    Today, instead of my olive oil, balsamic vinegar and lemon juice vinaigrette, I added in a little Dijon mustard and diced shallot. The tang from the Dijon was tasty. Highly recommend.

    Thank you Martha. I've learned simple lessons that I never thought of before; such as the reason oil is poured in slowly into the infusion is that, if poured in all at once, there won't be an infusion. Also, I'll be ordering saffron from the saffron capital of the world, Iran (by way of Australia and Parsa Global Imports) and you showed me how to use it and get the best results for it. You're the best cooking show hostess today, a wonderful heir to the late Julia Child.

    I enjoy making my own dressings simply because store bought is loaded with sugars and preservatives.
    If you are watching your waistline, making your own dressings will greatly reduce your caloric intake.
    Besides, look at the ingredients on the bottles of dressings, it's scary.

    saffron is the main ingredient in Persian cooking which you forgot to mention in the list of countries using saffron in their dishes.

      I actually thought the same. Like you said, above all Persian cuisine uses it, indian and maghreb and of course others, too. I just made a nice azerbadjani dish with saffron some weeks ago ... but I guess that for her average viewer "french and spanish" sounds just more elegant and polished 😉 ... anyways the demonstrations were still helpful.

    Wonderful homemade salad dressing! Martha Stewart was asked to see me in Kalimpong,India for some Tibetan recipes but never came and hope she found a few when visiting Sikkim in the 1990s!!

    Great back to basics! I loved the aioli garlicky sauce with addition of saffron, that’s new to me. I normally make my own mayonnaise with whole egg in a handheld blender in 2 minutes. I add egg, vinegar/lemon juice, salt and spices and just add the portion of oil slowly. Put a stick blender to the bottom of the narrow container that a stick blender comes with, then hold to the bottom for 30 seconds to 1 minute then move the blender up and down motion and in less than 2 minutes I have great mayonnaise. I usually make my own this way to make egg salad sandwiches filling. I will try your egg yolk version next time, that would be tasty!

    Great class! I love Aioli with shrimp or other shellfish --most times I will just add smashed garlic to regular mayo, but my ex-MIL from Spain taught me how to make it using a half boiled potato, this then just spread on crusty bread. ( Martha must have buckets of leftover egg whites and makes meringue everyday. )

    This was very informative. I make a scratch Caesar salad dressing that my family insists that I make, my daughter, especially asks me to make extra for her, because she said has tried to make it on several occasions and she said that it never comes out.
    They key to my Caesar dressing; NEVER measure, it’s always by instinct and taste.
    My dressing never comes out the same way twice.

    I make this exact vinaigrette recipe. One time, I thought I had an extra bottle of olive oil but I didn’t so I substituted in Walnut oil. My god that was a delicious accident.

    Just a question about the mayonnaise: howcome the homemade one is much more yellow than store bought? I assume it’s because store bought includes more preservatives, and possibly egg whites? ☺️
