    Way over complicated dish, I prefer a nice piece of brioche toasted, a nice confit duck on top, with some cider cream sauce, golden raisins, dates, thyme, simple and amazing.

    How many ducks would they cook using that much fat before starting a new one? I can’t imagine that they would throw out that much fat every two ducks

      I'm assuming that they would reuse the duck fat several times until they've trimmed enough for a new batch?

    This is absurd. 20 different pans, deep fryers, strainers, a million ingredients, takes 2 or 3 days to make it.
