It's normal preservation procedure; I didn't know that you could do it with fish :). I turn my glasses upside down while they are still hot as an extra preservation and keep them like that until I eat them.

I am curious what type of jars you are using that allow this process. In the states, we are told that only using a pressure canner will ensure the food safety of many of the foods you preserve. Especially fish, poultry, and meat. Even most vegetables and some fruits All others must be water bathed (jars with food boiled in water for 30 minutes or so) That said, I love watching what you make.
Hello. These are glass jars and metal lids. Jars must be thoroughly washed and dried beforehand. It will be sterilized for 3 hours with the fish. For this reason, it does not need to be pre-sterilized.

今から40年くらい前かな、イワシの内蔵を取り去り、タッパーに塩を敷き詰めてイワシを並べ、その上からまた塩を敷き詰めて、何層かのミルフィーユ状態にし、冷蔵庫か冷凍庫で寝かせます。
で、頃合いを見て頭から丸かじり(笑)
アンチョビの未完成的な食べ方でした。
調べてみると、イワシの塩辛は日本全国にあり、両親が食べてた物は浅漬け的な塩辛との事で、うちの近所の漁師(昔の)が好んで食べてる食べ方だとか。
