    I think homemade ice cream is better than store bought. And homemade is richer than store bought

    Its good that she mentioned stabilizers. Although, it will eventually change, I mean the perspective of what stablizers mean to regular people. Locust Bean Gum and Guar Gum are actually natural aswell. They come from plants. Actually 95% of emulsifiers and stabilizers come from plants and animales directly. And they do no more damage than any of the vegetables and fruits we usually eat. Also they are used in a extremely low dosage, from 2g to 5g per 1 kg of mix, as they have really strong effects, that when used too much of it, it becomes a little chewy and hard. Having said that, I would say that they are not really neccesary for domestic use, as the main objetive for those, beyond the texture itself, is to preserve the ice cream in better shape and for longer time, both when getting freezed and when getting warm to not melt so fast

    I have the Cuisinart ice cream maker with bowl. I have the ice cream container like yours and also put saran wrap on top as you are doing.. I made chocolate, strawberry and orange sherbet. I make ice cream all of the time.

    Ice-cream looked delicious!!! When I was a kid, we made ice-cream from one of those wooden crack ice makers. It was fun cracking and waiting for the delicious outcome. I miss those times. Enjoyed your video! Thanks!!!!

      Splenda Granulated claims to be a 1:1 ratio up to 1 1/4 cups of sugar. Since our recipe is 3/4 cup, this should work. I don't use Splenda much, so I can't confirm how good it is to bake with or make desserts.

    Just an FYI, warm water before scooping helps release the ice cream. I would also heat the cream, sugar and milk to dissolve the sugar for a less gritty feel. Then cool it and add the strawberries.

      In the battle to make something close to commercial ice icream, I tried this, and yes it seemed to prevent ice crystal formation to some degree.

      If all else fails, adding a little vodka directly into the consumer will ensure the texture of the ice cream is not noticed. Oh ya you can add some to the ice cream too if ya want.

      Thanks Carolyn. Yeah, we wanted some flavor. Too easy to have vanilla ice cream with a chunk or two of strawberries. We wanted the stuff to be really pink (flavor) and have chunks for more flavor. a lot like our strawberry jam.

    Great job. Interesting when I heard the "allergic to dairy" I was thinking hmm maybe she could use one of those alternatives such as almond milk with a bean gum (available at Walmart)...then you commented that you didn't like them.One alternative might be the modified corn starch sold under the Sure Jel name, combined with a milk alternative.

    I have this ice-cream machine and love it. I also have that ice-cream container and the matching ice-cream scoop. I haven't made any in awhile but I usually buy a mix and use that. I'm going to have to try your way! Looks very good Queen of Mixers!

    Amy, what is better- an ice cream attachment for Kitchenaid or a separate machine like this Cuisinart? I already have a Kitchenaid mixer, and I'm not sure if it's necessary to add another kitchen appliance.

      Hi I Lash! I've never used the ice cream attachment for the KitchenAid mixer. One downside of it is you have to freeze the bowl. This Cuisinart has a compressor so you do not need to plan ahead before making a batch...and you can make multiple batches. I really like it so far!

      We're researching. Carrageaan is downright nasty, but it helps almond milk. But almond milk is still too thin. We're going to try cashew milk and some form of coconut milk to see what has enough fat to not be like ice milk.

    Is it possible that you’re allergic only to Casein A1/A2 dairy (which many people are, thinking they are lactose intolerant), and not Casein A2 dairy. According to Dr. Gundry, most of the people coming into his clinic who think they’re lactose intolerant, he tells them about A2 milk and they do perfectly fine with it. Just a thought! Thanks for this video!!

      I am allergic to milk protein and not lactose intolerant. It makes my throat swell up and I get a really bad upper respiratory problems.

      @@AmyLearnsToCook - Understand. Still, the two milk proteins are Casein A1/A2 protein and Casein A2 protein-very different! Gundry doesn’t diagnose those patients as “lactose intolerant” either. He says it’s about the two proteins, and suggests A2-amazing results! Worth a try? All the best!

      It mainly makes softer ice cream. You have to then put it in the freezer.

      Heavy cream has more fat contents in it, like 30 to 35% more fat then just regular whipping cream.
      Suggestion...go online & read/research the the difference.

      The more fat in your cream, the better. Makes for denser ice cream. We have some commercial ice cream that is 'diet' ice cream and isn't that thick.

    Would you by any chance be able to get a hold of Bosch OptiMUM or Bosch MUM5? Those models are very popular in Europe, and it would be really nice to see how they compare with something like KE Artisan or classic.

      Only if they are available in US due to electricity requirements. Way too expensive to convert 220v down to 110v with an external transformer.

    This looks delicious, Amy. Your Cuisinart freezer did a great job. It's a shame you can't enjoy this, but would a version made of almond milk or coconut milk work? I know it wouldn't be as rich but maybe there are recipes online that might be suitable. Thanks for sharing this!

      I've tried almond and coconut milk before, and it came out more like ice milk. I think it doesn't have enough fat. Next time I will try goat milk.

      We're experimenting with non-dairy options. Walmart has some Silk non-dairy whipping cream. So we'll see what it does. We have coconut milk but haven't tried it. Almond milk is like dionnest said. We also tried some without carrageaan because that stuff is kinda nasty, and it makes the stuff even thinner. So it's a learning curve to get something that doesn't taste like coconuts and do its job.

    I recently saw 'oat milk' ice cream in the supermarket. Couldn't you make this ice cream with oat milk, or soy milk or almond milk? Then you could be in ice cream heaven. For the cream you could use 'cool whip' non dairy creamer - provided it does not contain milk. I like to add whipped cream to my ice cream while it creams so it does not freeze as hard as a brick.

      Amy is allergic to dairy, thus is interested in making something. But there's lots of research because not all nut milks have enough fat and some thickeners are also upsetting to the stomach and/or potential cancer risks. Other fats like coconut milk or cream of coconut obviously have a coconut flavor. So we need to try a variety of non-dairy fats to see which one is decent tasting. We have been avoiding the obvious by just making sorbet aka frozen fruit puree.

    Your not the only one but why do some say 1 half a cup of whole milk. I would say a 1/2 cup of whole milk. Maybe it's just me but I could see where someone could think you were saying 1 1/2 cups of milk.

      It might depend on how sweet the strawberries or other fruit you use is. Sometimes the most perfect looking fruit is not that sweet.
