As a Dominican (Dominican Republic country in the Caribbean) I am honored to see tostones made by you. Now, if I may, when we make the tostones we just peel the green skin off and run our knife through the plantains to take any part of the skin that might make it black or black spots, cut them as you did and fry them in es them we have a special tool made out of two flat pieces of metal connected in one end and in the opposite end a handle to sandwich sort of speak together a "toston" and make it as flat as you which and lastly you fry it again. The thinner (like the ones you made) the crunchier. I'll be happy to send you a tostones masher. Also you can make tostones "baskets" with a type of lime press and fill it with a garlicky shrimp and avocado mix that is to die for.

I am glad you are incorporating Latino food in your channel. I am from Panama and we called the green ones Patacones and the ripe one Tajadas maduras which are sliced. One way I like to prepare the patacones after taking them out of the water is adding mince garlic and let them set for a minute or two then fry them. They’re taste much better. Yum 🤤
My Cuban mother made both kinds all the time, but did not soak them. She'd cut the ripe ones (maduros) on a diagonal bias about 1/2 inch thick and just fry them. No smashing. The tostones she made much in the same way as you do. She would also take the green plantains, peel them, then slice them across the diameter on a mandolin, to make paper thin coin size chips. Fry them 2-3 minutes and they're ready. Drain and salt them when done, and to me, they are better than potato chips. They are also stay sturdy enough to stand up to most any dip. Being fast and easy to make as chips, keeps that green plantain crispy/crunchy, salty, and fried crave easy to satisfy.
You have to try a puertorican dish called Mofongo. It's mashed green plantain (fried) with garlic & pork cracklings (chicharrones) . We have it at almost every restaurant in PR. 🇵🇷🤤
Another great sauce for tostones is mayo-ketchup. Yes, it is a mayo and ketchup mix, but you also add smashed garlic, cilantro, and a bit of salt. Believe me, it will be great. Here in Puerto Rico we enjoy both mojo and mayo-ketchup.
If you like Tostones, then, you WILL LOVE "Mofongo". Which are Tostones smashed with bits of fried pork meat. DELICIOUS 😋😋. Tostones taken to ANOTHER LEVEL. 😋😋
Mangú, smashed plantines, i use 80% Green and 20% ripe , boiled first and then smashed with Frozen milk and butter. Then you put an encebollado on top withbeither fried eggs or queso de freir

Mojo blew my mind when I made it for the first time. I haven't tried it with cilantro yet, but fresh garlic, salt, lime, and oil mashed together opened another flavor door for me. Of course amazing for tostones, but I'd dip almost anything in there, and probably use it for marinades 😍 So true when I nearly finished off my batch of tostones and mojo by myself lol. Oh my gosh. This brings back memories of my childhood in Puerto Rico. Mom made these all the time. She used paper bags to set them on to drain. Covered them with another paper bag and used her hand to flatten them. Salted generously. Delicious!
As a Puerto Rican who makes plantains you might want to try to use more oil to deep fry the plantain chunks rather than use so little oil. Do not let them get brown or they will taste burned and bitter. You are better off frying at a lower heat. I say this because I notice from your videos, you are a perfectionist.
Watching with my Cuban mom who is an amazing cook and she approves of your method. :-) She doesn't always do the water/lime/salt soak. And she also said the garlic mojo dip is not traditionally Cuban, but she's not offended. haha Also, she makes them a little thicker so you can still taste the creaminess of the plantain.
Yes, we 🇵🇷 soak our plantains. There are many variations to the mojo sauce. Some add an orange and lime juice combination with garlic and olive oil. Whatever your variation is, I’m sure it’s delicious! 🤤 yes 👍🏼 to plantains.

I grew up in the Caribbean eating both versions of these plantains, your tostones method is exactly how I learned to cook the unripen ones and I still cook them this way today. Your ripe plantain method is slightly different than what I know (we cut them on an angle, fry them then simmer them in a butter, sugar and dark rum sauce!) but I'm going to give it a try! I love plantain anything. Im half cuban and am now with a Puerto ricanan that put me onto mofongo. Delicious but my favorite will always be my abuelas maduros. Ive also tried a dish recently that was basically picadillo thrown into a sweet plantain and it was one of the best things ive ever had.

The origin is unknown but the recipe is more from Dominican Republic.im 50 and this is the first time I see someone put lime on the salty water.i was teacher to add only salt yo the water and they don't need to be in the water for so long.just like 5 is good enough to marinate in salty water.im happy to see this delicious recipe here and I hope you make more in the future 😀

If you love plantains then you should try the 🇬🇭 kelewele made with ripe plantains, ginger, habanero peppers, black pepper, onion and garlic powder, salt and any other spices of your choice. Here in Panama we call it patacones and you don't need to soak in water, the trick is to fry them the first time until golden and hard outside, instead of a pan use something where you can deep fry, avoid browning!!!! Smash and fry second time until golden bright yellow!!! Those are the best. I love salty and crispy patacones
I love fried plantain! 🇬🇾🇬🇾🇬🇾 I usually eat it with fried bakes or dumplings and saltfish. Riper is definitely better. So sweet! I’ve never tried tostones, but they do look yummy.

I am Cuban and have made tostones all my married life, 51 years, , I don’t put them in water, try them the way I make them, much easier. First do not heat the oils, you cut them and put them in the cold oil, then turn the heat on. They are going to cook inside, take them out mash them and them fry them in real hot oil. That’s it, done.

We used to buy fried plantains from the local health food store but they were spicy. Was bummed when the store closed. I'm excited to try this recipe with some cayenne or hot paprika. Will definitely have to double or even triple this recipe.

In the meantime search "pão de queijo". I make a few batches at a time and freeze the balls to make it easier when I want them for breakfast. Just put the frozen balls in the oven without preheating. It is fantastic.

Good job On making those! I am Latina and we absolutely have both of those as staples With dinner and even breakfast . When I make the sweet plantains I actually use the skin Of the plantain to flatten It since you van basically peel the whole thing easily But that's just me lol I do use the cup to flatten the green ones though

These are awesome!! I am from Puerto Rico 🇵🇷and the sweet ones are not supposed to be deep fried. Just put a little butter in a pan and let them get a little golden. Those are also known as “amarillitos” and they are GREAT with ground beef and cheese AKA “ Canoitas” that’s a nother recipe. Also try “mofongo “you are going to go bananas over it ;)

I'm from India, and fried 'banana chips' (basically fried raw plantains) are very common in the southern states here [they r rarely prepared at home, people often just buy them ] :) but we just call them bananas... there r diff names in local languages but 'plantains' are often referred to as bananas idrky. although at home, We make a deep-fried version dipped in a batter made with gram flour and rice flour before frying. (Vazhakkai bajji) And we also make a pan-fried one with just a few spices.(Vazhakkai fry) Plantains r also added to some curries and mixed vegetable sides here. We don't peel them before cooking them tho :)

Here in Panama we call it patacones and you don't need to soak in water, the trick is to fry them the first time until golden and hard outside, instead of a pan use something where you can deep fry, avoid browning!!!! Smash and fry second time until golden bright yellow!!! Those are the best. I love salty and crispy patacones

I am Cuban and have made tostones all my married life, 51 years, , I don’t put them in water, try them the way I make them, much easier. First do not heat the oils, you cut them and put them in the cold oil, then turn the heat on. They are going to cook inside, take them out mash them and them fry them in real hot oil. That’s it, done.
My mom is 🇵🇷 and she makes the best tostones with mayoketchup sauce yummm

We used to buy fried plantains from the local health food store but they were spicy. Was bummed when the store closed. I'm excited to try this recipe with some cayenne or hot paprika. Will definitely have to double or even triple this recipe.

In the meantime search "pão de queijo". I make a few batches at a time and freeze the balls to make it easier when I want them for breakfast. Just put the frozen balls in the oven without preheating. It is fantastic.

Good job On making those! I am Latina and we absolutely have both of those as staples With dinner and even breakfast . When I make the sweet plantains I actually use the skin Of the plantain to flatten It since you van basically peel the whole thing easily But that's just me lol I do use the cup to flatten the green ones though

P.S: Pão de queijo is delicious, you will never go to a Brazilian’s house where they will not offer it to you as soon as you arrive.

I'm from Puerto Rico we eat a lot of that, tostones ,both green or ripe are delicious,,,Yu need to learn to make the Mayo ketchup,,is a dip so delicious,,just 3 ingredients,,Mayo, ketchup and garlic,,ummmm yummy 🤗😋

These are awesome!! I am from Puerto Rico 🇵🇷and the sweet ones are not supposed to be deep fried. Just put a little butter in a pan and let them get a little golden. Those are also known as “amarillitos” and they are GREAT with ground beef and cheese AKA “ Canoitas” that’s a nother recipe. Also try “mofongo “you are going to go bananas over it ;)

I'm from India, and fried 'banana chips' (basically fried raw plantains) are very common in the southern states here [they r rarely prepared at home, people often just buy them ]
:) but we just call them bananas... there r diff names in local languages but 'plantains' are often referred to as bananas idrky.
although at home, We make a deep-fried version dipped in a batter made with gram flour and rice flour before frying. (Vazhakkai bajji)
And we also make a pan-fried one with just a few spices.(Vazhakkai fry)
Plantains r also added to some curries and mixed vegetable sides here.
We don't peel them before cooking them tho :)
