    My grandparents used MSG in their cooking and they lived a healthy life and died in their 90s but have to say they didn't consume sugar much in their diet. I think sugar is worst than MSG.

    I remember watching an experiment about MSG. They didn't tell people that it had MSG and no "side effects" were reported. But when they said the food had MSG even though it didn't, they said they suddenly had "side effects". It goes to show that those "warnings" against MSG really influenced a lot of people.

      Just because the placebo effect can happen, doesn't prove that MSG is safe. Some people do get bad effects from MSG.

      @@dutchmilk Everything in abnormal amount is unhealthy. A teaspoon of MSG in 2~3 litre of brooth with 1 kg of meat can save your cooking time by a lot without ruining the meat.

    I heard a story from a man 30 years older than me regarding the MSG. He wouldn’t eat any food containing MSG because he is afraid to have a heart attack. During the Vietnam war, every North Vietnamese soldier carry a kg of MSG to the South for fighting the war. The MSG serves two purposes. One for enhancing the lousy food and other to stop the bleeding from the bullet wounds. MSG was used to fill the cavity and it would stop the bleeding.

    "The dosage makes a poison" is what our chemistry teacher always used to say. Salt is great to make food taste better and we do need it in our diet. However consuming too much of it or to consume it without actual food would of course be poisonous. Same with almost everything. You'd also be fine ingesting actual poison as long as the amount is small enough.

      chinese resturant syndrome... is when they mix up the msg with salt, and you end up with a super high dosage of salt.
      just stay away from the crappy resturants where they probably don't have good organization.

    The problem is nowadays "new discovery" happens almost every year, a typical example is coffee, every year a new research done by whoever from whatever university, this year a new research says coffee is good for your health, but the next year the result will become opposite, it repeats again and again without failure. In addition, rich sponsor like famous brand can easily hire a professor from so and so university to write a research report about the benefit of their product. they can also pay media company to market their products. so the conclusion is don't blindly believe in articles from newspapers and media, majority of them are biased or can be untrue.

      No. Research doesn't work like that. When a research from a trusted source is published furure research shouldn't oppose it, it only improves on it or it finds something new not shown in previous ones. But never deny them.

    Growing up in Vietnam, I ate msg, but stopped after coming to America where it's said to be bad. It's only last month that I learned that msg isn't bad at all. Here in America, they used to claim that eggs are bad, then changed to say they're good. Red meat was bad. Now it's good. Fat animal meat was unhealthy. Now beneficial. Carb and sugar currently are the ultimate culprits....

      The target put on MSG was over concern for the growing number of Asian restaurants popping up all over the US in the 1930s. It was a racism tactic designed to stop people eating at Asian restaurants and can be traced to the influence of Christian Conservative groups. They would demonise anything what wasn't 'white'. Is that surprising to anyone? Now it's the evangalical christians pushing such racist agendas against minority groups, all in the name of their particular God.

    Keyword here is Umami. MSG is very much a fast and convenient way to add more savoury punch to food. How about making your own umami liquid or stock if you're cooking? Japanese culinery commonly used bonita flakes, dried anchovies, dried mackerel, miso, dried mushrooms and as mentioned in the video, dried kelp(seaweed). Asian seems to prefer stock from chicken, dried shrimp, ikan bilis, dried solefish, prawn shells, clams, fish bones & head, meat bones, soybean, fermented beans, dried mushrooms etc.. Of course, there's also vegetables stock. Other ways of adding umami includes fermented liquids like soy sauce, oyster sauce, fish gravy, liquid aminos, Worcestershire sauce etc.. Finally, my thoughts on this video: If savoury umami rich food is my goal, how much trouble am I willing to go inorder to extract umami from raw ingredients(cooking own stock)? Or could I not just use ready-made stock(liquids or powdered)? Or the instant handy MSG? 😉

      Not really sure what answer you ''want'' to hear. Or what is your point, really? Of course, Umami-rich ingredients are a-plenty. Of course we are learning more and more about this relatively new ''5th taste''. And it has been known, and scientifically proven for at least 2-3 decades, that MSG does NOT cause a the entire laundry list of ailments that many people have believed since the late 60s . So again...what is your point?

      I do not have any hard point(s), you may draw your own conclusions. As for the scientific proof you mentioned, does it include those affected by consuming MSG? If quantity of MSG consumed is a factor, I agree with this video that for most of Asia's cooked food sold outside of home, they contain a certain amount of MSG which one cannot really determind. Thus as the video suggested, moderation is advisable. Finally, I believe one may need be wary of total MSG consumed. Since we can't always reduce the MSG from restaurants or take-outs, I would reduce the amount over the home-cooked meal side. Cooking at home, I prefer my home-made Umami stock whenever my work schedule allows. At busy times, I use store bought ready-made stock and MSG, no issues for me and family. So I'm neutral as far as whether MSG is 'good' for you.

      I love trying everthing else that includes food and when ever I do eat out and I'll find something that taste good. I'm not a chef but I can fry,steam, boil..... & I do like to make something that I like for myself where the msg tends to fk it up.

    In japanese cooking we usually use "kombu" which is usually called "natural MSG".

    The king of flavour. Uncle Roger taught me to have it in my kitchen. It kinda changed my life, as I never enjoyed the food as much. Sometimes I consume it in excess, I have to admit, but not ever once had I felt negative side effect of it. 2 years with MSG and counting. It is so cringe seeing labels on food like "Without MSG" while MSG is perfectly safe.
    It is like a innocent man wrongfully sentenced to life in prison.

      Westerners like to put certain things of the east with negative labels when they see it competing with their products. MSG is such a good taste enhancer it makes the already bland western dishes feel even blander when compared to tasty eastern dishes with added MSG.

    Great report! Because my parents operated Chinese restaurants I started to do research on MSG since the early 1970s. Just from reading scientific papers, I came to the same conclusion as your report. When patrons asked what MSG was, I told them the truth and most were shocked that MSG is natural like salt and even occurs in most preserved food with added salt. I would consume MSG as little as possible in the same fashion as reducing regular salt intake in my advanced age. In my restaurant, patrons have the option of no MSG in most dishes unless the key ingredients have naturally occurring MSG like sausages.

      Yes, because a pinch of MSG produces a lot of difference of taste ( umami ) in a full pot of soup. That's way less than a teaspoon . I buy a pack (10 grams) of msg ( ajinomoto ) and that would last for a month or so. I use it everyday in my savory recipes. I don't use it in sweets.

    Thank you. I’m from Brasil and grew up in an Italian neighborhood next to the Japanese neighborhood ( biggest Japan town outside Japan) where MSG is known by Ajinomoto. I won’t eat arugula salad without lime juice and MSG. IN THE 60’s and 70’s it was known as health food and used in pop corn and by people with hypertension to reduce the amount of salt the ideia is to use 1/2 salt and 1/2 MSG.
    IF MSG causes cancer, I would be dead by now ( I’m 60).
    I worked in pizza place for 30 years and every pizza place in America uses MSG , but they advertise “no MSG”
    It was known as natural food just because it is natural. The irony is that most people that try to avoid MSG, don’t have a problem with chemical processed conservantes like yellow 15, blue this and red that, used in abundance by the food industry. I believe that prejudice played a role in this hoax. Ajinomoto MSG is a wonderful taste enhancer just like table salt or sea salt enhance savory dishes. As everything else, balance is important. Too much of anything is bad for you. Hence sugar, fat , alcoholic beverages, etc..

    MSG is in a lot of food but it's evil if it's used in Chinese restaurants. lol. I used to work in a Chinese restaurant during my HS days and occasionally I see fat people specifically ask for no msg in the food. Some people should be more concern about their diabetes from sodas and donuts rather than the little msg found in the egg rolls.

      The sugar content in different foods in the US (fast food capital) is insane, and don't forget the fairly frequently penchant for deep fried foods.
      Salt content, calories, nutrients, sugar content and perhaps others I've missed out, are different facets of nutrition and diet so yes just picking on salt content is a bit ignorant.

      Keep in mind that the leading type of cancer in Asia is stomach cancer caused by high intake of salt, alcohol and obesity: 5th leading type of cancer in the world, 1,089,103 have that cancer, 768,793 deaths.
      I will make you understand that the fact that many Asians have a lower BMI (thinner) and more visceral fat than subcutaneous fat (more prevalent in western society). Thus carrying a high amount of visceral fat is known to be associated with insulin resistance, which can lead to glucose intolerance and type 2 diabetes. 60% of diabetics in the world live in Asia and there are 537 million adults (20-79 years) are living with diabetes on the planet - 1 in 10.

      @@robert-antoinedenault5901 as an Asian American, I do notice the Asian community tend to have high intake of salt. What you said is probably all true but bare in mind that Asian population as % of global population stands around 60%, so having 60% of diabetics doesn't feel like it's an outlier. That being said, maybe there is a heavy connection which I'm not aware of.

      That's the other thing about MSG. It takes very little to have a large effect on flavor, especially if its pals disodium inosinate and disodium guanylate are along for the ride (they magnify the effect of MSG by several times). Even products that say NO MSG are often still chock full of glutamates (the "G" in MSG). If you see yeast extract, hydrolyzed [insert vegetable here] protein, various cheeses -- especially Parmesan, tomato, or a number of other things in the ingredients list, you're still getting glutamates.

      Case closed? haha! Japan eats a specific diet that encompasses high quality, extreme nutrition. That's why they can still smoke Malborah Reds and not have everyone dying of lung cancer. They also have a societal bias against weight gain as they consider it antisocial and glutonous unless you are a sumo wrestler. THATS why they live longer, not because they eat too much condensed seaweed or whatever chemical concoction they are making their MSG from..

    I'm not really against MSG myself. But as an Asian I even don't use MSG that much since i have quite sensitive taste buds. A lil bit of it makes everything tastes somehow more sweet on my tongue and it has that prominent chemical taste to it. It also irritates my throat so much that my throat produces phlegm for quite some times. I read articles and journals about it that it may or may not has connection, but apparently some people also experience what I have myself.

      You are not alone. everyone s chemistry is different. Some ppl. Can drink coffee all day while if I even have a little cup more than my tolerance I feel like I am having a heart attack. My family used to go to dim sum every Saturday and after each meal I get the cotton mouth feeling. It is not political... Msg aversion is real. I am not saying it to dismiss asian s .. I am chinese myself and even in Hong Kong.. ppl. Will rate the quality of food with the amount of msg used.

    After i drank roughly 300ml of coffee, i felt dissy, my heart pump faster, i sweat alot, felt unsettling and sick. But if i drink a small amount of it, i feel okay and more awake. Thats it. Everyone has different toleration towards stimulants and nutrients, so know your body and don't over consume anything is the key. Msg isn't bad for you unless you have allergy or over consume it. If the food you buy/cook make you feel a lot more thirsty, lethargic or even sick, that means it has too much msg/salt/sugar in it. Avoid that food stall/brand, there are better choice out there, suitable for your needs. Cook more healthily.
    JUST ALWAYS CONSUME FOOD IN MODERATION PERIODT.

      i believe MSG is Monosodium Glutamate already contain Sodium. The key is to eat in moderation. If you eat too much salt you might get hypertension, if you eat too many sugar, you can get diabetis, and this relate to many ingredients, especially flavour enhancer.

    I love my MSG I found out I had very high hypertension a year ago and it has been very helpful to lower my blood pressure. It's so much better than salt.

      The S in MSG (the salt of glutamate) is the same sodium in your table salt (the salt of chloride) , unless you consume the glutamate not in salt crystalline form that is msg , you should be aware this sodium will also increase your blood pressure as it is still a salt

    I feel somewhat vindicated watching this video. I grew up with my mum sprinkling msg in her cooking and I don’t understand why people said msg is evil. Looking back, I noticed my mum hardly ever use salt.

    There are a lot of people around me who always says instant noodle will cause hair loss.
    Well, instant noodle is poor in nutrients. If you eat it often as your meal without additional vegetables or meats, thats what causes the hair loss. You're lack of nutrients honeyy. Don't put the blame on the instant noodle/msg. This noodle saved my broke ass when i live in dorm to get my degree.

    MSG was discovered by a Japanese chemist 100 years ago, Kikunae Ikeda. Now if MSG is so bad why do Japanese have the longest life span. And have and live the healthiest dieat? My great grandfather was 117years old when he died. His cooks used MSG but great grandfather head a very good memory. He walked until he his last day. My grandma died at 96 years old.

    This is a big business like wine or tobacco. In the early days of sigarettes even the prominent medical professionals of US said smoking is good!!! You can buy experts without any problem. We used to eat food without MSG with real taste using herbs and spices.

    I don’t know if it is good or bad but whenever I add msg in homecooked food, my nerves especially towards my foot starts tingling. I avoid adding it on food as far as possible. It’s just my experience that I wanted to share.

      Truth be told I grew up having MSG as a flavor enhancer in food at restaurants and also at home. Then when I moved to the States and hearing the side effects of MSG I omitted it from my home cooking. I compensate it with chicken or mushroom stock powder. If that doesn't help I add sauses. Believe me I try all brands of for example soy sauce. Ironically the sodium content is high. S'times I add sugar to "balance" the flavor. Hmm maybe I should revert to using a pinch of MSG. Bottom line is that I know taste is subjective. So is the ability of cooking healthy and knowing what your body need. Be creative and let the taste buds and body direct you. I love food.

      I have had bad reaction to msg in the form of headache. It was so bad that I panicked thinking I had food poisoning. If I want extra flavour I'll just add more garlic/herbs/spices to my cooking. They're unprocessed and loaded with antioxidants anyway.

    3:16 I heard those stories back when Iwas still a kid, hearing it today where I'm a fully blown adult that story suddenly feels like political.
    and this is the proof that interpretation of things changes depends on your age. which is why kids are not allowed to vote.
    in this case, the doctor eats on a chinese restaurant and he got symptoms and among all ingredient in his meal he "Specifically pick" MSG. I mean... what the hell? did they not even look at "salt" or looking to "how much" is not safe to consume. coz at the end of the study their conclusion is "MSG is BAD" as if it is pure evil. coz everyone knows that there is no pure bad on everything, what we all know in general is that too much of something is always bad.

    My soup tasted plain, lacking in umami flavor even adding salt didn't help. I added a little MSG. It tasted great after that. I once added MSG to my tea by mistake, thinking it was sugar (the kitchen was dark and couldn't see well). My tea didn't taste very good.

    MSG is bad for you in high doses. I am just like Ian Teddy, I eat MSG every day until one day I developed an allergic reaction, which is a migraine and cause my eyes to dilate. My mom adds up to three teaspoons of MSG in her cooking. Also, had friends who consume a lot of MSG while pregnant and children born with autism.

    My mum used it in all our home-cook daily diet during my childhood time. However, I persuaded my mum to stop using it after I turned 18 when I realised there were actually a lot of health issues and side effects consuming it and the obvious side effects I experienced myself is extreme thirst and dryness for hours. Since then, it has been 35 years already that I have been avoiding products containing added MSG and avoid restaurant cooking with MSG 😅😊

    I knew MSG wasnt bad, if you dont overdose on it, like every other food or edible, and even assumed that it was in most of our foods anyways.
    But I didn't know how many foods had MSG, nor it was quite "organic" - not so processed.
    I also said to my that salt was unhealthier than MSG, but I wouldn't expect it to be true, cuz it was purely an assumption.
    Furthermore, I remember hearing that after the first "scientific" papers on MSG in U.S. was released, racist scientists had also published papers that further "proved" its negative side effects, but it turned out they experimented on rats and literally injected them with many times the normal amount... not eating but INJECTING via NEEDLES, in HIGH DOSES

    Blinding headache. Heart pounding. I ate salad dressing with MSG and it put me into VFib. I got these same symptoms with a bowl of ramen, I have a BSN and work as a nurse. I read labels now. "Prove" the safety all you like, there are millions of us who are very sensitive to this unneeded food additive.

    They never revealed that they add acid and bases to buffer the hydrolysates. As well as enzymes to biocatalyse starch into Glutamate.
    Though this shouldn't have negative effect. Just felt I should include some things missing in the production process.

    Think I just did a 360 with MSG! My brother swears by it when he cooks but the rest of us in the family avoided it because well, "No thanks, we ain't gonna get cancer" LOL.. Awesome work on this vid! The artist's drawings with the grains of MSG was mind blowing for me! Gonna watch a few other MSG vids for even more supportive scientific reviews. Many thanks for this!!

      Honestly, all the 'scientific' papers about the negative effects of MSG are outdated and were made during the U.S.'s anti-Chinese time. If those studies claim it was bad, then the U.S. would have banned it, following many other countries.
      I've heard that one of those earlier papers got negative results simply because they practically overdosed mice, by multiple times the normal daily intake, and INJECTED them with those doses of MSG... since then, the real, relevant studies have disproven all those claims when taking in NORMAL DOSES, except for the very few who are allergic to MSG

    If you have Arthritis, Fibromyalgia, or any type of joint pain, it will definitely make the pain worse! I know, I have all three, and when I eat it my pain is more intense. I know several people that has the same problem MSG.

    Listen, the doubt on MSG began on a rumour. Everything in excess is bad. Like sugar, salt, etc.

    I'm hyperallergic to MSG and gets asthma like symptoms with difficult breathing, raising heart beat and sweating like crazy.
    First time I experienced this, eating at a Chinese restaurant in Boston, I thought I had a heart attack.
    Since then, I try to avoid MSG at least in larger doses, and stick to regular salt and other spices.

      If you were "hyperallergic" to MSG, you wouldn't be able to consume any of it, but apparently you still eat it. MSG is used in all kinds of Asian dishes, including Thai, which is apparently where you live. People who are allergic to peanuts don't eat a little of it, they eat none of it. People who are allergic to shellfish don't eat a little of it, they eat none of it. You aren't "hyperallergic" to MSG, you're just fat.

      Rather than MSG, you want to watch your salt intake. As the video explain, MSG add salt to the food. Thus if the food has large amount of salt, MSG will basically add that quantity.
      I knkw this is silly, but from the expert by the end of video, MSG has lower salt content in same tsp to salt. Whcih if you want to reduce the salt but get strong umami flavor, you just drop salt but use MSG

    My father always added MSG in his cooking and he died at the age of 80 years old. On the other hand, many people who lead a healthy lifestyle, exercise, yoga, eat organic food, in fact die sooner. God's business. The point is that the important thing is excessive.

    While in general this video is well put together, it seems to gloss over the symptoms of MSG. I am sensitive to MSG with dry mouth, headaches, and dizziness. I especially happens after a restaurant dinner. Certainly it is probably due to excessive use of MSG that is not under customer control. The only way is to go to restaurant that promise MSG free.

    Some dude did a study like 40 years ago, he ate some Chinese food with msg and got the shitz* afterwards or maybe an upset stomach. He wrote that msg must have been the problem in a paper that was published and caused many people to avoid / fear msg, a flavor enhancer and in moderation allows less salt intake

    Glutamate is the most abundant excitatory neurotransmitter in the vertebrate nervous system. (It will pass the blood brain barrier). The only amount we need is naturally occurring. Anything more than that goes into the toxicity realm.

    16 years ago I decided to change my diet completely.
    And MSG was one of the first I took care of...then soda, artificial flavors, and colors, carrageenan, artificial sweeteners, refined grains and cut almost of kinds of sugars in my diet.
    I haven't eaten out for those 16 years and I don't miss it.

    The thing about msg is that it has high sodium content but isnt salty. So you could be adding a lot and food would taste better due to the glutamate but you wont taste the sodium level, hence the perceived danger esp for hypertensive people or those with kidney issues. For this child who puts msg in everything, let’s see how his kidneys are when he reaches his 40s-50s.

      I just went through and 2 surgeries and some implants to get rid of a huge kidney stone I had in which before I had arrived at the hospital I went on another sodium eating spree. Sometimes I can’t help it and even though I used to be very fit I would and can eat 5-10 spicy ramen packets in one setting (I’m 6ft) that’s what I was doing before I ended up with that huge stone. I have another appointment scheduled where I am going to find out from the doctor the root cause but I have a feeling it was the overeating of sodium and the daily energy drinks that got me. I know we are supposed to do everything in moderation but sometimes I just really crave spice and sodium .
