When I make this I try different dark chocolate bars to chop up and melt - like mint, espresso bean, etc. so it's different every time. But as others have said, it must cool a LOT or it makes mousse soup!

I have done this mousse plenty of times. What I do is remove the mixture from the heat when it still has a few lumps and keep stirring. The residual heat will melt the rest. Then, if I'm pressed for time, I pour the mousse into a large cold bowl (put it in the fridge just as you start making the mousse) and stir it a little to help it cool faster, about 5 minutes. Fold in the cream and voilà!

for those who tried this and failed because it turns into a soup : when you mix the chocolate with the cream, make sure the chocolate is TOTALLY cooled down, if not cold. the heat from the chocolate dissolves everything. anyway, if u did get a "soup", it's no problem just put in the freezer for less than two hours and you will get a really great mousse after.

3 courses in under half an hour is fake news. Tried this recipe. You must give at least 15 mins for the chocolate to cool but do keep stirring from time to time. She doesnt say how long to cool it but when I gave it 5-6 minutes, it still melted the cream which left me with a decadent soup. Chefs beware.
