    Some history on the frying pan.
    A frying pan, frypan, or skillet is a flat-bottomed pan used for frying, searing, and browning foods. It is typically 20 to 30 cm (8 to 12 in) in diameter with relatively low sides that flare outwards, a long handle, and no lid. Larger pans may have a small grab handle opposite the main handle. A pan of similar dimensions, but with less flared, more vertical sides, and often with a lid, is called a sauté pan. While a sauté pan can be used as a frying pan, it is designed for lower heat cooking methods, namely sautéing.
    Copper frying pans were used in ancient Mesopotamia. Frying pans were also known in ancient Greece where they were called tagēnon (Greek: τάγηνον) and Rome, where they were called patella or Cartago. The word pan derives from the Old English Panna. Before the introduction of the kitchen stove in the mid-19th century, a commonly used cast-iron cooking pan called a 'spider' had a handle and three legs used to stand up in the coals and ashes of the fire. Cooking pots and pans with legless, flat bottoms were designed when cooking stoves became popular; this period of the late 19th century saw the introduction of the flat cast-iron skillet.
    Traditionally, frying pans were made of cast iron, carbon steel, or copper lined with tin, for their different qualities and properties. Copper pans are highly thermally conductive, making them useful for evenly sautéing. However, they are also highly reactive with most foods, so today a large number of copper pans are sold with a tin lining which can be replaced when it wears out. Cast iron pans are used because although they do not conduct heat very evenly, they do retain it quite well, making them useful for searing meats and vegetables. Carbon steel cookware is used because over time it can develop a highly nonstick patina of polymerized oil called seasoning useful for a cooking protein that is prone to stick, such as fish and eggs. While all of these materials are still commonly used in professional kitchens, many modern materials have supplanted them in the consumer market. Nowadays, most frying pans are now made from metals such as aluminum or stainless steel. The materials and construction methods used in modern frying pans vary greatly and some typical materials include:
    Aluminum or anodized aluminum
    Cast iron
    Copper
    Stainless steel
    Clad stainless steel with an aluminum or copper core
    A coating is sometimes applied to the surface of the pan to make it non-stick. Frying pans made from bare cast iron or carbon steel can also gain non-stick properties through seasoning and use.

    The combination of baking soda and vinegar to clean dirt does not work because bicarbonate is alkaline and vinegar is acidic, so they neutralize each other and do not produce any favorable results‼

      True, I always wonder why people do this. I know bicarbonate on its own is a mild abrasive and maybe the mechanical action of the bubbles can loosen the dirt. Scrubbing pad is likely the most effective part of that treatment.

      This is a frypan that was sold as "never stick",9l bring it back and have it resurfaced.Unfortunately,never happened like that as they would "redesign" the pan and so the jigs in the factory didn't fit your "old" pan.
      You were then offered a new one at a reduction. CON,CON,CON.
      Good to see it could be done.

      @@AJRestoration You would not want to do that anyway. The raw material for that is rather toxic and not suitable outside a sealed, air free environment. Your seasoning looks great. Never saw it done before, but it looks like a good idea. Learned something about seasoning today! It is likely it is not done commercially is that it takes a lot of time and effort to do it, and would add significantly to the cost. Great for home use though, as it turned out looking great.

    Vinegar and baking soda are great for cleaning, but not together. They cancel each other out and end up just producing co2, water and salt. Try submerging the part in lye next time when cleaning something aluminum, as long as the material isn't very thin. It essentially boils off a layer of aluminum atoms at the top, removing anything attached to it in the process.

    was this originally a non stick (Teflon) pan? if it was, you should throw it out unless you know 100% you were able to remove all of the chemicals from the Teflon coating. those chemicals are carcinogenic.

      Quite interesting this myth still holds up... Ptfe or commonly known as Teflon is biocompatible, your body does not absorb or interact with it, therefore it is used for implants and components of piercings and such.

    Aside from the excellent job on the pan, I always appreciate it when the old wood is preserved. There’s so much character in that old wood and it will last forever if it is treated correctly. Bravo.

    Great job on the restoration. Aluminum is really not the best surface for cooking in terms of heat distribution but more so for health reasons. Wondering if instead of putting teflon on, if there's a way to enamel the surface as with cast iron cookware (Le Creuset, Staub, etc.)? Thanks for sharing.

    • @AJRestoration
      @AJRestoration  2 ปีที่แล้ว

      I was looking into enameling or re applying the teflon. I just could not find a local source for the teflon or enameling. So I tried seasoning the pan. It did not work as good as I had hoped.

      Aluminum is great at heat distribution I don't know where you got that info but it is a cumulative heavy metal, especially dangerous for kids. recycling it would be better imo

    Спасибо за интересное видео. Но по моему мнению сковороды из алюминия (дюраля, силумина, олова, меди и стали) это очень плохое решение. Внимания заслуживает только чугун. С уважением.

      @svetlanaziatnina1514 2 ปีที่แล้ว +2

      Для яичницы - нормально, для серьезной готовки - про чугун согласна. И если уж заморочился с реставрацией - надо было привести в порядок дно (отполировать, нанести концентрическую насечку, сменить материал рукоятки) и вообще не начинать чистку с соды и прочей лабуды :)

      @@svetlanaziatnina1514 защитное покрытие которое получается от запекания растительного масла на цветных металлах очень плохо держится и может даже от перепада температуры откалываться . И тогда еда снова начнет пригорать....

    AJ restaurations - You should try putting the item in a plasticbag with about 10 cl ammonia hydroxide and close the bag tight for 24 hours. After that you can cleam the item 100%
