  • Como Hacer el MEJOR Bacalao Guisado con Viandas | Puerto Rican Cod FIsh Stew
    Bacalao Guisado con Viandas is a traditional Puerto Rican dish that features salted codfish stewed with root vegetables in a flavorful tomato-based sauce. This dish is hearty, comforting, and full of delicious flavors that will transport you to the Caribbean.
    To make this recipe, you will need salted codfish, root vegetables such as yucca, sweet potato, and green plantains, onions, bell peppers, garlic, tomato sauce, olives, capers, and a blend of spices such as cumin, oregano, and bay leaves. First, Rinse your salted cod fish really good. Then in a pot, boil the root vegetables and salted cod fish together until the fish tender. Remove fish from the pot and continued to cook root vegetables until they are tender, shredded codfish and put aside.
    Next, sauté the onions, bell peppers, and garlic or sofrito in a large pot until they are soft and fragrant. Add the tomato sauce, olives, capers, and spices to the pot, and then add the shredded codfish and enough water to cover the ingredients. Let the mixture simmer until the codfish is cooked through and the flavors have melded together. Serve the Bacalao Guisado con Viandas hot, garnished with chopped cilantro or green onions for a pop of freshness.
    This recipe is a delicious and satisfying way to enjoy the flavors of Puerto Rican cuisine, and it's perfect for a family dinner or a special occasion. The combination of tender codfish, savory vegetables, and flavorful spices is sure to please everyone at the table, while the root vegetables add a unique and delicious twist to this classic dish.

    See now I'm Portuguese and we eat dry codfish like that too we but it in water overnight and then cook it with potatoes 🥔 boiled dish... sooooo so good

      That sounds great!!! in Puerto Rico we do a dish call Gazpacho de Bacalao which we also soak the dried cod fish overnight and then mix it with other ingredients.     Girl you sound just like my tia lol you even sound like you have her personality. We originally from Hollywood Puerto Rico currently living in Orlando FL now. I absolutely love this dish even though my mom doesn’t make it. I wanna start making it for my kids tho.

    How long does it take to cook Bacalo to cook with all the ingredients?

      After you boiled the bacalao, pull it apart, add the ingredients to the frying pan and cook everything together for at least 15 to 20 minutes. Please watch the video where I explain everything. Have a good day.

    So, boil the bacalao until it's not salty then save the salty water for the viandas...am I right? Some people boil the bacalao changing the water about three times to remove the salt. This is after leaving it soaking in water overnight.

      Good afternoon Eve, thank you for your question? No I rinse the bacalao really good or I let it seat in water for a couple of hours before cooking; then I boil the bacalao together with the vianda. When you cook the vianda together with the bacalao, I promise you it gives the vianda such an awesome flavor.     Please if you could do it as soon as possible I really would to make some Puerto Rican bacalao which is not going to be the real Bacalao because I don’t think they sell it in Florida please list all the ingredients were more time I will print it

      Olive oil, achoite oil, sazon, garlic and onion powder, slice onions, dice bell pepper, sofrito (onions, bell pepper, garlic, cilantro) , whole oregano, chile pepper sauce, tomatoes sauce, and cilantro. I hope this list help….. Also you can find this bacalao in Florida at the BRAVO SUPERMARKET…….. Enjoy 😊

    There are actually THREE types of Yautia “Taro root”, white, purple and yellow, just happens that the yellow is not as known in PR.

      Hello G knight and thank you for stopping by..... To finish the bacalao in the tomatoes sauce I added about 10 - 12 ounces of water but it all depends on the amount of fish you are cooking... So just start with a cup of water and take it from there, enjoy..... Have a wonderful day 😊
