For 1 kg of Laotian sausage you'll need :
1 kg minced pork
5 sprigs lemongrass
20 g galangal
15 kaffir lime or combava leaves
5 dried chillies
4 shallots
6 cloves of garlic
2 tbsp fish sauce
1 tbsp turmeric powder
1 tbsp paprika
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sugar
