3 CLASSIC HEALTHY Mediterranean SALAD DRESSING Recipes. You'll WANT to EAT SALAD EVERYDAY!

  • In this video, you will learn how to make three classic healthy Mediterranean salad dressing recipes from scratch! You'll only need a few minutes and a handful of ingredients to make each one, so join me on that healthy road to eating the Mediterranean way every day.
    CLASSIC (but HEALTHIER) CAESAR DRESSING
    ...when you swap out half the mayo for Greek yogurt and eliminate the egg yolk!
    2 Tbsps lemon juice
    1 tsp Worcestershire sauce
    1 tsp Dijon mustard
    2 cloves garlic
    Salt/pepper to your taste
    2 anchovies
    ½ cup Greek-style yogurt or kefir
    ½ cup mayonnaise
    ½ to 1 cup grated parmesan cheese
    CLASSIC (but HEALTHIER) GREEN GODDESS DRESSING
    ...when you swap out all the mayo for Greek-style yogurt or even better, that super probiotic kefir!
    2 Tbsps lemon juice
    1 Tbsp extra virgin olive oil
    ½ tsp sea salt
    1 garlic clove
    ½ grated lemon peel
    1 Tbsp capers
    1 cup parsley
    1 cup Greek-style yogurt
    1 cup mixed leafy herbs (basil, cilantro, mint, tarragon)
    2 Tbsps chopped chives
    Pepper freshly ground to your taste
    1-2 Tbsps ice water (to thin to your preference)
    CLASSIC (but HEALTHIER) TURMERIC HONEY GINGER DRESSING
    ...when you add some pepper to supercharge the turmeric!
    2 Tbsps tahini paste
    1 Tbsp ice water
    1 Tbsp extra virgin olive oil
    ½ tsp turmeric powder
    1 Tbsp lemon juice
    ¼ tsp pepper freshly ground
    2 pieces of ginger
    1 Tbsp honey
    Sea salt to your taste

    By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
    But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
    I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
    In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.
    Following that thought put me and my partner, George on a plane to Alicante Spain in 2014 where we have lived ever since. Our mission is to explore the aromas, ingredients and collective imaginations that are all part of Spain’s vast culinary heritage.

    Thank you for the video. The Tumeric Honey Ginger Dressing sounds delicious. What ingredients would you recommend for the salad itself?

      Hi Leslie - I use it with all sorts of salads fixings and generally go with whatever I have in the fridge but particularly love it with hardier winter things like roasted squash and carrots. A drizzle over sweet potato is nice too…my favorite thing to do though is to just experiment in the ktichen to find the sweet spot that works for my tastebuds! Cheers, Caroline

    My mouth water as i watch this. But i got a question. Some said dairy will bind up with antioxidants in food making the goodness quite useless. However, since the Greek kinda add yogurt, cheeses in their dressing and they stay healthy too, what's your take on the theory?

      Sorry it took a few days to respond. Great question, so thanks for asking. As I always say, I follow the science and I can't find any reason yet that including dairy in your diet is not a good idea. Everything in moderation, and especially healthy fermented dairy products like Greek yogurt that provide important probiotics for a healthy gut are key to overall health. So that's my take and until someone definitively proves otherwise, I'm sticking with it! Cheers, Caroline

    Well and a good vinaigrette (extra virgin olive oil, any acid--vinegar, lemon or lime juice, balsamic), and mustard (dijon or spicy) might add any of these or none of them (shallots, honey, ginger, red pepper, lemon or lime zest, etc.) Most of my salads, but once in awhile change it up. I use a shake jar normally.

      Hi Little Twirl! I think I should own the company that makes this little processor… so many people ask me about it and unfortunately, I can’t find this particular version anywhere on the net. I bought it at a grocery store in Spain. But I do have a link to one that is similar that might work for you but it is only 400 watt not 500 watt so it may be a little less powerful but probably good enough to be the job and it is a glass not plastic bowl, which I really like.     Hello from Bangalore, India.
    Thank you for the three lovely recipes.
    However, with respects, I wish to point out that dressing 1 and 3 are not Mediterranean. Caesar dressing is Central American, and Tahini - turmeric is from Middle East.
    Irrespective of their origin I would use the Green Goddess and Honey turmeric as they look light. Caesar dressing as shown here is still heavy, what with mayo and Parmesan...I would let the children eat that as they don’t have to watch their weight.😀
    I would suggest a much lighter version of white dressing based on Greek yogurt with lemon juice, mustard, garlic, dill and honey, salt and pepper, garlic with or without avocado. Hope you don’t mind.

My recipes are meant to follow the principles of eating the Mediterranean diet, not necessarily originating in the Mediterranean but trying to show people that they can follow this healthy “diet” no matter where they live. Your points are all good ones and I like your suggestion about yogurt and lemon juice, both are favorites of mine too. Regarding mayonnaise, I should have been more specific that I make my own with extra virgin olive oil and egg yolkl so I know it is healthy. And it’s funny that the question about the origin of Caesar dressing has come up before… it was invented by an Italian chef who immigrated to Mexico so it’s truly a global recipe! Cheers, Caroline

    Ceasar salad dressing is not Mediterranean. The ceasar salad was invented in Mexico.

      Hi Willem - Of course, you’re right, its invention has been attributed to Caesar Cardini, an Italian chef practicing in Tijuana, Mexico but my goal with this channel is to show how to enjoy any dressing in a way that fits with the healthy eating patterns of the Mediterranean diet so I hope you’ll allow a little leeway for interpretation!       Ha! I tried this for a couple of reasons… one, my nails weren’t polished and two, I thought people might think it looked more hygenic! If you’ve watched any of the more recent videos, you’ll see I ditched the gloves (except when preparing chicken etc)!
