I will have to add a comment here, I’ve worked in an ice cream factory for years, all icecream is manufactured to a soft serve consistency, then frozen. I hope this clarifies the illusion of the ice cream not freezing enough:-)

We have had one for 5 or more years. Used it often, entertained with ice cream we've made. The bowls have recently cracked so we are looking for another one.

I have 2 bowls and keep them in the freezer. When I make ice cream I usually make a traditional 1/2 or 1 gal batch. I put it in the fridge overnight. When I am ready to start making ice cream I stir the refrigerated mix and pour it into one of the frozen bowls. Then I pop it back into the freezer for about 15 -20 minutes. Then just add the paddle and cover and turn it on. Firmer ice cream in about 15-20 min. Oh, fold a clean dish towel and set it over the hole and top to keep the cold in. If you made vanilla, when you are ready to do the next batch you can change up the flavor on each batch. (mint choc. chip, Baileys, Amaretto, crushed butterfinger with a tablespoon of melted PB, fresh peach or strawberry...)

@@TheCultureofCookery My boyfriend got me an unofficial book of Disney drink recipes. The three I wanted to make most (blue milk, green milk, Dole whip) all call for an ice cream maker. Today I made blue milk with coconut milk, oat milk, pineapple juice, passion fruit juice, lime juice, watermelon syrup, and blue food coloring, blended it together, and ran it in the ice cream machine until it was a slushy consistency.
      Next up: Dole whip ^_^

I just bought this ice cream maker. I got it yesterday. I set my freezer to -8F (I can control the temperature of my freezer). I let the bowl there for about 14 hours. After that it made perfect macha (green tea) gelato in exactly 25 minutes. I saw no difference between the one I made and Haagen-Dazs. Honestly!

The Ninja Creami has major design flaws. First off, the lid is hard to clean and will grow mold start smelling. Second, the rotor, which goes into the ice-cream, also goes back into the machine. That will smell too. Third, people have complained about shredded plastic in their ice-cream, from the lid, I suppose.

Plastic is definitely worse for the environment (probably). But I've had this used model for a few years now and I still haven't had any problems with it breaking or anything like that. I suppose as long as you're not putting big pieces of metal in your ice cream, you should be fine? 😂

With ice cream makers like that, the bowl freezes the ice cream so hard that the paddle jams up against it. Which is why I wanna try the new Ninja Creami, that starts with rock frozen mix and then makes it soft and scoopable.

@@playnicegames Okay, if you say so. But just out of curiosity, how can a recipe cause freezing along the walls of the bowl? And how at times does that same recipe turn out well?`And at other times not form into ice cream at all?

    • @TheCultureofCookery
      @TheCultureofCookery  3 ปีที่แล้ว +5

That's super interesting. In all my testing, I didn't notice the paddle jamming. Some "harder" ice cream did collect on the spots that were in direct contact with the metal, but never jamming. It could be a case of overchurning?
Also, with the frozen hard, it's usually a case of not enough sugar or fat. In my testing, that's what led to creamiest ice cream.
      Hope that helps!

I have a similar model (Cuisinart ICE 30) that has the same problem. The part of the paddle that scrapes against the side of the bowl doesn't apply enough pressure, so the ice gradually forms up. I found a video review, and the guy in it holds the paddle against the bowl with his thumb. (He makes ice cream professionally, so I doubt it's a fault in the recipe.) Aside from that problem, he says it's a good model.

I've had one of these - or rather the previous model - for at least a decade and I made some ice cream yesterday and it was just the same as on the first day. You just have to remember two things: for best flavor and volume, refrigerate the mix overnight. Once it's done churning, unless you want to eat soft ice cream, freeze the ice cream for several hours if you want to be able to scoop it. Of course a lot depends on the recipe. I usually make ice milk using the Serious Eats recipe. And lastly if you want to make sure that your container is frozen solid, shake it and hold it close to your ear. If there's anything happening in there it's not ready!

What I'm looking for is ice cream without sugar-I'd use powdered erythritol instead. It's not that I'm afraid of getting fat, it's just that if I'm going to be eating a lot of ice cream, I'd prefer that there weren't sugar in it.
That said, I'd be wanting to imitate Haagen-Dazs-type ice creams as far as possible . . . is that going to be doable with this machine, or are ALL home ice cream makers going to be unable to imitate the big commercial ice creams? For instance, if I wanted to somehow do a strawberry-almond ice cream with real almond and real strawberries, is that going to be possible?
I'm an excellent cook with lots of experience with complex recipes so that's not the problem. The tool is the problem, and I know **nothing** about home-made ice cream.
Thanks in advance for any help . . .

Sorry that this insight comes two months late!
Yeah while I think this is a great beginner machine, there are some flaws I’m beginning to notice. If the bowl doesn’t get cold enough, the ice crystals won’t form before you start to whip the cream - this results in a slightly fatty film in your mouth even after it’s frozen.
If you really want to reach pinnacle ice cream making, might I suggest one of those machines with built in cooling in it? Keeps everything cooler and should result in a smoother ice cream!
Just a couple of thoughts 🤷🏻‍♂️
