Baked Smothered Chicken

In today’s video I show you a new recipe for me. I’m sure a lot of you have been browning your meats before making smothered chicken or any other meats but I’ve just discovered this with chicken.
I couldn’t believe how delicious my Baked Smothered Chicken turned out. This is the ultimate recipe that I will use from now on for a decadent delicious meal.
In this video I used double the chicken so if you want to cook a single batch just use one pound of legs and one pound of thighs which will equal 2 pounds.
All of the other ingredients you can adjust as you go when it comes to the amount of seasonings that you use and the amount of gravy that you make.
Baked Smothered Chicken:
2 Pounds Chicken Thighs, skin on
2 Pounds Chicken Legs, skin on
1 Quart Chicken Broth
4 Ribs Celery, chopped
1 Large Onion, sliced in rings
4 Tablespoons Olive Oil
1/2 Stick Avocado Oil Butter
1/2 Cup Self Rising Flour
Slap Ya Mama Seasoning
Goya Adobo
Granulated Garlic
Granulated Onion
Smoked Paprika
Black Pepper
Wash and clean chicken then season with the seasonings listed above or choose your own.
Heat cast iron skillet. Once good and hot add avocado oil. Place the chicken in the pan skin side down.
Brown on both sides cooking approximately 5 to seven minutes on each side.
In a roaster pan layer the onions and celery.
Once the chicken is browned on both sides place it on top of the vegetables in the roaster pan. Add the chicken broth to the roaster pan trying not to wash the seasonings off of the chicken with the broth.
Cover and bake at 350 degrees Fahrenheit for 30 minutes.
Once 30 minutes are up take the chicken out of the oven.
Drain the broth from the roasting pan to use for your gravy.
Turn the skillet back on to heat the drippings that you have from browning the chicken.
Add 1/2 of a stick of plant based butter.
Once the butter is melted and everything is good and hot add 1/2 cup of self rising flour. Using a whisk, whisk the flour in the pan and cook it until it has browned to the color of your liking. Do not have the burner too high. Medium heat will do.
Do not burn.
This should take around 5 to 8 minutes.
Add the broth from the baked chicken to make your gravy. Add the broth and little at a time giving the gravy time to thicken between each addition.
Once the gravy is ready pour over the chicken and vegetables in the roasting pan.
Bake uncovered for an additional 45 minutes.
Serve over rice and enjoy 😉

@@JackiesSouthernSoul I'm just about 80, used to work in a poultry plant and never washed chicken, other than rinsing out the inside of frozen whole bird. Must be a cultural thing?
This brought back so many loving memories of my sweet mother‘s cooking in Atlanta in the 70’s.I literally was emotional watching you and then seeing the young girls at the table, Praying with you made this feel like home as I watched. This is a great recipe. I usually add onion,celery, bell pepper , known as the trinity in Louisiana. Poultry seasoning and thyme leaves. I also sprinkle fresh garlic all across the top of the chicken. Throw in a bay leaf or two. I fry my chicken with a little flour and my gravy comes from that flour when the stock is added. Tried This with pork chops yesterday ( didn't have chicken didn't want to drive to the grocery store lol), added some sliced mushrooms to the pan with the onion, it was amazing.

That looks so good I could almost smell it! Your girls are lovely, and natural. Not making a huge deal, just tasting and eating and enjoying. I will try this sometime when I'm feeling ambitious about cooking. You make it look easy, but in reality it is quite a bit of time to prepare. But if we want something that looks so good, have to put in the time and effort. Thanks for sharing this recipe!
When I make smothered chicken, I season it, and lightly dust it with flour. Then when I add my liquids it automatically makes a gravy. Your chicken looks delicious.

My Mom fried her chicken with a little flour and then put in oven to make gravy. All in one step then put oven on slow cook. She cooked her onions for faster over time.

I’ll have to try and let you know. I know I wouldn’t try it with center cut pork chops because I think they might be tough and you’d definitely have to adjust the cooking time.
I have some pork steaks in my freezer so I’ll give it a try some this week with then and post how they turned out. Stay posted😉🙏

Looks delicious, no doubt it was yummy , but you could have saved yourself a few steps by adding flour to your chicken before frying.
Won’t taste the same without the browning hun.
Yes you will get thickened gravy by flouring the chicken, everyone knows this duh.
It’s all in the browning hun. That’s what sets this recipe apart from your regular flour the chicken before and be done with it recipes. Not taking shortcuts with this recipe the way some lazy cooks do😉👍🏼

Your channel came across my feed just now. Question: why not make the gravy, pour it over the chicken, not do an extra step; then bake it in the oven. Just make the gravy thicker & your avocado oil( that you’re using) is healthy, as is your broth. Then one cook with the lid on, is sufficient. Just saying

FYI: Those are not chicken legs. They are drumsticks. A chicken leg is composed of two parts: The thigh and the drumstick.
FYI: Dear those what you are referring to is called a leg QUARTER, although the two pieces together is the whole leg of the chicken. When they are sold together in grocery stores the piece is called leg quarters.
