How to Make & Store Authentic Puerto Rican Sofrito - Mari's Cooking

  • In this video, I walk you step-by-step on how to make and properly store authentic Puerto Rican sofrito.
    Ingredients:
    • 1.5 lbs Ajíes Dulces
    • 1 Bundle Recao/Culantro (spiny coriander Leaves) - substitute extra cilantro if you can’t these.
    • 1-2 Bundles Cilantro, Leaves and Stems
    • 1lb Multi-Colored Peppers
    • 1 Green Bell Pepper
    • 4 Large Bulbs Garlic
    • 3 Large Onions (2 small ones in place of 1 large)
    • Olive oil, a little in between batches for blending
    • White Vinegar for washing veggies

      Hi. I’m New to your Channel. How Many Servings with the amount of ingredients you Made ? Could you possibly Share the amount that you’re using ? I would kindly appreciate it . I love Puerto Rican food, but sometimes When I make it I don’t feel I have enough flavors in either my rice or the beans & I just need to make my own ingredients to get the full Flavors.     I just happened upon you yesterday. Making your roasted chicken thighs tonight. Watching this video made me cry. This is how my Dad and my Titi’s taught me to make sofrito. They are all in heaven now. I keep them alive through their recipes.
    What’s funny is, even though I’m in Central Florida I can’t find Aji Dulces that are not full of mold. I’ve been to every ethic market. And it’s not the same without those peppers.
    Thank you for inspiring me and bringing what feels like family to me on YT.

      Blond hair, blue eyed from Pennsylvania. So I don’t look PR at all even though I favor my Father. But I can cook the food. I’m so thankful my Dad and my Aunt’s too the time with me to teach me because I’m passing this love of my heritage to my children.
      Your channel is so simple and authentic. It feels like home.

    I used to store sofrito in cubes. I should probably get back to that. Nice job. I wish i could find aji though. I live in VA.

    The vinegar also neutralizes pesticides.....I clean the same, but I also add baking soda, which reacts with the vinegar to give an extra cleaning "punch". I just came across your vids...THANKS for the content!!

    I learned how to make Jamaican green seasoning & now I know how to make Sofrito. I freeze my Jamaican green seasoning just like this. I'm excited to make Sofrito. Do you add other seasonings to it or just as is? Thank you for this video & recipe

    Mari, good afternoon! Great recipe! Where can I find ajies dulces? The ones that they have at Walmart and Publix do not look the same as the ones in your video.

      The look will vary! Unfortunately, I wouldn’t know where to find them unless you live in an area with a high population of Puerto Ricans. 😣 However, if you have a green thumb, they do sell the seeds online and they’re pretty easy to grow!

    How long do you soak everything in vengar and do you mix the vinegar with water? Your recipe is the original Puerto Rican sofrito for sure. Thank you!

      Hi! Yes, these mini, sweet Caribbean peppers are pretty hard to find if you live in the States! Luckily, I do have a basic Sofrito recipe with easy to find ingredients:

    ❤ have you ever used “culantro” it looks sort of like dandelion leaves. Not cilantro - I did not misspell that. Two totally different things but it’s hard to find.
    My neighbor/friend is Puerto Rican and when she makes Sofrito she goes looking for it. She can’t always find it but here in Texas she gets it at fiesta market

      Yes, this recipe includes culantro! It also goes by recao, and it definitely can be tricky to find in the States. I heard that Asian markets sell it, and it goes by “spiny coriander” or “sawtooth coriander”.

      I wrote that before I watched the whole video. It popped into my head to make Puerto Rican beans because every time I go to visit I’ve moved away since she makes me that and that’s the magic ingredient. The Sofrito the stuff we buy in the grocery stores is not really the same and it’s always red. Hers was always green.

      I actually found the seeds and the plants that are kind of pricey on Amazon to have them delivered and I just thought of that in the last few minutes I was going to surprise her with some of them that’s always the ingredient that’s hard to find

      @@KCypress Nice! I also want to grow them myself too. Have you looked for the seeds on Etsy? I’ve seen seeds for Caribbean Ají dulce on there! Yeah, the shelf-stable sofrito is not the same, but you can mix it with the green jar that is labeled, “recaito.” 🙏🏽

    One last question, how long do you leave them in the ice trays before you take them out?

      So, I usually just leave them in the freezer overnight and pop them out in the morning! Not sure exactly how long it takes to freeze.

    AM NEW to cooking, so directions, in print, that I can follow would be most helpful.

      Given that this recipe is given in a video format, providing a printable version would yield difficult. I suggest copying/pasting the ingredients provided in the description bow onto a Word document, followed by typing out the directions as you follow along to the video.
      More conveniently, I’m sure there is a printable version on a Puerto Rican website if you do a Google search. 😊

    Now that I moved to an area that’s not as diverse in population I can’t find my ingredients for Sofrito. I’m gonna have to use cilantro because I don’t find the culantro here. Also can’t find the small sweet peppers. Can I just use regular peppers? Thanks for sharing.🙏🏽😋

      @@marirod70 I think your confusing authentic sofrito for Goya’s jarred “sofrito” that is tomato-based.
      Recaíto is just blended cilantro (spiny coriander).

      Try a looking in a grocery store that’s known to sell Puerto Rican/Caribbean produce! If that’s not possible, you can make the sofrito without them, and substitute with extra bell peppers or cubanelle peppers. 😊

      Yes, some will add their own special touch! Since oregano is a common spice within our dishes, it makes sense! I may just do that next time. 😌

      Y un chin vinagre..Thast me..pero el.oregano es bueno.

      Hi Fatima! Unfortunately, parsley will not work since cilantro is the essence of Sofrito. I suggest using less cilantro - like 1/2 - 1 bunch, and keep everything else the same. 🙏🏽 Also, keep in mind that cooking with traditional Sofrito will not cause the food to have a strong cilantro flavor.
