Use same amount of yeast for active dry and instant dry yeast. The difference is you need to activate the active dry yeast first in water with a little sugar. Wait for 15 minutes or until the yeast bubbles up before using. Use the amount of water used in the recipe to activate the yeast. Add 2 tsp. sugar from the recipe to hasten the activation.
How long is the shelf life for pan bisaya? The dough was wetter than yours in the video. I used two cups of water to bring the dough together but didn't use extra bread flour. Should I have added more flour?
The dough does not keep more than 2 days because of the coconut. You can add extra flour if you want to be able to make a nicer shape. Otherwise, as long as you can form it, it is okay. Sometimes the dough is more wet because of the coconut.

I use La Germania electric oven - European series. It comes only in one size. Sorry I don’t have the measurement but it is bigger than the usual oven.

You can try using dessciated coconut but you need to hydrate it with warm water first.
