      What I do is trim the fat off and render it to use as cooking oil. I do the same for pork, lamb, and beef. It's free and natural. It's much healthier than processed vegetable, canola, peanut, and other seed oils. It's much cheaper than olive and avocado oils.

    My grandmother always soaked chicken in vinegar before she breaded and fried it. She said it dissolved that slimy film/membrane.

    There's actually a science behind your cold pan technique. Which is also used to frying potato chips, When u cook raw potato slices in hot oil they become less crispy than putting them in cold oil and letting them fire till crisp. Also hot oil will make it brown too quick, because heat isn't being distributed as cood as cold oil warming up. Yes it takes much longer (5 minutes for hot fry, 45 minutes for cold frying) but the results are much better. It also absorbs way less oils. I didn't even think how genius it would be to apply the same technique to chicken skin! And in this case with it's own oild. Gurl you are genius cook!

    Glad to hear you POINT OUT not cross contaminating! Ppl don't realize touching the chix, then the faucet, then the seasoning, then your drink, all 'right quick' is all cross contamination!

    There's not many things that are better than chicken and gravy with mashed potatoes chicken noodles but other than that no chicken and potatoes and gravy and I have been making this right along with you doing my starts and stops and I got to tell you it is so good I love that your precise and you tell people what you're doing because I have been able to follow you from start to finish and my chicken is so good

    I am gonna try this way of frying chicken. I absolutely hate frying chicken the other way with like lots of oil and dredging in flour. I told husband ( of almost 50 years ) if he wanted fried chicken he could fry it himself or go somewhere that he could buy it. LOL Thank you so much for sharing and teaching 😊❤

      I recently just had almost 20 fibroid tumors removed from my body and through this process I’ve learned more about what’s healthy for our body and what’s not. Some evidence shows MSG is linked to obesity and weight gain and can increase the risk of fibroids among other health issues. I am a Black woman and fibroids occur more often in our bodies, so if I can share any of my wisdom and experience with others so that you don’t have to experience this, I am happy to do so.
      I agree with the other commenter - there are better ways to season our food.

    I love when the skin gets so thin it almost shatters. I'm a big seasoning and herb person, but chicken thighs are a protein that can stand with only salt and pepper. I usually cook it on a sheet pan in the oven, but I'm going to try it this way.😊

    Thank you for the video. I used to oven fry chicken, just like that in a 375 oven, and turn it. I never used the drippings for gravy, but there were plenty, and what a great idea to use them with the white wine! And using thighs, well, those are my favorite!

    Timing is everything! This video randomly popped up in my feed and I had a pack of thighs in the fridge needing to be cooked. I've watched many cooking vids over the years and yours is the first (honestly!) that I followed step-by-step, start to finish. The only thing I left out is the rosemary... personal preference I just don't care for it ...reminds me of chewing on a Christmas tree 😂 but even without it, these turned out awesome. Even without it the chicken and the pan gravy was delicious. I usually don't eat the skin anymore these days, but in this case I had to and it was sooo good. 😋 Excellent detailed teaching. I will be making this again and again. Thankyou.

    You got good lookin results without oil. Will try you way soon. I've been deep frying unbreaded chicken thighs in peanut oil to avoid carbs. You've managed to avoid oil too. Nice!

    I cook mine indirectly on the grill at about 400 on the dome, probably around 350-375 grate level, and sear over an open flame at 180. 180 is definitely the way to go.

    My father's deep-fried chicken looked very similar with maybe just a little coating showing. It was my favorite fried chicken with the chicken being the focus and not a heavy coating. Have subscribed so I can see more of your ideas. Thank you!

      @@SECERETSONG There are no studies on many things that are toxic and questionable. For example, microwaving food... when I had kids, the doctors said to NOT microwave the baby formula! I asked why not, THEY said it kills the vitamins! I then asked..well what about adults eating from the microwave?? They said it didn't matter for adults..I was shocked.. It's stuff like this that makes me wonder about many things..Just research on your own and make your own conclusion.

    I really want to try this. I love the crispy skin on chicken. This is also a method for cooking a whole spatchcocked chicken on top of the stove. It takes about an hour I think. Anyway, anything that’s easy and tasty is a win for me. Your chicken thighs look great!

    OMG, so delicious! They came out so good and had a nice crunch. I usually only pan-fry chicken breast. I love chicken thighs but usually put them in the air fryer. I wasn't sure what to expect with just the sea salt, white pepper, and msg but they were really good! Thanks for this video!

      MSG stands for Mono Sodium Glutamate. Guess what? Glutamate (Glutamine) is an amino acid that your body already has and uses. It is there in meat abundantly. It is NOT a nerve poison. It gives the "Umami" flavour that you get from meat and tomato.

    I will definitely try that recipe, I usually oven-fried chicken thighs . And when they're done I put a little honey on on them. And usually I serve them with mashed potatoes or rice, and pour the dripping from the cast iron pan on the mashed potatoes or rice. Love your video much love❤❤❤❤

    Please Please, do some real research on MSG, it is so so bad for you. I used to use it in my cooking years ago and I started having bad headaches when I'd wake up in the mornings. It's been said that it damages brain cells, but don't take my word for it, do y 9:19 our own research. Other than that, I'm gonna try your method of cooking my chicken, looks really good, thanks.

      It's her kitchen. Not the end of the world, plus she took literally every other step to avoid cross contamination.
      It's ok to point out the guideline, but it's really not an issue that a lot of non-American cultures don't follow that rule in their personal kitchens.

    I do love it. Good video. But I doubt that I would do all that frame with no oils are flower to get that chicken is crispy feeling but to know that I am cutting way down on my calories, and then make a gravy to pour all over it.😊

    That was awesome, my grandmother used to make smothered chicken and porkchops. Unlike the traditional way she would pan fry everything crispy and serve that pan gravy on the side. I'm old and tired of cooking but imma make that chicken. Thanks 😊
