MSG was invented by a Japanese food company Ajinomoto, and has been widely used in Japan longer than anywhere else in the world. Yet, Japanese have one of the longest life expectancy! If you go to a supermarket in Japan, you'll find insane amount of processed foods, all contain MSG. Having said that, they don't eat nearly as much foods as the Americans do. Bottom line is, its all about moderation. If you eat too much of something, it'll harm you. Heck, even drinking too much water can kill you.
Never had any symptoms after eating Chinese food, had a bad headache and bad tummy after consuming KFC food however.(Don’t eat a lot of chips and crisps) Could msg be the culprit??
No its not about that, MSG was really invented in Japan, to give food the umami flavour(especially a war thing), the problem with MSG that is dangerous, if its contaminated with bacteria, which usually gives you the problems such as headaches, diarrhea and so on. And seeing that in China hygiene is not really their strongest point, there is a reason to worry.

In my family (Vietnamese) it translates to "sweet powder/flavouring powder" in think, so it sounds rather innocent. Personally MSG leaves my mouth a bit dry after comsuming it.

Okay, so first off, that's the "sell by" date. meaning, stores have to sell that food by a certain date otherwise it has to be thrown out.As long as you have the food properly refrigerated, you can still cook it past its "sell by" date. Can't remember exactly, but food is cheaper to buy when it's near that date. Second of all, if they had sold bad spoiled food, they'd not make you feel hungry, but physically sick.
My sister who is a bit of a health food freak jumped on the MSG is bad bandwagon, she insists eating Chinese food makes her ill, she can taste something not right and very firmly lays the blame right at the door of MSG. What amuses me is she has eaten tons of food cooked by me over the years and usually only has good things to say, one day I will tell her that I use MSG in most things I cook just like salt and pepper.
If you cook your own food, you dont have to add much. Just a pinch of the stuff is enough to give your food a pretty good edge. You wouldnt put spoons of salt into your food, same applies to msg

Be careful with that, it's still a sodium salt. Too much sodium can be really harmful. I personally recommend halving the salt content of the food you cook and replacing the missing salt with MSG. The sodium ion of MSG will add some saltiness back, while the glutamate ion should cover the remaining lack of saltiness. In both common salt and MSG, it's the sodium part we need to be careful with.

You can dry it with freeze dryer (it a machine that used in food lab) and grind it to powder... So the water is reduced and the glutamic acid is concentrated.. Another one, how meat and fish is so tasty, even without MSG.. Because they have their own protein molecule that is inosinat (I don't know the english for inosinat, maybe inosinate🤔) that have similiar taste with glutamate... And many chemistry in molecular gastronomy.. It based on what I saw from my mother's researches and books since kid until now.. If you study in food processing departement, you will learn about those food chemistry too...

And most of the time it's not even a measured amount, they just 'throw' MSG in so you get hooked on the food. Your tongue can't pick up MSG as clearly as actual Salt, so as a result you end up over consuming this version of 'salt' without realizing it.
Most fast food is trash. Most Chinese restaurants are also trash, I'd rather pay 3 bucks more for homemade mushroom puree sauce or fermented soy beans cooked into my meal. Keep it traditional-traditional, not grandparents-jello-meat-vegtable-and-fruit-casserole-traditional.

I worked for more than 10 Chinese restaurants in the past 10 years in the US, every one of them claims their food is MSG free but ALL of them were using it. the weird part is during this 10 years I had never encounter anyone that had so call "Chinese restaurant syndrome", even for some people that says they are allergic to MSG but eating in the restaurants more than 3 times a week.

I’ve eaten MSG everyday since Filipino food cooked in my home is usually used. I don’t like using it all the time, but I haven’t had any negative effects. Just don’t use a lot of it (in a dish) from what I’ve been told, since it isn’t good for you.
Everything taken in excess certainly has a fatal consequence. There was an instance that our neighbor used it in putting down a rabid dog by feeding an excessive amount of MSG which instantly killed it. Once, another neighbor used a pocket-size vinegar and forcibly took it into the goat's mouth to swallow the liquid before it was slaughtered.
The worst I get from MSG is a lingering, unpleasant after taste but only if too much is used. If it's used in moderation in dishes, it really does enhance the flavour.

Those same foods have msg in it but instead of listing it as MSG in the ingredients they list it as numbers like 621 or any numbers between 622-626 or as "Glutamic acid" and even cheese has it naturally occuring.

The glutamate in MSG is bound in proteins, and is not released from meat unless through prolonged cooking, fermenting, or staying in your gut. Your body doesn't need slow-cooked meat. Your body doesn't need miso. But it tastes good, so we eat it. And anytime we talk about a food is bad for you, we should be talking about the largest amount that is safe to eat. In that sense, MSG is as bad for you as salt, in that we shouldn't be having more than a couple grams a day, which is a ridiculously large amount for MSG.

The reason people feel like crap after eating boxed Chinese food is because they're literally eating copious amounts of carbs, oils, and salts at one time. That being said, when I was little my mother purposely avoided food with MSG in it. I was not allowed to eat cheese puffs or Campbell's soup for this reason. Funnily enough, we ate a frick ton of Chinese food. And I do believe there are people who have a sensitivity to MSG just like some people can't eat a lot of salt or else they get headaches. My mother can't eat annatto which is a natural food coloring found in basically any orange food because it acts as a diorectic and dehydrates her so she gets serious migraines. What I'm basically trying to say is, just because a large group of people isn't affected by something doesn't mean some people aren't. I've also never heard Chinese food syndrome before today. So I wouldn't just assume anyone who is trying to avoid MSG is racist. I only say this because some people get bitter and will purposely feed someone who says they're allergic to certain things that food out of spite. Please don't do this. That it is all.

yep. I'm Chinese, but a lot of popular Chinese dishes aren't the healthiest things to eat, especially if you're ordering out. It's too salty and oily to eat too regularly.

Veganism can be unsafe if you don't take a basic multivitamin (+ mineral) supplement, since especially vitamin B12 is difficult to get from purely plant-based foods. For females, getting enough iron might be difficult as well, since plant-based iron (non-heme iron) is less bioavailable than animal (heme-bound) iron.
I've only heard in passing a couple times growing up that MSG was bad for you, but no one ever attached "racism" or a pointed finger at Chinese restaurants. Calling it "racism" sounds way too harsh for a guy who seemed to have some kind of food sensitivity to Chinese food and then some no-nothing scientists just ran with it.
My experience has been the same as the OP's. I did not know there was a strong association between MSG and Asian Cuisine. It may be different in other parts of the world, but where I grew up in the U.S. (northeastern part) the discussion about MSG didn't pull Asian Cuisine into it. I was diagnosed ADHD as a kid, but my parents didn't want me on meds. They did some research and put me on something they called the Feingold diet, which was supposed to help prevent the ADHD symptoms. MSG was one of the things I couldn't eat, along with some food colorings, added sugar, and other stuff I can't remember. I don't know if it helped the ADHD, but I suppose any healthy diet would help it.

I’m 27 years old and just recently my friend 28 died of colon cancer directly related to msg consumption 100% same thing as you his mum used msg everyday 3 meals a day he moved out around 23 and he really started depending on the msg. We grew up together and I always thought it was strange because in my culture we don’t even know what MSG was. Like I said not trying to be annoying and give you some sob story just keep it in mind you’ll figure out what’s up. Clearly genetics and a million and one variables come into play but I believe it was a trigger.

'Disclaimer' I am a Hong Konger born Chinese and lucky to have little enough knowledge on food, some call us as foodie First, MSG is not evil substance, it brings out and enhance the flavor in your dish. As this video said, some people do react like allergy towards MSG, but mostly all can't even tell there is MSG in their food. If you have a sensitive taste buds like me, you can tell whether MSG has been used or not. The worst case you likely have is a chef overused MSG in your food, as a result you feel thirsty almost right away; all you need is drink some water but sugary beverage works the best in this case. Second, I am glad this video bring out umami, this is the key whether your food will taste good or not which relate to how much ingredients you use to cook your food. Everyone know sole steam or boil food has no flavor in them, in order to make it delicious, you must add variety ingredients in it. Now here comes the umami, it can be broth/stock, aged meat marinated with seasoning and such. This is the BASIC TASTE of your food, then follow by adding sugar, salt, soya, spice. Third, then why use MSG? The question is whether the chef want to spend hours to make their umami or not, note that time is an luxury that restaurant never have enough of it. The more time they spend on preparing, the more cost their food will be, that explain why you never find MSG is being used in Michelin star restaurant. That is because they spend lots of time to perfect their umami. Have you wonder why food in most Chinese restaurant can be cook so fast, and here is the answer. That being said, if the waiter/waitress tell you the dish will take time to make, that means that food you order is likely MSG free. Btw, you can always ask them not to use MSG in your Chinese takeout, just don't expect the taste will be the same though. In conclusion, using MSG is never controversial but likely discrimination towards Chinese food ,or worst, or Chinese people. If you are paying the usual cost for your food in Chinese restaurant, don't expect MSG will not be used. On the other hand, if you happen to find out their food is MSG free, tell them how much you appreciate on their effort to make their food taste good. One last thing though, always call out those restaurant which pretend to be MSG free when they are not. (If you wonder how does overused MSG will feel like, put 1/4 tablespoon on your tongue. Once you start to feel your tongue numb and thirsty, that's the sensation you are looking for)

I'm a personal Chef and back in college I actually did a research paper on the Sigma of MSG which turns out to be ALL about RACISM! Back in the late '60s and early '70s, NYC Asian restaurants were starting to get more and more popular and sales started getting hirer and hirer. Some or I should say Most of course didn't like it. So secretly Non-Asian restaurant owners took Asian food to laboratories to find out what was in it. It was discovered that a form of salt MSG Monosodium L Glutamate enhanced the flavor of salt and made the food taste more savory. So we know what happens next?? Those Non-Asian restaurants started screaming MSG is bad for you just to make real Asian restaurants suffer. Unfortunately, the bad word of mouth, and also public bashing made sales drop, and made people scared to consume MSG. So Asian restaurants were forced to remove it from their cooking. That's why when you go to some Asian restaurants on the menu in bold lettering NO MSG. This is a shame because now after many years of research they have determined MSG is not harmful, or life-threatening. The scare campaign was actually a HATE campaign! There are many products out on the market that most consumers eat that have always contained MSG but they didn't mention those because they were trying to put Asian restaurants out of business. Today you can find MSG at/in KFC, Chick-fil-A, Campbell's soups, Doritos, Pringles, and a whole lot more!!! I use it in 90% of my cooking especially baking when salt is one of the ingredients. Really weird tip here, but we ALWAYS have some on hand around the house. Works wonders on taking away pains from insect stings (bees, yellow jackets, fire ants) you make a sort of paste with it by adding a lil bit of water, and put it on the sting/bite and it feels soooo much better.

In Thailand we also used a lot of MSG but we do not really want it in our food but not because of those racism syndrome. Yeah, it's because MSG is high in sodium, and high sodium content makes you thirsty because of some biochemistry stuff that I can't explain but you can google in like 5 seconds. So you are totally right about it making you thirsty and numb in your mouth - it's like salt, too, and we also all know that salt's really bad for you and make the same thing happen. Thailand's diet's a good bit more health-conscious than some other places, and you should continue with limiting your intake of any stuff that you shouldn't eat too much of. A little bit is good though, people kinda need sodium to like, function.

MSG was invented by a Japanese food company Ajinomoto, and has been widely used in Japan longer than anywhere else in the world. Yet, Japanese have one of the longest life expectancy! If you go to a supermarket in Japan, you'll find insane amount of processed foods, all contain MSG. Having said that, they don't eat nearly as much foods as the Americans do.
Bottom line is, its all about moderation. If you eat too much of something, it'll harm you. Heck, even drinking too much water can kill you.

Okay, so first off, that's the "sell by" date. meaning, stores have to sell that food by a certain date otherwise it has to be thrown out.As long as you have the food properly refrigerated, you can still cook it past its "sell by" date. Can't remember exactly, but food is cheaper to buy when it's near that date.

My sister who is a bit of a health food freak jumped on the MSG is bad bandwagon, she insists eating Chinese food makes her ill, she can taste something not right and very firmly lays the blame right at the door of MSG. What amuses me is she has eaten tons of food cooked by me over the years and usually only has good things to say, one day I will tell her that I use MSG in most things I cook just like salt and pepper.

We used to only sprinkle MSG in food. After seeing this video, I added more MSG in my cooking. And OH MY GOD, my family loves my cooking more.
Be careful with that, it's still a sodium salt. Too much sodium can be really harmful. I personally recommend halving the salt content of the food you cook and replacing the missing salt with MSG. The sodium ion of MSG will add some saltiness back, while the glutamate ion should cover the remaining lack of saltiness.
In both common salt and MSG, it's the sodium part we need to be careful with.

I worked for more than 10 Chinese restaurants in the past 10 years in the US, every one of them claims their food is MSG free but ALL of them were using it. the weird part is during this 10 years I had never encounter anyone that had so call "Chinese restaurant syndrome", even for some people that says they are allergic to MSG but eating in the restaurants more than 3 times a week.
that is because there are a lot of other sideefffects than high blood pressure................ depression, diabetes and anger problems is what it really causes.............. how many people do you know that are depressed? huh? try avoiding flavor enhancer for 1 month, you will see what i mean.

I’ve eaten MSG everyday since Filipino food cooked in my home is usually used. I don’t like using it all the time, but I haven’t had any negative effects. Just don’t use a lot of it (in a dish) from what I’ve been told, since it isn’t good for you.
Everything taken in excess certainly has a fatal consequence. There was an instance that our neighbor used it in putting down a rabid dog by feeding an excessive amount of MSG which instantly killed it. Once, another neighbor used a pocket-size vinegar and forcibly took it into the goat's mouth to swallow the liquid before it was slaughtered.
There is also the metabolism speed of dogs and other animals to take consideration with these super high dosages. Dont put misleading information.
The worst I get from MSG is a lingering, unpleasant after taste but only if too much is used. If it's used in moderation in dishes, it really does enhance the flavour.

The glutamate in MSG is bound in proteins, and is not released from meat unless through prolonged cooking, fermenting, or staying in your gut. Your body doesn't need slow-cooked meat. Your body doesn't need miso. But it tastes good, so we eat it. And anytime we talk about a food is bad for you, we should be talking about the largest amount that is safe to eat. In that sense, MSG is as bad for you as salt, in that we shouldn't be having more than a couple grams a day, which is a ridiculously large amount for MSG.

The reason people feel like crap after eating boxed Chinese food is because they're literally eating copious amounts of carbs, oils, and salts at one time. That being said, when I was little my mother purposely avoided food with MSG in it. I was not allowed to eat cheese puffs or Campbell's soup for this reason. Funnily enough, we ate a frick ton of Chinese food. And I do believe there are people who have a sensitivity to MSG just like some people can't eat a lot of salt or else they get headaches. My mother can't eat annatto which is a natural food coloring found in basically any orange food because it acts as a diorectic and dehydrates her so she gets serious migraines. What I'm basically trying to say is, just because a large group of people isn't affected by something doesn't mean some people aren't. I've also never heard Chinese food syndrome before today. So I wouldn't just assume anyone who is trying to avoid MSG is racist. I only say this because some people get bitter and will purposely feed someone who says they're allergic to certain things that food out of spite. Please don't do this. That it is all.

If, I consume a lot, and i mean a lot of MSG (not intentionally or anything but through others who cook using MSG, and alot of MSG) my whole arm feels like it's getting stabbed by needles all over, that acts like a numbing sensation but isn't at all. It hurts and that's why I avoid using MSG as much as possible!

yep. I'm Chinese, but a lot of popular Chinese dishes aren't the healthiest things to eat, especially if you're ordering out. It's too salty and oily to eat too regularly.
Even more likely, they eat some stuff like shrimp, having an allergic reaction, and because they dont eat it otherwise, they say its because of the chinese restaurant.

For females, getting enough iron might be difficult as well, since plant-based iron (non-heme iron) is less bioavailable than animal (heme-bound) iron.
I've only heard in passing a couple times growing up that MSG was bad for you, but no one ever attached "racism" or a pointed finger at Chinese restaurants. My experience has been the same as the OP's. I did not know there was a strong association between MSG and Asian Cuisine. It may be different in other parts of the world, but where I grew up in the U.S. (northeastern part) the discussion about MSG didn't pull Asian Cuisine into it.
I was diagnosed ADHD as a kid, but my parents didn't want me on meds. They did some research and put me on something they called the Feingold diet, which was supposed to help prevent the ADHD symptoms. MSG was one of the things I couldn't eat, along with some food colorings, added sugar, and other stuff I can't remember. I don't know if it helped the ADHD, but I suppose any healthy diet would help it.

I’m 27 years old and just recently my friend 28 died of colon cancer directly related to msg consumption 100% same thing as you his mum used msg everyday 3 meals a day he moved out around 23 and he really started depending on the msg. We grew up together and I always thought it was strange because in my culture we don’t even know what MSG was. 'Disclaimer' I am a Hong Konger born Chinese and lucky to have little enough knowledge on food, some call us as foodie
First, MSG is not evil substance, it brings out and enhance the flavor in your dish. As this video said, some people do react like allergy towards MSG, but mostly all can't even tell there is MSG in their food. If you have a sensitive taste buds like me, you can tell whether MSG has been used or not. The worst case you likely have is a chef overused MSG in your food, as a result you feel thirsty almost right away; all you need is drink some water but sugary beverage works the best in this case.
Second, I am glad this video bring out umami, this is the key whether your food will taste good or not which relate to how much ingredients you use to cook your food. Everyone know sole steam or boil food has no flavor in them, in order to make it delicious, you must add variety ingredients in it. Now here comes the umami, it can be broth/stock, aged meat marinated with seasoning and such. This is the BASIC TASTE of your food, then follow by adding sugar, salt, soya, spice.
Third, then why use MSG? The question is whether the chef want to spend hours to make their umami or not, note that time is an luxury that restaurant never have enough of it. The more time they spend on preparing, the more cost their food will be, that explain why you never find MSG is being used in Michelin star restaurant. That is because they spend lots of time to perfect their umami. Have you wonder why food in most Chinese restaurant can be cook so fast, and here is the answer. That being said, if the waiter/waitress tell you the dish will take time to make, that means that food you order is likely MSG free.

In conclusion, using MSG is never controversial but likely discrimination towards Chinese food ,or worst, or Chinese people. If you are paying the usual cost for your food in Chinese restaurant, don't expect MSG will not be used. On the other hand, if you happen to find out their food is MSG free, tell them how much you appreciate on their effort to make their food taste good. One last thing though, always call out those restaurant which pretend to be MSG free when they are not.

I'm a personal Chef and back in college I actually did a research paper on the Sigma of MSG which turns out to be ALL about RACISM! Back in the late '60s and early '70s, NYC Asian restaurants were starting to get more and more popular and sales started getting hirer and hirer. Some or I should say Most of course didn't like it. So secretly Non-Asian restaurant owners took Asian food to laboratories to find out what was in it. It was discovered that a form of salt MSG Monosodium L Glutamate enhanced the flavor of salt and made the food taste more savory. So we know what happens next?? Those Non-Asian restaurants started screaming MSG is bad for you just to make real Asian restaurants suffer. Unfortunately, the bad word of mouth, and also public bashing made sales drop, and made people scared to consume MSG. So Asian restaurants were forced to remove it from their cooking. That's why when you go to some Asian restaurants on the menu in bold lettering NO MSG. This is a shame because now after many years of research they have determined MSG is not harmful, or life-threatening. The scare campaign was actually a HATE campaign! There are many products out on the market that most consumers eat that have always contained MSG but they didn't mention those because they were trying to put Asian restaurants out of business. Today you can find MSG at/in KFC, Chick-fil-A, Campbell's soups, Doritos, Pringles, and a whole lot more!!! I use it in 90% of my cooking especially baking when salt is one of the ingredients. Really weird tip here, but we ALWAYS have some on hand around the house. Works wonders on taking away pains from insect stings (bees, yellow jackets, fire ants) you make a sort of paste with it by adding a lil bit of water, and put it on the sting/bite and it feels soooo much better.

In Thailand we also used a lot of MSG but we do not really want it in our food but not because of those racism syndrome. In Thailand, we believe consume MSG a lot make you hair fall and you don't want to be ball right? I'm not sure if there's any fact behind it but since there's a lot in the other food and product if you can choose why don't just reduce it. You will notice if you eat MSG, you become thirsty and feel num in your mouth than normal. I guess if you drink enough water it will be fine, I think.

Yeah, it's because MSG is high in sodium, and high sodium content makes you thirsty because of some biochemistry stuff that I can't explain but you can google in like 5 seconds. So you are totally right about it making you thirsty and numb in your mouth - it's like salt, too, and we also all know that salt's really bad for you and make the same thing happen. Thailand's diet's a good bit more health-conscious than some other places, and you should continue with limiting your intake of any stuff that you shouldn't eat too much of. A little bit is good though, people kinda need sodium to like, function.
