This looks delicious. Like you, Amy, I am also a no on most dairy - I can tolerate some low fat cheeses & low fat sour cream. I was wondering if I could substitute coconut milk for the milk but then I would need the whipping cream. I have used coconut cream in the past but never tried to sub it for whipping cream? Will have to do some research... I still love my Zacme 5.5 qt Stand Mixer and use it several times a week. Thank you for the recommendation. I grew up going to the corner store to get a big cone of homemade lemon ice cream. It was so delicious, but it's so hard to find. The only place I have been able to find it in my state is two and a half hours away (and yes, I occasionally make the drive to get some). I can't wait to try this recipe. Thanks, Amy and Eric. ❤
Lemon usually cuddles milk, cream, and milk products so I'm guessing the extra steps are to buffer the lemon. Used to be you had ice cream....and then sherbet which was what you did with the orange, lemon, and lime ...cuz if the curdling. I'm really interested to see how this comes out!
