World’s Largest Airline Kitchen - Emirates Flight Catering

  • I visited the world’s largest airline kitchen - Emirates Flight Catering. On an average day, the kitchen produced 225,000 meals and over 1 billion meals since its inception. Join me for the eye-opening behind the scenes tour.
    My tour started at the end of an A380 flight, over 100 used trollies, leftover food, and dirty items arrived at Emirates Flight Catering for offloading and cleaning. On average, over 3 million items are being cleaned every day by mega washing machines. The cleaned trolley and item are then board on a “monorail” to travel to the other side of the building for packing.
    The next stop is the hot food kitchen. Emirates has a separate kitchen section for Western food, Asian food, Arabic food and Indian food. Executive chef James Griffith showed me around each section. After the food is cooked, they go into chillers for 4 hours before arriving at portioning and packaging for flight. I witnessed the cooking by specification and weighting of food to ensure consistency.
    At the tray build-up area, new trays and portioned food were then loaded onto the cleaned trolley. All catering were then kept chilled before being taken by high loader truck into the airplane for passengers.
    Last, I visited World’s largest vertical farm, Bustanica which produces fresh lettuce for Emirates Flight Kitchen from farm to fork in just 14 hours! The vegetables were grown sustainably without using soil and fertilizer.

      I don't see real hygiene in this Emirates kitchen, It seems to me a very obsolete kitchen, everything is done manually, most of those who work there do not cover their mouths completely, In China I had the opportunity to enter a kitchen like that where they prepare food for airlines and the whole process was automated and very clean, everyone who works there must wear a transparent plastic device that covers their mouths and they can talk to each other without the possibility of saliva particles getting into the food, another thing they are not using food grade gloves, they are using regular gloves that are not the most appropriate for handling food, I don't see much hygiene in the Emirates kitchen. I am going to send a video to Mohammed bin Rashid Al Maktoum so that he can see a fully automated and very clean kitchen and correct the errors and the poor hygiene that is there in the Emirates Airlines kitchen.

    I was in heaven the whole video. I'm 71 years old and my father worked at American Airlines and British Airways from my birth onward. I've always loved airline food, always. I started flying in DC-6 prop planes through the present day aircraft. Still love eating in flight. Thanks. You make the best videos and share the most fun.

    I flew on both Turkish Airways and Qatar Airways a couple months ago, and the food and service of the Middle Eastern airways is amazing! My mind was blown at both their lounges as well, the amount of fresh food at Turkish Airlines is mind blowing. Made me realize just how terrible US flights are

      I recall being on a Turkish Airlines last daily flight out at midnight on a A330 from uk-istanbul, literally only 15 passengers & it had a full blown chef on board with a hat who was giving us all a detailed taster of business class food etc. Never seen a chef & haven't since

    Amazing how the catering has grown. When I first flew through DXB in 1973 (refuelling and catering stop on BritishAirtours charter flight B707 LGW-BKK) any serious catering was done by a top local hotel downtown ! Back then there were not many long-haul flight movements and many other carriers en route to Asia would stop in BAH.

    I've once had the chance to visit the kitchen of Cathay's catering in HongKong. I was surprised to see real cooks as I thought machine would have taken over. Now I see Emirates and it still blow my minds. What an impressive organization behind your flight meal. Thanks for sharing this.

Having grown up in the fine dining restaurant business, it’s also really nice to see the pride that these workers have in what they are cooking. Love the head chef as well, seems to be a really down to earth kind of guy. That high pressure water slicer is pretty wild, never seen something like this.

    I shouldn't have watched this - I'm hungry now. What I'm amazed at is the amount of care going into each meal, I had pictured it being a machine-type mass production with just a few people supervising. Instead it looks like every step has a person who is responsible for their part of every meal and ensures the quality is to a high standard.
    I flew to Europe from New Zealand and return on Emirates 16 years ago, I remember the meals being very good - having seen this video I can understand why.

    In the many jobs I’ve had in my working career I’ve worked in mahoosive kitchens and the one thing that was drummed into me from the beginning was if you had a meal presented to you in an unclean plate how would you feel?, so you get the job right first time every time but I was also told that there’s a way to complain without having to belittle the serving staff without wondering if because you’ve moaned at them and worrying if they’ve done something to your plate when it’s out of your sight. I have on more than one occasion seen the chef’s do something to the food of a moaner but I’m delighted to see the cleanliness of the kitchens and the quality of the food, thank you sam

    The ground staff is never hungry on these. I used to be an ac engineer for a gulf carrier, i picked up 10kgs in 2 years. So much good food untouched, incredible waste. Unopened steaks, fish, all 1 st class meals. I was eating 5-6 full 1st class courses a shift

    Hi Sam. Great video. In regards to the vertical gardening, I wonder if there is a taste difference between the vertical method versus soil gardening. The video really shows how much Emirates cares about their customers by providing meals respective to their customs. Further, James from Hawaii was absolutely amazing. What a great tour guide. The knowledge of the various foods served is just unbelievable. One of the highlights is when James was stating the length it took to nail down the right recipe for the French toast. That spoke volume to their commitment to food perfection with something as basic as French toast. Sam, I think you are single handedly promoting the airline industry with all your videos. It is no wonder that most airlines give you permission for behind the scenes access. Again, great video.

    That's the right way to control the food chain process. Hydroponic is fabulous! More people need to adapt this way of farming. MJ growers are using hydro in huge facilities, acres under roof in cold frigid Canada.

Every steps we saw in your video are precise and controlled. It is both industrial and a work of craftsmanship. I am impressed with cleanliness and hygiene.     Sam, great video. It is amazing to show your viewers and us subscribers how Emeret makes all the meals from 'farm to table'. It was nice to see how they use hydrophobic farming to grow all the greens that go into the salads served at 40k. Wish more of the av geeks would give their subs a behind the scene look at this process. After seeing this I'm, someday, considering flying on Emerets to enjoy this wonderful cuisine. Way to go Sam Chui
