As a peranakan descendant, this is definitely one of the staples in my kitchen. Yours and mine have 90% in common, also replacing bamboo shoots with potatoes, but I'll have dried mushroom, cinnamon stick and ginger slices added in..😊😊

This chicken pongteh dish is very tempting & appetizing, not to mention eaten with hot white rice with the addition of sambal belacan, it really suits my taste. Hahhahahah I wouldn’t say adobo is a lazy version but the biggest difference is the acidity and peppers in adobo coz it’s cooked with vinegar and loads of black pepper, where as a pongteh has more a savory sweet profile with the umami from the fermented beans and touch of gula melaka.
There's another dish called 'sioh ge' that has coriander powder and asam paste added in. Just like pongteh, the bulk of the aromatics comes from tauchu and tonnes of shallots. Just my 2 cents 😁😁. But then again, every family has their own versions of so-called traditional dishes, tweaked to their liking 😉😉
I don't like pongteh with mushrooms. I only love potatoe and chicken pongteh. Maybe it has to do with the palate this dish that my mum instill in me since young.
Yea some people are religious about what they add in their pongteh, and this is what makes it special that every family has their own version making this heritage dish. And I hope more people continue to make it so we don’t loose it over time :)

Hi Chef, I'm Eurasian from Malacca, and we have pongteh too. Ours is with pork, potatoes and sengkuang/jicama. But essentially the same. Nice.

It look like something similar with Adobo (Philippines cuisine) I should try making both of em. 🤤
Looks similar but has a huge difference. Adobo is like the lazy version but pongteh takes effort and time.
