  • Crispy, savory, salty, these homemade Tostones come together in just a few simple steps! These twice-fried plantains only require a handful of ingredients and make for the perfect golden crispy appetizer, side dish, or snack. A classic Latin staple, these come out delicious every time with this easy-to-follow recipe. These are great on their own or with basically anything. I LOVE them with a fresh garlicy mojo, which I'll show you how to whip up.

    I'm so excited to share this recipe with you, tostones and their counterparts maduros are beyond easy to make and soooo very delicious. My godfather was Venezuelan and we were lucky enough to have many amazing Cuban and Caribean restaurants in Los Angeles so I've been munching away on these delicious plantain chips for quite a while. I hope everyone grabs some plantains and tries these out.

    Plátano maduro is for fried plantains; cut diagonally and fried only once. Tostones have to be green. Both SO mouthwatering deliciously good! Gifts from above 🙌🏼🇻🇪

    So, usually maduros don't get soaked and they're cut diagonally. A really good trick for the tostones is on the second fry, dip them quickly on the salted water for even crispier edges. Plantains are life! 🇵🇷😂 Thanks for shining life on them!

    In a region of panama . We use maduros (overly ripe plantain) to make a kind of jam, you cooked them with a bit of water, stick cinnamon, sugar and a bit of butter. And with that jam you make sweet empanadas. Baked. Omg sweetest thing. It's called plantain tart 😋 .

    As a Dominican (Dominican Republic country in the Caribbean) I am honored to see tostones made by you. Now, if I may, when we make the tostones we just peel the green skin off and run our knife through the plantains to take any part of the skin that might make it black or black spots, cut them as you did and fry them in es them we have a special tool made out of two flat pieces of metal connected in one end and in the opposite end a handle to sandwich sort of speak together a "toston" and make it as flat as you which and lastly you fry it again. The thinner (like the ones you made) the crunchier. I'll be happy to send you a tostones masher. Also you can make tostones "baskets" with a type of lime press and fill it with a garlicky shrimp and avocado mix that is to die for.

    I made maduros for the first time a couple weeks ago. I've only ever ordered them. I felt drunk with power eating the whole batch myself. SO GOOD. SO GREASY. SO SWEET.

    You have to try a puertorican dish called Mofongo. It's mashed green plantain (fried) with garlic & pork cracklings (chicharrones) . We have it at almost every restaurant in PR. 🇵🇷🤤

    Another great sauce for tostones is mayo-ketchup. Yes, it is a mayo and ketchup mix, but you also add smashed garlic, cilantro, and a bit of salt. Believe me, it will be great. Here in Puerto Rico we enjoy both mojo and mayo-ketchup.

    If you like Tostones, then, you WILL LOVE "Mofongo". Which are Tostones smashed with bits of fried pork meat. DELICIOUS 😋😋.

      Mangú, smashed plantines, i use 80% Green and 20% ripe , boiled first and then smashed with Frozen milk and butter. Then you put an encebollado on top withbeither fried eggs or queso de freir

    I am glad you are incorporating Latino food in your channel.
    I am from Panama and we called the green ones Patacones and the ripe one Tajadas maduras which are sliced.
    One way I like to prepare the patacones after taking them out of the water is adding mince garlic and let them set for a minute or two then fry them. They’re taste much better. Yum 🤤

    Watching with my Cuban mom who is an amazing cook and she approves of your method. :-) She doesn't always do the water/lime/salt soak. And she also said the garlic mojo dip is not traditionally Cuban, but she's not offended. haha Also, she makes them a little thicker so you can still taste the creaminess of the plantain.

      Yes, we 🇵🇷 soak our plantains. There are many variations to the mojo sauce. Some add an orange and lime juice combination with garlic and olive oil. Whatever your variation is, I’m sure it’s delicious! 🤤 yes 👍🏼 to plantains.

      I'm Cuban too and yes we don't soak in salt water, but I'll try that. My mom never used a tostonera for smooshing them flat, just a paper bag.

    PRO TIP: If you work with larger amounts of plantains, please wear gloves. They stain when they start to oxidize, and it is not easy for them to come off. It'll look like you were playing with a sharpie marker. Especially if it gets under your nails? A nightmare! Felt like that should've been in the video but maybe John only ever worked with one or two.

    My Cuban mother made both kinds all the time, but did not soak them. She'd cut the ripe ones (maduros) on a diagonal bias about 1/2 inch thick and just fry them. No smashing. The tostones she made much in the same way as you do. She would also take the green plantains, peel them, then slice them across the diameter on a mandolin, to make paper thin coin size chips. Fry them 2-3 minutes and they're ready. Drain and salt them when done, and to me, they are better than potato chips. They are also stay sturdy enough to stand up to most any dip. Being fast and easy to make as chips, keeps that green plantain crispy/crunchy, salty, and fried crave easy to satisfy.

    As a Puerto Rican who makes plantains you might want to try to use more oil to deep fry the plantain chunks rather than use so little oil. Do not let them get brown or they will taste burned and bitter. You are better off frying at a lower heat. I say this because I notice from your videos, you are a perfectionist.

    Mojo blew my mind when I made it for the first time. I haven't tried it with cilantro yet, but fresh garlic, salt, lime, and oil mashed together opened another flavor door for me. Of course amazing for tostones, but I'd dip almost anything in there, and probably use it for marinades 😍
    So true when I nearly finished off my batch of tostones and mojo by myself lol. Definitely make a lot

    My mother hate the world " tostones" because that is the world they use in the east of Cuba and she is from the capital and our world is "plátano chatino" . Silly right? 😂. So every time I am in front of her I need to remind myself to be careful what I say.
    Also, WE DO NOT USE water for that recipe 😩. You put the bananas at very low heat in a around 2-3 inches of COLD OIL and then turn the heat on. Once is light brown you take them out, flat them with a piece of greasy paper or anything and back to the hot oil and voila. Done in 10 minutes from beginning to end.

    ¡Perfectos! The trick of soaking them first in salty water looks brilliant! Fish with tostones are truly a national institution here in Venezuela. They say there are no more contrasting flavors in nature than plantain and fish and we really love the combination of both :)

    If you love plantains then you should try the 🇬🇭 kelewele made with ripe plantains, ginger, habanero peppers, black pepper, onion and garlic powder, salt and any other spices of your choice. You deep fry it and add peanuts to it.... thank me later John.
    We've a lot of recipes here in 🇬🇭 made with both the unripe and ripped plantains

    Love this! Plantains are one of my favorite foods. I am team tostones forever, but amarillos (maduros) are really good too! I've always eaten mine with mayoketchup, but I will definitely try that sauce, it looks delicious!! Please make mofongo one day!! 🇵🇷😁❤️

      In the meantime search "pão de queijo". I make a few batches at a time and freeze the balls to make it easier when I want them for breakfast. Just put the frozen balls in the oven without preheating. It is fantastic.

    You can freeze after the smash and have tostones to quickly fry or bake up on days when you are feeling lazy.

Smashed super thin so it's huge and can be used as a base (like toast or tortilla) and topped w guac or whatever you like. I eat plant based but people top it w shredded chicken, beef or even shrimp

    In ecuador we called them Patacones! 😁 And we have sooo many recipes with platano verde (tostones) and maduro. I love your recipes! It would be so cool to see you make an ecuadorean recipe like Bolones de Verde or Empanadas de Verde.

    Oh my gosh. This brings back memories of my childhood in Puerto Rico. Mom made these all the time. She used paper bags to set them on to drain. Covered them with another paper bag and used her hand to flatten them. Salted generously. Delicious!

    I love plantain anything. Im half cuban and am now with a Puerto ricanan that put me onto mofongo. Delicious but my favorite will always be my abuelas maduros. Ive also tried a dish recently that was basically picadillo thrown into a sweet plantain and it was one of the best things ive ever had.

    I am Cuban and have made tostones all my married life, 51 years, , I don’t put them in water, try them the way I make them, much easier. First do not heat the oils, you cut them and put them in the cold oil, then turn the heat on. They are going to cook inside, take them out mash them and them fry them in real hot oil. That’s it, done.

    Hi, they look so crispy! In Panama we call them Patacones, not tostones, we use the "plátanos verdes" (not called machos). Delicious as breakfast with soft eggs, ham, sausage; as a side with fried fish (like fish&chips), or with ceviche. We use the "plátanos maduros" to make tajadas (diagonal cut ripe and fried plantain), which is a sweet 2nf side with rice, beans/lentils.
    John, have you tried a "patacón burguer", or a patacón taco (plantain shell instead of corn shell)? 🤯

    I went to Panama a few years ago and had tostones for the first time and my life was forever changed. Now I live in a place where I can't get them so I definitely want to try making them!!!

    Where I’m from we call them patacones, but only the ones from green plantain. The ripe ones are called maduros.

    I'm from India, and fried 'banana chips' (basically fried raw plantains) are very common in the southern states here [they r rarely prepared at home, people often just buy them ]
    :) but we just call them bananas... there r diff names in local languages but 'plantains' are often referred to as bananas idrky.
    although at home, We make a deep-fried version dipped in a batter made with gram flour and rice flour before frying. (Vazhakkai bajji)
    And we also make a pan-fried one with just a few spices.(Vazhakkai fry)
    Plantains r also added to some curries and mixed vegetable sides here.
    We don't peel them before cooking them tho :)

    I'm from Puerto Rico we eat a lot of that, tostones ,both green or ripe are delicious,,,Yu need to learn to make the Mayo ketchup,,is a dip so delicious,,just 3 ingredients,,Mayo, ketchup and garlic,,ummmm yummy 🤗😋

    Great video and love the 2 options you have shown. I have a question: can I prep the tostones a day before? I have a 25 pers. diner comming up a plan to make many different dishes. The double fry will take to much time for a side dish. You indicated that a holding moment could be right after the first fry before smashing. Would this be a possibility to hold those say for 24 hrs, then smash and fry again? Hope you can find the time te read and answer! BR Otto from the Netherlands 🇳🇱

    These are awesome!! I am from Puerto Rico 🇵🇷and the sweet ones are not supposed to be deep fried. Just put a little butter in a pan and let them get a little golden. Those are also known as “amarillitos” and they are GREAT with ground beef and cheese AKA “ Canoitas” that’s a nother recipe. Also try “mofongo “you are going to go bananas over it ;)

    Although…the best side sauce for tostones is simple. Mayonnaise, ketchup amd crushed garlic. It’s called mayuketchup

    Maduros don’t get smashed or soaked. The tostones get a quick dip in salt & lime water (or garlic lime salt water, depending on ur preference) to keep them from oxidizing & to add flavor.
