Skim the top of the beef gravy to remove the excess oil
Ingredients:
For the enchiladas
Whit corn tortillas
Oil for frying
Medium cheddar cheese
For the beef chili gravy sauce
1/2 onion;small diced
2 minced garlic cloves
1 lb ground beef (80/20)
2 tsp ground cumin
2 tsp oregano
2 tsp black pepper
Salt to taste I used 1 1/2 tsp
3 1/2 unsalted beef broth
2 tbsp tomato paste
3 tbsp New Mexico chili powder
1 1/2 tsp paprika
1 1/2 tsp cayanne pepper
4 tbsp APF (all purpose flour)

“Cooking con Claudia: 100 Authentic, Family-Style Mexican Recipes.” I got mine from Amazon. It’s also a beautifully photographed book. When I first received it I had fun reading it like a novel!😁

Normally I would stuff the enchilada meat mixture inside the tortillas, but this is an interesting take where the meat sauce is under the tortillas and poured on top, the inside is only gooey cheese and onion. Interesting idea!
Sure easier than stuffing everything in the tortilla
Putting it on the bottom keeps them from sticking. I use wolf brand chili too sometimes if I'm in a hurry and don't have time to make the chili con carne.

Enchiladas are my favorite. While i like to use guajillo peppers for my enchilada sauce, I'll give this a try.

Delicious, I just made this, with a few tweaks and it was soooo good! 👩🏻🍳 chef’s kiss! The only alterations I made were to add Jack cheese and some of the roast, I just made, inside the enchiladas. Yummy yummy!

I just received my copy of Cooking con Claudia! When I started flipping through it, it fell open to the sopa fideo con carne recipe. It's as if the book knew exactly what I needed to make for dinner after Mass tonight. I had a co-worker many years ago who used to bring us leftovers of fideo to work and share. I have so many happy memories eating this. Can't wait to have it simmering on my stove this evening. Beautiful cookbook - great job! Oh, and I love how I hear your voice in the written directions.

Very straight-forward enchilada recipe, tastes great too. I used my normal seasonings for browning the tex-mex ground beef, but I'm sure Claudia's seasonings are just as good. I also used a table spoon or two of corn starch (rather than flour) to thicken the enchilada gravy. First try turned out great.

Another quick shortcut I use is when making enchiladas (especially cheese enchiladas) is mix a can of enchilada sauce with a can of chili without beans, heat it up and use that to cover the bottom of the dish and over top of the enchiladas top with cheese and bake - saves some time and very good!

I grew up on Tex Mex enchiladas and for a long time, that was all I knew. I’ve tried Mexican enchiladas throughout my life and while they’re amazing, I prefer Tex Mex 👌🏼 great job, those looked good!
