THE BEST HOMEMADE NEAPOLITAN PIZZA without a pizza oven! | The Positano Diaries EP 82

- A lot of you have asked (in a premiere chat) for a pizza video so here it is!
This is the best pizza recipe I have tried so far. It gives you a crunchy based Neapolitan style pizza that is very similar to the ones you get from a proper pizza oven. All you need is a large frying pan (no oil frying involved) and a oven with an overhead grill.

It really works and was really good!
INGREDIENTI/INGREDIENTS for 12 pizzas (we halved it and made 6)
Farina “00”/Flour “00”_____1600g / 56 oz
Acqua/ Water_____1l /34 oz
Sale/ Salt_____50 g / 1,7 oz
Lievito/ Yeast_____2 g / 0,07 oz
Zucchero/ Sugar_____20 g /0,70 oz
Olio Evo/ Evo Oil_____50 g /1,7 oz
Add the salt and sugar to the water and mix. Add most of the flour and mix. Crumble the yeast into the flour. Add the oil and start kneading in the bowl. When the ingredients are all mixed together you can transfer the dough to a floured table top.
Knead the dough for about 15-20 minutes until the table top is clean. Keep sprinkling flour if it gets sticky.
Cover with wet cloth and let rest for 40 minutes.
Divide dough into balls.
Leave to rise for 6-8 hours (we left ours for longer and it was fine) We placed them on a (Floured) oven tray and left them in the oven with just the light on for a tiny bit of warmth.
Get your toppings ready.
Now it is time to start making pizzas! Watch what Tommy did and just try to copy him the best you can. Have fun and buon appetito!

Ah...The fond memories I have of Pizza Margherita. I spent a month traveling around Italy and I literally ate Pizza Margherita in every city we visited. Although I have a deep love for Pizza, the best dish I ate in Positano was Pasta with clams at one the beach front restaurants. It was literally heaven.

My grandad was a Neapolitan baker. This is exactly how he and my mother made pizza dough. The trick is working the dough. But yes this is it. Tastes fantasticò.

It was strangely validating for me to watch the pizza dough shrink back after Tomasso kneaded it and spread it out. I'm forever fighting with my dough, trying to keep it from shrinking back down! At least now I know it happens to other people.
In a different vein, I'm going to add my voice to the many other commenters in this and other of your videos, and compliment you Nicki on your genuine-ness. I love that your kitchen looks like a real family kitchen that actually gets used. There's real stuff on the table, on the counters, pet dishes on the floor, jackets hanging on the hooks, shoes by the door. . I feel very comfy in your kitchen. Thank you for inviting us into it!

I’m new to gardening and I loooove when Carlo and his brother (his name escapes me, forgive me) give tips, tricks and just share their knowledge on how they grow such beautiful fruits, vegetables and the trees on your property. Your video’s so charming!!! Went to the Amalfi Coast 5 years ago on a hiking tour oh, all the steps ,after 3 day my ankle got sore from coming down the steps. Such fun being a part of your life ,brings back all the wonderful memories of your part of the world and all the amazing people we met !!!
I just love the drone footage, the colours of the sea against the cliffs where the cars are going across the bridge, so beautiful. I put the dough on the grill, both sides. It gets almost the same as when pizza-oven-baked. Then I put the toppings on and I put it in the regular oven for just 5 minutes for the cheese to melt. The result is great.
Wonderful work family especially Chef Tomasso !!! I tried the Carbonara recipe which was delicious. This pizza looks incredible too. Love how Carlo immediately says cut it up. How many times do we see famous chefs on tv take a bite out of a huge portion of food. Tomasso is so calm!! More! Per favore! 🥰

PINEAPPLE!!! PIZZA...My daughter would have shared that pineapple pizza with you Nicki. It is her favorite topping and the only one who eats it in our household LOL! Nicki, I found your channel about a month ago and I totally love it! 💗 I have been binge-watching and going through all of your videos. There’s an Italian restaurant near me where they have Nutella pizza and pizza with mascarpone and strawberries for dessert, both are delicious.
We also have a restaurant near us and they serve pizza with Nutella years ago.
