  • Pineapple Gojju
    Ingredients - Pineapple cubes, a spoon of fenugreek seeds, 10 Byadgi red red chillies, 2 spoons of sesame seeds, 1 spoon coriander seeds, 4 - 5 peppercorns, 4 - 5 spoons of urad dal, curry leaves 🍃 & grated dry coconut, tamarind juice or extract & some grated jaggery, salt to taste
    Chop the pineapple into cubes & keep it aside.
    In a hot pan pour a spoon of oil or dry roast for making paste or powder, firstly add fenugreek seeds & fry, then add urad dal fry till light brown, add in black peppercorns, add in curry leaves & fry, then fry the red chillies, fry coriander seeds, fry sesame seeds, add in grated dry coconut & fry well. Once done, transfer it a plate. After that, add in a pinch of asafoetida & pinch of tumeric powder. Let it cool for some time completely.
    After that, grind into a fine paste and keep it aside for now, or you could also make powder & store some, use it for next time as well.
    On the other side, Add in a spoon of groundnut oil, add in mustard seeds, curry leaves, red dry chillies, Pineapple cubes & fry well for sometime, then add tamarind juice or extract, add some grated jaggery , let it cook for sometime until it becomes a bit soft to 50 to 60 %, after that, add in grinded fine paste into the pan, give it a nice mix & add in salt as per your taste, keep stirring in between well. Let it simmer for a while till comes to a bit thicker consistency.
    Enjoy Pineapple Gojju,🍍it is ready to serve hot as a sides, serve it with curd rice, or chapati, or steamed rice, sambar or rasam rice.
