If its still sizzling like that means the wok isn't heated properly and you can burn the onions because of the uneven heat distribution. cooking with the wok is far different then with a frying pan

I was taught fried rice from my Vietnamese cousin in law... He explained it to me as Asian casserole. You can add whatever you want in the way of ingredients, as it's usually a way to refresh leftovers ( ◜‿◝ )♡ The key is the rice. The reason why it is suggested you cook it and let it cool in the fridge overnight, is the texture. The rice looses some of the moisture cooked into it, and when you add your sauce and seasonings, it won't turn the rice into mush by incorporating more liquids into the fresh cooked rice. This is also why the eggs are usually fried separately and added back in towards the end. When I plan on making fried rice, I'll spend the day before prepping and cooking most of the ingredients (eggs the day of, so not rubbery.). I'll cook sweet and green onions with chopped bacon to be the pork contribution. I'll boil and cut boneless/skinless chicken (breasts and thighs!) And they'll get seasoned in the next day cooking. I'll usually get some Asian blend of frozen veggies that I like, and let them defrost in the fridge so they're not cooked in the microwave or add water to the stir frying portion of the cooking. If I want to go extra, I'll get a bag of small shrimps, and let them defrost about 30mins before cooking. Make sure they're clean! And bean sprouts! The Chinese food places used to add them all the time, and now they don't. So I'll get a package of fresh ones. They're good for you, and it adds a freshness to the rice. Sesame oil to stir fry things. Soy, fish sauce, and oyster sauce are the primary seasonings. I add ginger paste and minced garlic. Souped Up Recipes covers different styles of fried rice from different regions in China. So I suggest you go to her channel if you want some different but traditional takes on Asian American foods, as well as classic Asian dishes ( ◜‿◝ )♡ Her videos will make you hungry (◍•ᴗ•◍)❤
It's a good well-thought out recipe. The only suggestions I'll make is not to use sesame oil to stir fry. The smoke point of sesame oil is too low and it will degrade under the high heat necessary for proper fried rice (to get proper "wok hei"). Try high smoke point oils like canola or sunflower oils. Also, ginger is not commonly added to Chinese fried rice as it can overpower other flavors. Finally, be careful with adding bean sprouts. The tendency is to over-add bean sprouts. When you get restaurant fried rice, there are bean sprouts, but actually in very little amount.

It's a glass top electric range, but not a induction range. I think I'm remembering the right word (≧▽≦) And I usually add the bean sprouts very last. Just to get them warmed up really. And the ginger is usually about 1/2- 1 teaspoon per batch of rice. I tend to use more garlic than anything, because I hitched ,y wagon to an Italian family. I like how they have no fear of garlic ( ◜‿◝ )♡
@@Dessamator I appreciate your issue with your stove. What you are doing with the sesame oil though is doing a gentle saute', not actually frying rice (which is the point). Most stoves can easily go over the 350 deg F at which sesame oil degrades, so I strongly recommend you use a different oil. If you love the flavor of sesame oil, try adding it at the end of the cooking process. It will give the dish a wonderful aroma and taste

For egg fried rice, you don’t need to leave the cooked rice a day. Cook the rice as normal, drain it and put it back in the pan with the lid on and leave it for a couple of hours. That will let the rice go cold and the starch will stick the rice together helping it to stale. After a couple of hours when you are ready to make egg friend rice, your rice will be ready to use.

You ain't wrong. Most Americans I think associate Chinese food with a lot of sweet flavors, so when they try some of the more authentic dishes, it can throw people's tastes off. It's funny too, I've got some relatives who live in the UK, and they've told me that their Chinese restaurants have a lot more curry based flavors, actually.

Kay couldn't cook something minimally edible even if her life depended on it.
For egg fried rice, you don’t need to leave the cooked rice a day. Cook the rice as normal, drain it and put it back in the pan with the lid on and leave it for a couple of hours. That will let the rice go cold and the starch will stick the rice together helping it to stale. After a couple of hours when you are ready to make egg friend rice, your rice will be ready to use.

I watched this probably 1 month ago and i was disgusted. When I woke up the next morning I was sick, I had a fever and I was sick to my stomach. I was surprised my self, but this just shows how BAD and SICKENING this cooking is.
Kays' adorable, I never really noticed her dimples. Rice a Roni is mixed in a saucepan with butter nothing else until it browns.
Then water is added to bring to a boil cover then simmer for ( I believe 20 minutes ) ?

I feel like she does this on purpose. It gets views. We in the UK have a strongly absurdist sarcasm based humour and I think this is a really prime example of this. Her laughter when she put in the onions deffo makes me think she knows what she's doing
