In 2014 they just went insane and made one of the most stylish templars and Assassins to ever live and then never tried to reach the same heights again. Love the outfits in this game I agree with your list a lot :)
I like to wear different outfits in different environments or situations. In NY I'll start by wearing the interim outfit, the upgrade to the Templar outfit. After completing all Assassin interceptions I'll upgrade to the Enforcer outfit, finally culminating with the Master Templar outfit after beating the Storm Fortress. To show how Shay is moving up the ranks of the Templar Order In River Valley I'll alternate between the Explorer and the Hunter outfit since those are best suited. During the sequence where you must protect Monro and his men from Kesegowaase and his allies I'll don the raider outfit. In the North Atlantic I'll use the Assassin Killer outfit when participating in naval combat or taking forts and settlements. When exploring the more isolated locations further north like Gros Morne I'll don the Arctic explorer outfit whilst during the sequence where you take part in the battle for Louisberg I'll wear the captain outfit
I would have liked one more Assassin outfit, like a white one or something more, BUT THE TEMPLAR OUTFITS ARE JUST PERFECT 🗣️🗣️🗣️ they would undisputedly be the best outfits if they had a hood like shay's outfit had in the trailer
I like to think Shay kept the interim coat on his official Templar uniform because he genuinely cared for the Finnegans. If not for them he'd be at the bottom of the atlantic. Its also a valuable coat as it belonged to their son so it holds sentimental value. George Monroe also knew their son and recognized the coat, and Monroe was the one who taught Shay of the templars and changed his worldview and was a good friend to him. So Shay kept the Finnegan coat to remember them and george and wears it proudly as a reminder that there are still good people in his new life.

Jacob Frye's outfit is also technically different between Black Flag and Rogue. Edward wears the hood while Shay wears the top hat. Unfortunately he doesn't take off the top hat and wear the hood when he enters a restricted area, he just puts up the collar.
Just got into Rogue (and I regret not doing so earlier), and the captain and commander outfits are amazing, the details, layering and hats are just phenomenal!

My favorite outfit the Templar Master. Not only does it just look really cool, it was also really difficult to defeat the Legendary Ships to FINALLY unlock this outfit, so gosh dang it, I'm gonna use it. When it comes to the Assassin Killer outfit, I personally don't like that it permanently has the mask on. The permanent mask ruins the look for me, especially during cutscenes. It's not even hard to press the gas mask button during combat, so having an outfit with that ability is unnecessary.

I love the red and black colour scheme and I don’t mind it not having a hood. The outfit fits Shays character as a more subtle Templar than Haytham for example. He doesn’t want to stand out too well and the red provides a sense of danger to him but since it’s not on the whole design it doesn’t make Shay look like a villain.
I tbh loved the Naval Compaign minigames in BF and Rogue but that doesnt mean they weren't kinda garbage at the same time.. XD I do love how with BF they had phone support were you can send ships on missions outside of the game so when you got back to the game you could collect the reward but I think that was shutdown sadly..
You should do a video on Assassins Creed Red, and your top hopes for it. It is allegedly releasing late this year, and I am hoping it will be good, since we have been wanting a game set in Feudal Japan for the last 15 years, and the new protagonist Naoi, a shinobi assassin, seems like a compelling one, I hope. I am cautious about being hyped for it, since it seems like it is just going to be AC Odyssey in a different skin, which dampens my hype for it a bit.

Interim outfit has always been my favorite. Especially with the mask. I prefer how much black it has over the red highlights.

I'm just throwing this out there, the blue fabric bits in between the stuff you mention on the ac4 connor outfit are on the original outfit in ac3
Just got into Rogue (and I regret not doing so earlier), and the captain and commander outfits are amazing, the details, layering and hats are just phenomenal!

AC Rogue outfits are the best and coolest
Really the only awesome one is the red/white Templar outfit. THAT in itself, is worth it.
