Which one? There are 2 types of Martabak that have been popularized in Indonesia. Is it the sweet one brought from China and has multiple names or the savory one brought from the Middle East?
Here are some suggestions. Maybe try making duck eggs or fish balls from the Philippines while you're talking about Southeast Asia. Or fufu from a lot of West African vendors would also be terrific. Or you could go back to the US and try making pinchos from Puerto Rico. This is a great idea and I'm excited to see what else you guys come up with. Thanks for your shows!
