    I love almond cake. I made some slight changes & doubled the portions to have a bigger cake for the whole family: No sugar, was replaced by 1/2 cup honey. Added dried cranberries, 1 tsp of baking soda. If you want your cake to rise, make sure your white eggs are worked out like snow before folding them gently in the batter, don't grease the walls of your pan & put parchment paper at the bottom of the pan. That way, you'll have a beautiful & fluffy cake.

      What size pan did you use? I am very glad to see that you used honey, and it worked. I am assuming that the 1/2 cup applies to a double recipe?

    I added Lakanto monkfruit sweetner, half a tsp of baking powder, 2 tablespoons of cream and 1 tablespoon of sour cream and a tsp vanilla essence. It was my keto treat and it was awesome. Thank you for such an easy recipe!

    I used Lankanto monkfruit sweetener, 1:1, and it was perfect. I used sliced strawberries on top, with coconut milk whip topping. Yum.

      I was thinking about doing this, glad to hear it turned out well. I figured I'd use either swerve or stevia. How much stevia did you use? I plan to use almond extract instead of vanilla. I think it'd make a nice afternoon treat with a cup of tea, I can't wait to try it!

    3/4 cup Almond flour
    1/4 cup sugar
    1 tbsp vanilla essence or Almond Essence
    2 tbsp milk (If batter is its too thick )
    2 tbsp sliced Almond
    2 eggs

    Used honey instead of sugar, love it! No baking powder is a plus👍no chemicals added.

      How much time do egg whites take to whip? I am using philips hand mixer (300W) and they remain frothy and liquidy. 😭😭😭

    I tried this by adding a teaspoon of baking powder and a little bit of shredded coconut. It turned out really soft and flavour full. Also I reduced the amount of sugar to half and instead added a little bit of maple syrup. I would definitely do this again. Only down side is that, the cake size is pretty small. But it would last as my tea time snack for a couple of days.

    Will it make a big difference if I just add the two whole eggs at once and baking powder to help it rise instead of having to separate the eggs etc ect ... I’m a lazy cook

      My bariatric specialist tells me that artificial sweeteners cause the same insulin producing reactions in our systems as sugars. A brief search to confirm shows that there are conflicting reports on this. Don't be so quick to assume just because there are no calories that it is "good" for you.

      LOW carb?????? Did you watch the video? Did you see that quarter cup of sugar? It's gluten-free, (which is what I think the youtuber was aiming for) but it's not lowcarb. Sugar is one of the top carbohydrates in the entire food spectrum.

      I just made with substituting allulose for the sugar. Turned out a bit too sweet for my taste. The cake was spongy and delicious otherwise. May try 1/8 cup allulose next time, instead of the full 1/4 cup sweetener that the recipe calls for.

    My coworker cant eat regular flour or sugar so i made this with splenda. Rose nicely! I wish it had less of an eggy taste though

      Rx Moreno Add lemon zest and a squeeze of lemon juice. Should masks the egg taste. You can also increase the vanilla flavoring.
