I can't rate the food for authenticity yet, as I've yet to go to China and sample the food, but I probably will soon, as I will visit someone in Southern China, there, and I like trying things I'm not familiar, with. You should do this series in the UK, we have had Chinese restaurants for many decades now and its mostly agreed that it's very adapted to British tastes, so your opinions on that would be interesting. I swear i had a "chinese" the other day that was basically just Christmas dinner with rice.

I don't know how my mid-sized midwestern city with a not-significant Chinese population has so many seemingly authentic Sichuan places (at least 3, with a handful of others having a "secret" menu of traditional stuff). I have really grown to appreciate the spice level and the challenges it brings to my palate. I'll be keeping an eye out for some of these dishes to try out.

heh, knew you guys were in the area, but surprised you ended up in my home town. Sichuan food has always been one of my favorites, but several of the places i used to go have since closed. Will have to add this one to my list (despite it being on the parking hell block). Welcome and hope you all got to partake in some non-Chinese food and drink while you were here as well. Gourmet Haus Staudt is a beer and German food landmark you all likely would enjoy. Thanks for this series, was a great one.

I agree with you guys about fish full of bones in China. One thing I like about America is that fish sold here are mostly fish filet. When I had dinner with Chinese people, they actually prefer the kind of fish full of bones. It is almost absolute that I would get one or two fish bones stuck in my throat and I was always being laughed at.
Okay, I know what I'm missing. I love that you tell us about the food your eating and that you are noting what city in California you're eating in. I wish you were listing the foods your were eating too. That way I know what to look for in my local area. Otherwise, I think that is my only other complaint. The first one is that you didn't invite me with you! LoL. Great work guys, keep it up!

I recall my first ma la dish in ChongQing. My father-in-law took us all to a typical Chinese restaurant, was very busy and the big round tables with a gas burner in the middle and we all sat on plastic stools crowded in amongst other people from the neighbouring tables. He got his favourite dish 麻辣鱼 ma la yu (spicy fish). He ordered 8 jin (lbs) of fish and the Sichuan peppercorns were floating everywhere, still on the stem. Talk about numb lips and tongue, but so delicious.
on the bones thing. A lot of dishes I've had in China that are similar use 黑鱼 which also doesn't have bones, so there is authentic Chinese fish without bones.

For the life of me I can not remember the name of the province of spicy (and slightly oily) food that I fell in love with while in Hong Kong. They don't seem to have it here in the states, but it made my eyes roll back in my head. It was soooo delicious that I truly miss it and wish to heck I could remember the name.
