    • frozen Caribbean root vegetables (boiled in heavily salted water)
    • 2 green, unripe bananas

    I live in a place where the ingrdients are hard to come by (California), but i’m on a 5 week trip here in PR these days. I’ve tried this twice so far, and it’s been a success each time!     Where do you find the green cooking bananas? I only find plantains in the states

    Instead of using salt fish can I use cod? I know it’s different but it’s the only thing I have.

      Great question! And yes! I have used it! Prepare it the same way - boil it for a bit and then drain it well. This will dehydrate it. Then, follow the regular bacalao encebollado instructions. Fish is made up mostly of water, therefore, if you don’t boil it beforehand, all that water will turn your dish into a stew. I know this from experience. 🥲😂 Hope this helps!

      Cod fish is the traditional fish used in Puerto Rico for Bacalao. In fact, I’ve never heard of any other fish and am pretty sure the direct translation of salted cod fish both there and in Spain is “bacalao”.
