on severity and try and take some b and d vitamins but meh :)

    I’m making sourdough focaccia for the first time today and I’m not happy with the dough. It feels too stiff. I’m going to try your focaccia next. I think you have a tutorial with measurements right? Yours looks so amazing

      Yes there is a video focusing on how I make mine, drop a comment if you can't find the ratios I use, but I have hopefully put it there somewhere! There's lots of variations of Focaccias, it really depends on what you are after :D

      I used some crushed tomatoes (Those jars of soup that didn't seal properly) as well as stock paste I think! It's tasty, I added some salt when heating it up, but definitely nice and hearty even with minimal pork in there!

      You definitely could, just low and slow, about 160 I spose and it takes as long as it takes to get to 73 internal temp :D. The knife is a thermomix one, we love it, D refers to it as his Bat'leth lol.

      The Rub is in ratios
      2 parts Brown Sugar
      1 Part Salt - Flaked salt when using cup measures, if using fine salt you want to half this or 'to taste'
      0.5 Parts Pepper
      0.5 Part Smoked Paprika
      0.5 part Garlic Powder
      0.5 part Onion Powder
      0.25 parts Mustard powder.
      So if you were using a half cup as a 'part' 2 parts would = 2 x 1/2 cups, 0.5 parts would = 1/4 cup etc :)

    Wow , amazing gourmet meals ,glad I don't have a husband anymore or he'd say if Nyssa can cook all those wonderful meals totally off grid you surely can get your butt in the kitchen and do it too lol 😂 no excuses ..good thing you live in the middle of nowhere so men don't show up at your door trying to convince you to leave and go with them ..

      These ones are just from Kmart! Someone did send me a link the other day for some for sale somewhere else in various sizes though, but I haven't tried them yet.

    Beautiful..which balsamic do you use?..I cant find the thick one..only the liquid..doesn't taste the same as the thick..what do you recommend?..regards

      I'm using the Kirkland one from Costco! I really lke the flavour of it and it comes in such a nice big bottle.

      Thank you Virginia, no, I've worked in some kitchens over time, a pub and a canteen, coffee shops that kinda thing, but not any formal training, I think I just enjoy food and enjoy providing it for people, and I tend to do well with things I choose to/like to do like most people... I always say it makes up for my housekeeping, which is not so great anywhere but in my kitchen lol.

    I love watching you cook whatever you are cooking I'm going to show my ignorance .I'm American and I always thought porridge and oatmeal were the samething What is the difference really curious.

      I think they are much the same thing, I tend to refer to baked ones as oatmeal, maybe because baked porridge just sounds wrong and mostly its an American thing to bake it that I've seen and you guys call it oatmeal ? and I tend to refer to stove top creamy oats as a porridge! :D

    If you pre cook those ham and egg cups, would they be ok in the fridge for a couple of days do you think?? Cause this is a great idea for an easy breakfast which I'm in need if at the moment ?

      The basic ratios are
      1200g Bakers Flour
      740g Water
      60g Oil
      20g Salt
      10-20g of yeast (dependant on your weather and how quickly you want to use the dough!)
      I just throw everything in the mixer and knead :)
      Can easily halve the recipe too, this makes us two meals worth generally, I make one meal and then put the rest in the fridge to use the next day.
      I will adjust the water/flour ratio depending on weather sometimes too! and depending on the flour you use, so make it to recipe first up but then if its a little wet pull back on the water next time etc :D

      There's a video showing me making it, but it is a sweet pickled chilli mix, generally jalapenos :). The brine has a fair amount of sugar in it, so its very sweet and spicy! :D

    Why don't you double the dinners and have them for lunch the next day,and for breakfast you can also make something baked and so you are left with time and maybe more money and the dinners/lunches with more meat.

      I don’t really have the ability to cook double of most things. Already cooking large quantities :D. There is regularly leftovers though that some of the kids have for lunches etc :)

    I think you could really relate to his youtube farmer their family is smaller but they live in a yurt they purchased used and have purchased another without time to put it up. They home school their children, can etc.Their climate is different and they are not off grid as you are but I think you could relate to some of the frustrations bringing some laughter to how difficult it is at times. th-cam.com/video/5PZxuj4u4lk/w-d-xo.html
