Nice Low Carb recipe. Just 2 things because I bake LC cakes often. Stevia is not the best choice for cakes because the aftertaste is bittersweet. Its fine for no bake desserts. Its better when its a stevia blend with erythritol. Although the best choice for baked sweets is monkfruit or allulose. If not available the second choice is erythritol or xylitol. Each almond flour brand absorbs slightly different amount of liquid. So sometimes you have to add a couple of tablespoons milk or cream or one beaten eggwhite to have the right consistancy. Its very helpfull to say what almond flour brand you use. Your flourless swedish almond cake is great by the way. Thank you for your recipes.

Next time I’m going to double the recipe and maybe try blueberries at the bottom like some others did. We used shedded coconut as the topping. It taste very light and healthy 😊
used this the other day for the base of a cake with blueberry, raspberry, banana (mashed lightly with a fork) filling in between layers closed with whipped cream, toped with some strawberries and lime zest blood sugar went from 4.7 to 5.4 1½h later after a decent slice (and a low low carb meal (some shredded carrot in my coleslaw). 👍 didn't use stevia i used some granulated cyclamate+ saccharin sweetener, about 3 teaspoons in total. 2 in base 1 in whipped cream (3 dl unwhipped)
@@bkcarole7356 never said it was either of those things, i said the meal i had before the cake was low carb. and i included that cus that would affect my blood sugar readings as well, which i reported. this was one banana in the filling for an entire cake, so basically 1/8th of a banana.
i was commenting and included additional things that affect blood sugar for ppl with diabetes that are looking for a cake base to use and reported my blood sugar readings before and after so that they could take that into consideration when evaluating this.

I'd like to ask for an advice: I tried this recipe in a slightly modified version (instead of 60ml of milk I used 50ml of almond milk and 10g of ghee - because of casein intolerance), everything else remained the same, but my cake ended up being way more gummy, way less "fragile". Any idea what could go wrong? I baked for 20m, then added +5 and then +10 minutes but the consistency hasn't changed. 180C/360F. Thanks ;)
I know you posted this several months ago, but I still wanted to answer in case it helps anyone. I had to use almond milk, too. It would have been easier, if I'd had cashew milk on hand, as it's a bit thicker. But what I did was add a teaspoon of GLUCOMANNAN to the almond flour and baking powder. It came out great. I think xanthan gum would work as well. I have an extreme allergy to Guar Gum, so I can't use that. The little bit of Glucomannan really made a difference. I did use Allulose as the sweetener and I put a few frozen Blueberries at the bottom of the batter. I coated the blueberries in Coconut Flour first, so they wouldn't make my batter soggy. It would have been fine without the blueberries, but they give it a pop of flavor.
