Thanks Dr. Li, especially for challenging the myth about smoke point. I am an olive oil producer in the Sacramento Valley of California, and I have a couple of comments. First of all, the polyphenol content does not particularly depend on the variety of olive; the main variables are fruit maturity and stress. You can make an oil with a very high polyphenol content from olives if they are harvested green in October. Come back to the same tree in January when the fruit is black and ripe and it will make an oil low in polyphenols. The other main factor is stress. Many plants respond to stress by making secondary compounds--polyphenols, alkaloids, terpenes, etc. For an olive tree, stress usually is lack of water. Trees that are heavily irrigated will make an oil with low polyphenol content. I irrigate sparingly through the summer, and end irrigation in August so that during September the fruit is building up polyphenols. Most olive groves are a mix of varieties; this insures good pollination and good fruiting. Of course it is possible to make a monovarietal oil from a diverse grove, but there is nothing wrong with blends. I grow 16 varieties of olives; I usually make two or three monovarietal oils (Taggiasca, Frantoio, Coratina), and the rest of the fruit is blended.

It amazes me that there is evidently a body of people who claim that the healthiest way to eat is 'oil free', and yet I see them merrily squirting all manner of shop-bought sauces into their recipes, or serving beautiful plant burgers in a crappy white bun 🤪. If they stopped demonising healthy oils like EVOO, and paid more attention to avoiding the array of additives in their sauces and white refined bread, I'd be more convinced by their healthy eating credentials!
I agree. Many low fat or fat free products are full of ultra processed additives which are very harmful to health. I'm not medically trained , but I've heard and seen enough evidence to know that healthy fats are essential in a balanced diet.

I watch a large number of videos about cooking - often vegan cooking - as I am dairy intolerant, and a high proportion of my diet is plant based.
