This looks so good. I also saw a video about frying bacon in water where you start off with a small amount of water to allow the natural fats to render out and cook the meat. It makes perfect sense! Thankyou.
It fries in the fat from the skin after the water evaporates. The chicken cooks through in the boiling water and then crisps in the fat. I do this with new potatoes. I boil them in a pan of water with butter and the water cooks them tender and after the water boils off, the potatoes brown and crisp in the butter.
I have never tried this before, but I know for an absolute fact that when I put either fresh or frozen Hamburger patties into a little water and they suck up that water and begin to fry, they were the most juiciest, perfectly browned, evenly cooked burgers I have ever tasted!!!!! 😋😋😋And the pan was easier to clean!!!!

Thank you for reminding me that 10 years ago, i used to do that a lot. I dont know why i stopped doing it. I would season my chicken with garlic and onion and black pepper. Boil water in a deep skillet add the chicken and cover it. As the chicken cooks and start to carmelize, i add a little more water & seasoning and whatever pasta noodles i have or want.
