Great process and well shot, personally if I’m making a pocket like this, I’ll use a super skinny double sided tape on the stitch line to hold it down.

Or you can just get a really cheap roll of removable double sided tape and tape the pocket down while punching out the holes. I’ve tried your method and the leather shifted when removing the stitching chisels which happens sometimes. Tape prevents this. Just an FYI. You can get double sided tape at most leather supply or craft stores.

why not use double-sided adhesive tape to secure in place before punching?

I don’t use glue no more. I use basting tape. It’s 5mm wide double sided tape and very effective.

Why have that extra stitch-hole at the top of each side? I was trying to ask before you punched each side, but you couldn't hear me.
So the corners don’t lift or curl.
