    Growing up in Michigan in the 70s and 80s we ate a lot of casseroles. Later, when I was raising my kids I cooked a lot of casseroles. It was a quick, inexpensive, filling, comforting, and delicious way to feed a family. Don’t get me wrong, I cooked a lot of other dinners besides just casseroles. But, funny enough, now that my kids are all grown up they always ask me to make their favorite casserole when they come to visit. It’s funny how casseroles get such a bad rap. Thanks for sharing this recipe! Brings back good memories.

      Same here in the 70s and 80s but in Illinois. Class of 82. A casserole is comforting and fun. Everything is right there in one slice.

      Michigan girl from 60s and 70s! My Italian Mom made plenty of delicious casseroles. But Taco was not one of them. I picked up that knowledge when in lived in Dallas and I ended up being a single, working Mom. My daughter LOVED this. Me too!
      Now I am back in Michigan and I am cooking this today for my new family: my best friend and her husband. We are all old and sick now so this is easy and good!

    I made this tonight with the addition of black beans, corn and jalapenos. It was easy to make and I served it with lettuce, avocados and sour cream. Thank you, Kaleb, for sharing this recipe, I really enjoyed the taco casserole!

    Thank you! Made this last night. Served on top of lettuce, with fresh tomato slices next to, hot sauce & Greek yogart on top.
    Enjoyed...only used 1lbs of beef, added full chopped red pepper, onion, can diced tomatoes to beef.
    Colorful & tasty.

    I made this last night. It is FABULOUS! I used flour tortillas rather than corn. I have an electric stove and put the tortillas on the glass burner and they crisped up just fine. Served it over thinly sliced lettuce, with guacomole, fresh hot peppers, fresh onions, fresh tomatoes. It couldn't have been better. Everybody loved it. Thank you.

    I do the same casserole (since the 80's). I do add, sour cream, salsa, and refried beans to the layering. My kids (now adults) loved this, there was never any leftovers!

    I love how you embrace our Iowa and Midwest roots, foods, traditions and lingo. Every video you share your love of Iowa. As I have travelled around the country, so many people think Iowa is only pigs, corn and farmers...not that I'm complaining about any of those. You are a wonderful unofficial ( although I think should be official) Iowa ambassador. Every recipe I've tried has been a hit.

    This can be upped a notch by layering some Spanish Rice and Refried Beans in-between the layers of meat and cheese. A Mexican Sandwich. A meal in itself.

    Thank you for telling people to warm up their tortillas. It really is important. Even if you don’t have gas you can use a skillet to warm them up and give them a touch of color which = flavor.

    Instead of thickening the burger mixture with flour, try masa or cornmeal. They do that with chili in Texas.

    Instead of using flour to thicken the sauce you could corn tortilla flour for more of an authentic flavor adding addition. You could also add roasted poblano peppers. One more thing you could warm up or lightly toast your dry spices prior to adding them. All pro moves to make a more authentic dish and elevate this American version of Mexican food.

    In ancient times oregano was a spice most valued by Kings and Queens. Greatly desired. I love this herb and think it's the best.

    My mom made Stack-A-Dinner-browned ground beef on top of mashed potatoes and topped with peas. It was so fancy to us as kids.

    That really looks good! Great way to do tacos for a group. I'm also thinking of substitutions or additions, like black or refried beans. Maybe a burrito casserole. This is a great idea!

    First video of yours I've seen, was looking for a tortilla layered casserole. You did 3 things no other video did that I was also thinking:
    1. Called it a Lasagna (which is what I've been calling it lol)
    2. Put the tortillas on the stove for a sec
    3. Put a little bit of sauce down first

    Casseroles are what my family requests when they come to visit. Pot luck at work? "Please bring one of your casseroles", is what I hear.
    I also make a beautiful homemade bread, so often I'll whip up a casserole, put that away, then go at some homemade dinner rolls or bread.

    I love this casserole. I have made it with lasagna noodles.Cut it then freeze individual pieces.Great for lunches and dinners to take to work.

    Have you ever tried toasting the spices in a separate pan just for a few minutes! Until there hot! Then add to the meat it brings out the flavors so much!

    yum, yum, yum .... this would be great on a cold snowy night - just like the one we are about to experience in Atlanta !!! I absolutely love a casserole but alas the hubs does not so it's not often I get to eat one ... this would be great to make, divide and freeze for those afternoons when I need some warm comforting food in my belly !!!! thanks, as always, for sharing and inspiring us to get in the kitchen and cook !!!!

    This looks delicious and easy; using ingredients you would have on hand. I am new to your channel and really appreciate the "elevated normalcy" of your recipes. They aren't intimidating. I have grown tired of cooking and your recipes have given me renewed inspiration. Your cranberry meatball recipe was so tasty... and I used store bought meatballs! :-o

      I made his cranberry meatballs for our family Christmas Eve meal and they were a hit. I never would have thought of having cranberry anything with meatballs.

    Sending Happy New Year wishes from the Niagara region of Ontario Canada. I have a suggestion for those who want to reduce their meat consumption and save money. Use half the amount of meat and add a can of beans or peas, that have been crushed and precooked in spices. Forget about skipping the dishes and door dash. Locally sourced, home cooking is best for the budget and our health. There is no doubt about it. I love your videos.

    This is very similar to a casserole that I make except I add chili beans to the meat mixture. I learned how to make it in home economics class in high school and I have been out for almost 30 years.

      Midwestern Haystacks
      Each person gets a large bowl.
      > Start with a base of tortilla chips, broken crackers (Ritz is great), or corn chips.
      > Or start with a pile of hot rice or hot noodles.
      > Top with ground meat in sauce.
      > Then make your “haystack” choosing from ingredients below. Stack it up as high as you want to!
      > Top it off with warm cheese sauce, salsa, and/or guacamole, additional shredded cheddar and sour cream.
      Lettuce, shredded. Warm pinto, kidney or black beans. Diced tomatoes. Chopped green, yellow or red bell peppers. Shredded carrots. Corn. Black olives. Thin sliced scallions. Shredded cheddar.
      Hack: Instant potato flakes is an alternative to flour or masa to thicken the cheese sauce (or anything else).

    Yes I see yellow corn tortillas! They are pretty much all that I buy and all that I enjoy. I certainly don't enjoy a flour tortilla! I have 352 herbs spices and seasoning blends and that doesn't include things like dehydrated tomato powder and dehydrated buttermilk etc. Before my mother passed away she used to tell her friends got more spices than I know what to do with! I have lived around the world in many countries and use many seasonings and they are all in use and they are all fresh. Fresh as in in the jar freshly purchased and then I keep frozen mirepoix and green onions and things like that because I can't use my hands to chop and cook like I used to. So I get my PA to do that and then we freeze it. My mother rarely made casseroles so I am all over casseroles! Plus it's easy to cook once and eat twice by freezing one.
