    "Destroy them with a spatula." Lol, "destroy" is not usually a verb used in cooking videos; and you said it with your naturally calm, cool, and collected voice which made it even more humorous. Great job making this video though, and it looks and sounds like a delicious recipe!

      +NA I actually don't like a lot of fake "meats" and "cheeses." I mostly eat fresh plants. Vegan food is an amazing way to lower cholesterol in your diet and reduce your carbon footprint in addition to helping save animals.

      so potatoes, rice, beans, peas, apples, oranges, blueberries, tomatoes, watermelon..etc are gross? lol do some research into what is ACTUALLY in your egg(chicken period lol) cow's breast milk, and decomposing animal bodies and then come back.

    I mill my own flour and make almost all of our own bread items. It has been a bit more difficult since going low fat. To find that amazing softness I like so much can be a challenge. Avocadoes??!! Blew me away, seriously when I saw that I was smiling and shaking my head...thinking why not, the perfect healthy fat so many of us love! I believe the mixing technique you use as well, adds to the softness and texture. I use a similar method in most of my breads. Or I could never get a whole grain bread to be soft, which can be a real challenge.
    The next time I make buns, it will be this wonderful recipe.

      ***** And the truth is that it wasn't even our idea! A guy named Ronald came out with this incredible idea and proposed it to us on our Patreon page, so we made a few attempts and the buns turned out so moist, soft and delicious that we couldn't believe it. We will share a recipe for a whole-wheat focaccia at some point, which you'll be surprised to hear, it's actually amazingly soft :) Thank you for everything my friend!

      I can't find any healthier, than what I do. Organic wheat berries along with other whole organic grains and a few seeds and grasses too. I make a few loaves every other week and share with the neighbors as well. I use a cast iron Dutch oven mostly to bake them in. But as well I am trying hard to perfect making it in a outdoors stone pizza oven. A bit trickier.
      I really don't do that much, wish I had more time I would perfect it. I am a work in progress. LOL

      Oh yes, I do know what they are! 😄 and I bet that if you dose the ingredients carefully, you will end up with something special. The only thing I'm not sure about, is how the light avocado taste will work with sweet ingredients, but hey...better to give it a try and find out! 😉 thanks again!

    It was the first time ever for me to make buns and it turned out to be pretty easy ^^ took a lot of time though, but I guess it's worth it cause they were the best buns I have ever tried in my entire life!!! I made burgers out of home made falafel and that was also delicious! Best burger I have ever eaten in my entire life! Oh yeah, I added some turmeric in the bun recipe ;)

    I made these buns today. At first I was a little sceptical about the seemingly large amount of sugar used. I thought the buns would end up tasting way too sweet. But I guess I was wrong ;) They were perfect.I just swichted the avocado for the same amount of vegetable oil. Thank you for this great recipe and the entertaining video!

      +goerri27 I can only imagine how soft they were since you used oil to replace avocado! :) As a chef, my main goal is to share recipes that taste good for the majority of the population, rather than sharing preparations that I personally like. These buns are the perfect example of that philosophy; whilst developing this recipe I did too think that the sugar was too much, but the reality is that as soon as you try them, you realise that the sugar is just the right quantity to make the buns taste as good as the once you can find around, if not better.     What a creative recipe! I would have never thought to use avocado, but it sounds delicious! I'm tired of having to search every bread option in the grocery store only to find the same crappy and scary ingredients on every one of them. Definitely going to try this out soon :)

    Can't wait to try these! Already using Mary's Test Kitchen's sweet potato hamburger bun recipe; this is going into the same file. I love that you guys are focusing on adding other nutrient rich ingredients to your bread recipes. Any little bit of additional vegetables or fruits is a good addition. Thanks for posting! : ) P.S. Miriam is so graceful the way she forms the buns, it's a pleasure to watch; my hands look like the paws of an impatient monkey, by comparison!

      tamcon72 Ahah, your comments are always amazing :) As you already know this is probably the most difficult kind of cuisine in the whole world, and not because it's actually difficult, but because everyone expect something different from you. For this reason it is always nice to add nutrition back into the foods, so that more people can be happy about our recipe. It would be nice to use zero refined product, salt, gluten, nutritional yeast etc. But if we were to cook that way, it would be best to not cook at all and be raw foodists. I'm 100% sure that your kneading skills are top quality. Although I have to say that Miriam really is a master when it comes to handling dough. Thanks for watching ;)

    I have tried flax seed buns but they didn't turn out as fluffy as this buns in the video so I'm def going to try this out! avocados are a great idea to use!! Thank you.

    This is so cool, I would've never have thought of avocado in dough!! I hope I don't get mad over the stickiness of the dough, it always seems to happen to me when attempting to bake bread... :(

    They look amazing!! I read in the comments that cooked pumpkin is possible instead of avocado. So I guess sweet potatoe would also work for those who want to be careful about fat. Would it be possible to use aquafaba instead of the sugar water as an egg wash subsitute?

      Veronique Blommaart Absolutely, sweet potatoes should work pretty well! We developed many recipes for breads with potatoes, pumpkin and even sweet potatoes and they always turn out good. The only issue is that the buns will not come out as soft, but honestly...it is not a big deal! If for acquafaba you mean chickpeas water...that is not really the same as it doesn't contain much sugar to caramelize. You can however use other syrups mixed with water, such as agave or maple syrup. I hope this helps, Thanks for watching

      The Vegan Corner Oh, nice! I'm looking forward to that recipe! :) P.S. The one recipe that did not turn out great was the tiramisu. The thing is, since the sponge is fat free, it feels a bit rubbery. The way to overcome this, as I discovered while eating it, is to make sure the sponge is thoroughly soaked in coffee, so that there are no dryer 'lumps'. So you see, even that 'fail' of mine has potential to be a hit. ;)

      Ania Wants to Run I knew it was the tiramisu! I agree with you and that's exactly why I say in the video "be generous with the coffee". You see, there are recipes on this channel that I'm not 100% happy about. I mean, I know that they are still quite good compared to most of the stuff you find around, but there isn't much more that can be done for them as using no fat obviously has repercussions on the final product. However, I trust that people perfectly understand why many fat-free recipes cannot be as good as the full-fat counterparts :) I used to make a tiramisu back in the day fit for kings, but it surely wasn't vegan. Anyway, you are very kind, thank you very much for letting me know why the recipe wasn't good enough. I'll work harder in the future to make sure that mistakes like that don't happen again ;)

      The Vegan Corner Well, actually, I am always in awe of the recipes you come up with, like these burger buns for example. :) I can also perfectly well understand the difficulty of cooking fat free, so kudos to you for challenging yourself to do this with each recipe! In my house we cook a lot of Indian food, and sometimes it is just not possible to avoid all oil or a decent amount of salt. But what we have done is to limit the oil to the absolute minimum, and to leave it out whenever possible, and personally I sweat out the salt in (relatively) intense cardio workouts that high-carb vegan food has made possible for me. :D

    I made these and they came out beautiful. I know the avocado is the staple of the recipe but I wonder if it can be substituted for oil without changing the rest of the recipe in case they are not in season or they are too expensive at the moment of purchase.

      Hi, thanks for your comment! It is definitely worth trying that out. The only issue I can't solve on the spot is how much oil to use, because the recipe calls for 100 grams of avocado, which contains about 15 grams of fat and 70 grams of water, so basically if you want to remove it altogether, you have to replace both the missing fat and water required for the recipe to be successful.
      I'm not sure if you work in grams or with imperial measurements, but in case imperial is your way to go, then 1 tbsp of oil and 1/4 cup of water should be a decent replacement for the avocado in my opinion.
      Another thing I tried in the past, was to use some mashed potatoes mixed again with some oil, to replace the avocato, which worked really well.
      I hope this helps and if you do give it a try, please do report back if you have the time, as I'm curious to know what happened :) Cheers!

      Arianna1376 I'm afraid It will mess it up badly, as gluten-free flour can't really substitute standard flours so easily (not always at least). However, we have developed a recipe for gluten-free buns that is to die for. We just need to film it and post it. I'm not sure when it will be done, but IT WILL be done. Thanks for watching ;)

    I love the avocado in there. It seems like that is the egg substitute(or upgrade) in this recipe?
    Although I plan to, I haven't looked through all your other videos yet, but It got me thinking. The texture of the mashed avocado is so nice, maybe it could be used in other baking recipes. Before I go and experiment, maybe you already have some advice. Could it be used in cakes, or will the flavor clash too much. The reason I ask, avocado can be pretty subtle, and even used to make chocolate pudding, so I think it's at least possible. Traditional bundt cakes use eggs and sour cream, I was thinking of trying avocado instead. Any thoughts?
    Either way, thank you again for this one, it's a keeper and I totally recommend it to others to try.

      Thanks for your positive feedback and for trying out our recipe! I see people using avocado for the craziest recipes, but to be honest with you I don't really like to use it in many cases, because although it has a mild flavour, sometimes when added to other ingredients it becomes pretty strong. In the case of the buns for example, it's such a little quantity and yet it you can still taste it, but in this instance is a good thing and it does only good to the buns. Personally I would not use it in a sweet recipe, but that's just me. That being said, I think that the best option is to experiment. Thanks again :)

    Im usually very scared of vegan dough recipes as there have been a few fails in my kitchen but I've already made your mini canape pizza recipe twice and can only say that my whole family (vegans and non-vegans) looooved them! With that being said, the burger buns are next up on my list!

      Samar Yeh I perfectly know what you are talking about. Many of the vegan recipes you find around are quite terrible, especially bread ones. This is due to the fact that most of the people have no clue about baking, especially when it comes to managing doughs. Every time I see a recipe for pizza I cringe, and yet I keep seeing people proposing those terrible recipes that will inevitably yield raw floury pizzas.
      However, we are professional chefs, and Miriam (the person you see making these buns) is a master baker. This doesn't mean that our recipes are better than the others obviously, but simply that we develop them professionally, which means that we try them for an absolute minimum of 10 times, just to make sure that they yield consistent results. This is the exact same process I would follow if I had to develop a recipe for a popular restaurant. That being said, I strongly recommend you to try this recipe, because it really is special. Would it be better with plenty of eggs, butter, oil and salt? That's for sure, but it would also be non-vegan and quite unhealthy. Thanks for watching ;)

    Hi! Does it have that distinct avocado aftertaste which is present in baked breads/goodies with avocados, I guess? It is like, kind of a little bitter to my taste.

      jackie o If you find avocado bitter, you must be a supertaster. Have a look on wikipedia about supertasters, I'm sure you'll find it interesting :) To my "standard" palate, this bread has no avocado aftertaste whatsoever if eaten with something else, and a very delicate aftertaste if eaten alone. However, you can replace the avo with mashed potatoes, pumpkin or sweet potatoes to obtain very similar results. Thanks for watching
