Yep. A little cream cheese in a lot of sour cream sauces brings it up to the next level. Adds a nice richness to it. I cook a few different cuisines and it's almost universal for that in my experience.
Just made this tonight for my parents. I added extra cheese in the sauce. I made lime cilantro rice and refried beans with melted cheese on top and I sliced avocados and red onion like you, on a plate on the side with lines and lemon slices. Thank you so much for the recipe! I made these tonight. So good!!! The chicken was seasoned perfectly with your spice blend. I couldn't get Queso Oaxaca at the store so had to use Monterrey but still so cheesy and creamy. I will still keep an eye out for the Queso Oaxaca for next time.

I think I’m just a slow cook, because these definitely weren’t “quick” for me to make lol. They are delicious though! I’m Mexican and I’ve made a lot of different recipes over the years, but these are hands down the best chicken enchiladas I’ve made! Great recipe!

Google the recipe for SIX SISTERS STUFF and the recipe is exactly how I make it, honey lime chicken enchiladas. I make it all the time but it does not freeze well unless you use corn tortillas, flour tortillas get really soggy. I prefer flour if I’m just serving it the same day. 😋
@dcortez94 great!!! I usually do red sauce but, that white sauce was good. No need to dip the tortillas though. It's so messy. Just put sauce on the bottom of your baking pan instead.
