    You know what Brad and Carla have in common? They just explain things to me like I'm a friend.. hanging out. Like, same tone, cadence.. grammer you would use with a friend. Its the secret sauce methinks.

    I just love how they leave the little flubs and accidents into the videos on Bon Appetit. It really makes these videos fun and approachable, which is confidence inspiring when it comes time to try out the recipes irl.

    We knew who you meant when you said David Hasselback. It' OK. You reminded me of the time my mother told us about her trip to Tampon Springs Florida. She must have said tampon 20 times and no one corrected her either until she was done with the story.

    can we all just appreciate how hilarious it was when Carla was like "I don't want to cut it all the way through..." and the background music even stops when her face goes to the most "ugh" expression and she says "I CUT ALL THE WAY THROUGH... classic"

    Hasselback refers to a Swedish restaurant "Hasselbacken", where they served potatoes using this technique of cutting slices half-way through the potatoes. You also put breadcrumbs on top and pour melted butter over the potatoes every 10 minutes or so while cocking them in the oven. It's a fuss but worth doing. You get a crispy exterior with a "baked potato" type of center. Delicious.

      hasselback is a swedish recipe. Here we usually put another cuttingboard right next to the potato on the other cuttingboard instead of skewers.

    Brad is such a nice guy, that's why people like him. He treats everyone like his buddy and is always open to being wrong about something. He tends to talk to people, not about them, like the people at the start of this video did. They could learn a thing or two from Brad.

      As for what it means, it roughly translates to 'the hazelly slope', because swedish place names are usually just litteral descriptions.

    Hasselback potatoes are named after the restaurant Hasselbacken in Stockholm where they were created, hassel means hazel and backen means the hill or the slope :---)

    The method and name "hasselback" originates from a famous Swedish restaurant called "Hasselbacken", where a chef called Leif Elisson created the original recipe for hasselback potatoes (hasselbackspotatis in Swedish).

    Love the video, just finished my version of your recipe. I used honey instead of maple syrop, because thats the thing I had. And it tasted great! I have one advice concerning the hasslebacking part, use a even blade knife, without any curves, i used a cleaver, and it was so easy, because when you use even a slightly curved knife, you will have a different depth of cut in the center of squash , so you look at it form outside, and you see that it could go a bit futher, but in fact the center of your knife might already be close to the bottom, because of the curvature of the knife, and so you can easily break the squash, cuz it's so fragile at that point. Other than that, fantastic thing. Oh and i added a pinch of cinnamon - soooo good. Oh and Carla, maybe you would consider an episode with Brad Allicin i mean Leone? It would be so much fun :).     I put tablespoon of fresh ginger in to my glaze. Sometimes I put pecans up on top. Tried 3 years ago lightly candied in same glaze the pecans and it was heaven. Ps love watching you guys. Makes me sad and happy had a stroke 3 years ago and now I don't cook anymore. Hope no cook or chef ever goes thru what I did sad to make food now with no flavor.

    Hasselbacken is the name of the Swedish restaurant where those potatoes were first served. Hassel = hazel, backen = slope, small hill. The first restaurant on that spot, with that name, was built in the 1760th. But the building has been burnt down a few times ... The current restaurant was built in the 1920th.

    When I was taught to make Hassselback potatoes around 30 years ago, chopsticks weren't that easy to come by up here in the north (I'm in Norway, Hasselback potatoes are Swedish). What I was taught to use as a guard against cutting through, was the handle on a wooden stirring spoon. You know, one of those spoons that has a really long handle, around 1/2" in diameter, the spoon itself is usually flat at the bottom, making it easy to scrape the bottom of a pan. Otherwise it is used in the same way, you place one on each side, which will stop you from cutting through. The spoon probably would have worked a lot better for you on the butternut squash! Great idea to prepare a squash like this! ☺️👏🙌👍

    Yall i JUST MADE THIS for Christmas Dinner today! I added a little more butter to the glaze, maybe like a teaspoon more. Still a very simple and forgiving recipe, also an excuse to buy a very beautiful, seasonal and healthy food, the butternut squash!
