I think for the character in question specifically, It might be more about (though still with that other stuff layered on top of it) practicality as a bounty hunter and often lone-agent. A droid could easily be hacked from a distance to suddenly turn on him or sabotage him in some way. They could be used to discreetly download the flight log of his ship or implant a time bomb like virus on it. While organics he encounters are not likely to be any more trustworthy, He knows he can at least motivate an organic with payment or intimidation. That he can read their facial expressions and tone or wording one uses for tells that they're being dishonest. He has more of a chance at seeing betrayals coming with organics. And most of the threats they pose are direct and he can deal with those if it happens. It's the same reason secret service agents still use analog flip phones and pagers. Why good security has metal detectors in the forms of wands and gates. People can be more easily subversive with technology than without. Not letting droids do things on his behalf as much as is possible greatly limits the factors he has to keep in mind regarding safety and security.
My theory is that he hates droids bc his home village was on an separatist planet and clones took shelter there knowing the separatists would't endanger their own civilians. But then a separatist leader were so confident in the super battle droids accuracy and inteligence thinking they would hit the clones leaving the civilians unharmed sent them in to kill the clones. But something went wrong and the command to kill only clones was misinterpreted in the droids coding and they started firing at the civilians wiping out not just the clones but the entire village. The mandalorian blames his familys death on the use of droid soldiers since real soldiers wouldn't have harmed their own people.
Star Wars Galaxy is a macroprojection of our world were you don't have to feel bad when watching because it's not inflicting you personally even though you're in the very same position. Politics and social life is what made me like the stuff that was produced after a new hope
