Yes, you added lemon juice! I LOVE chicken soup with lemon juice, it's delicious. Also I love this speed scratch thing. Ideally I'd cook everything from scratch, but I'm chronically ill with serious fatigue, so spending hours cooking dinner just isn't possible for me, even on my best days. I would absolutely love to see more speed scratch recipes.

There are certain ingredients where it is more than fine to take shortcuts. Buying a pre-roasted red pepper is likely going to be a superior product compared to what many would create at home, for instance. Or just huge time/dish savers like the parcooked rice
yes, it’s called home cooking. pre made/prepared ingredients have always been a staple of home cooking in general. why are people in these comments acting like this is some new and novel concept
@@peen2804 Where have they been a staple of home cooking? Certain ingredients sure but we don't use parcooked rice or better than bouillon or other highly processed additives. I didn't know you could get frozen pre-chopped mirepoix. That can be a potential time saver in addition to avoiding waste, if you don't need the entire bunch of celery it could be better to buy the pre-cut stuff but it also involves plastic waste.

While looking after my dad before he died, every minute was precious so my amateur version of Speed Scratch was to poach a whole chicken, yielding stock for several portions of soup, along with tender chicken for a variety of dishes .. all ready in 10 minutes once the poaching was achieved. Another go-to was to make a cabbage soup yielding several portions, each of which could be customised within 10 minutes by fortifying with pre-cooked chicken, frozen fish, beans, diced bacon, or seaweed (wakami or kombu). Maintaining variety, the spice of life!
Whole fam is sick this weekend. Just came back to this video and had most of the ingredients. Grabbed a chicken from the corner store, grabbed some fresh rolls from their bakery, subbed frozen spinach, and had a delicious, healthy, and healing meal in under 20 minutes. Thanks, Bri. This is a lovely 21st century version of the 1950s convenience recipes our grandmothers loved. Instead of exclusively canned and boxed convenience items, it’s updated to the convenience items we have today they could only have dreamed of.

Loved the video, Bri! I'd love to see more of these speed scratch videos. As a neurodivergent person with executive dysfunction, it's hard to get myself to cook things even if I love them. But if they're easy and quick without much prep needed, I've found that I can cook more consistently for myself. This speed scratch chicken soup is absolutely going into my repertoire!
Speed scratch vids would be super helpful. While it is fun to spend a day making something from scratch scratch, having options for that Wednesday night meal would be great.
Love this series. Speedscratch is essentially how I cook most days. I don't have the time (or money) to cook from true scratch. Plus, since i live alone it's often easier to cook smaller portions without wasting anything. I can use part of a bag of frozen carrots rather than buying a 3lb bag of fresh that rots in the fridge before I can get to it.
This is the perfect idea for a series. I usually only have the time/energy to make one or two in depth recipes a week, and these speedy recipes will work perfectly for when the leftovers run out!
I love the speed scratch idea! And I appreciate the addition of the options if you have more time - homemade broth, baking the chicken thighs, etc. Provides a great balance of ways to create a great meal in little time and how you would recommend changing it up if you wanted to spend more time in the kitchen.

Fresh garlic done on a microplane instead of powder. This is hands down my FAVORITE quick chicken soup recipe now. THANK YOU. This is going on my refrigerator "quick fix" attack of recipes. The Swiss chard is a particular inspired addition, anyone that sees this DO NOT skip it.

Hi Brian, this couldn't have come at a more perfect time. My son and I are sick as dogs. I had everything except the frozen miripoix and the rotisserie chicken. I ventured out for those ingredients. Fortunately, I have a great grocery almost within walking distance. After making the soup, we're both feeling better. I look forward to more "Speed Scratch " episodes!
I was making chicken soup the other day and had to add more water to my homemade stock. Not feeling cool about the dilution, I added a couple of tbsp of BTB to the mirepoix after it had softened and stirred it around for a few minutes. The soup was excellent. Glad to have stumbled onto your secret ahead of time. I've also found that a tbsp of BTB added to 2 cups of hot water and used to make rice (with a bay leaf) makes VERY tasty rice. More speed scratch would be great.
I appreciate recipes like this. Pretty as some of the fully from scratch recipes are, I am never going to make them. Whatever flavor increases there may be are not worth the time invested for my or my family's schedule. But something I can throw together in less than half an hour with a few canned/frozen ingredients and a few choice fresh ones and that still tastes amazing, that's what I'm looking for.
My local stores offer day-old rotisserie chicken that has been picked off the carcass already. Tastes great and saves even more time. I use it for everything from soups to pizzas to sandwiches to quesadillas...

I'm feeling kind of clever right now because this has been my go to method for chicken soup for a couple of years now. Our grocery store has pre-chopped fresh veggies, and shredded rotisserie chicken, so it's so very easy. I made this when I had COVID, and I only had to stand up long enough to dump the ingredients in the pot. I love speed scratch!
We use Better Than Bouillon in my household and it really is a good ingrediant. It's great for if you don't have time to make stock, and for imparting meaty flavors into dishes. It's a wonderful ingrediant that is worthy of pantry space.
I absolutely love learning how to replicate high end restaurant cooking techniques in my kitchen, but more practically as a home cook I'm rarely able to shell out the time it usually takes to do so. The idea of exactly what you said, being short on labor but still wanting a quality product, is incredibly attractive and I would love more videos like this to add to my weekday repertoire!

Love these 15 min videos. For me, all the cheat codes I can get. Working all day and getting home at night, the last thing I want to do is worry about cutting veggies and dealing with cleaning extra cutting boards, knives, and plates. Might be lazy, but If I can get similar results in a quarter of the time and a quarter of the mess and cleanup, it's a win!
Speed Scratch seems to be exactly the type of recipes I tend to use being just a 2 person household, it's all about finding the best 'almost there' ingredients. I hope you'll do more in this genre, haven't seen the concept explored much on TH-cam so far.
My grocery store has fresh pre cut mirepoix as well as celery, carrots and onions separately. It’s so handy. I love the Better Than Best chicken, beef and vegetable. Use less salt for sure. It’s pretty tasty. At Costco I can find pre-chopped kale. Anything that’s pre-prepared as a single person is so much easier. So this kind of recipe is great for me.
Chard is delish! To make it even speedier, crack open a container of what's marketed as "Power Greens" blend in the salad section and place a generous handful of those into a big bowl and pour the hot soup directly on top. Mixed greens will wilt, no need to chop. (Yeah, there's the big plastic container, so reuse it.)
I would love a speed scratch series, that sounds amazing. I am all about that kind of thing. I love using food chemistry + speed scratch techniques to make quick tasty food and learning more sounds like a blast to me.

Love the term speed scratch and I've been doing this for years. I have in my freezer many cooked and non cooked ingredients already chopped and ready to be thrown in a pot of soup. My favorite short cuts in my freezers are: pre chopped garlic, ginger and green scallion. (Your video just gave me idea of making my own frozen mirepoix), cooked potato and white rice.
Adding my voice to the choir here to say YES to the speed scratch theme! Don’t get me wrong, I live for your long form vids and recipes. If I had to pick one or the other, I’d pick those over speed scratch, but why not both! So many times there’s just no room for the long version in life. Speed scratch is a seriously under-represented area in TH-cam cooking and to be honest, it's more likely to be the kind of thing i'd make most days. More speed scratch means I can pick up more speed scratch tricks for my own recipes. Yes! Do more!
Interestingly about the frozen mirepoix, down here in Louisiana, we buy frozen bags of the Holy Trinity- onion, celery, and bell pepper. It's an incredible time saver, and we use it in place of mirepoix as traditional ingredients in our cuisine.

Speed Scratch would be an excellent series. I don’t plan beforehand what to have for dinner every single night, so it’d make it much easier to have a few ingredients on hand (such as the frozen veggies) to whip up something quick.

Yeah cool. On rainy days my wife makes chicken cabbage rice soup with bullion, a grocery store rotisserie chicken, and a bag of shredded coleslaw mix. It's great.
Definitely make more speed scratch videos please! I get home from work and everyone wants to eat NOW. I could use some more meal ideas. Great video for quick chicken soup. I've done a soup in the Instant Pot, but not as fast as this one.
I'm feeling kind of clever right now because this has been my go to method for chicken soup for a couple of years now. Our grocery store has pre-chopped fresh veggies, and shredded rotisserie chicken, so it's so very easy. I made this when I had COVID, and I only had to stand up long enough to dump the ingredients in the pot. I love speed scratch!

We use Better Than Bouillon in my household and it really is a good ingrediant. It's great for if you don't have time to make stock, and for imparting meaty flavors into dishes. It's a wonderful ingrediant that is worthy of pantry space.

I absolutely love learning how to replicate high end restaurant cooking techniques in my kitchen, but more practically as a home cook I'm rarely able to shell out the time it usually takes to do so. The idea of exactly what you said, being short on labor but still wanting a quality product, is incredibly attractive and I would love more videos like this to add to my weekday repertoire!

Made this today because I was feeling sniffly, now feel like a million bucks. This was FANTASTIC and super easy. I also added the juices from the rotisserie container. Mmmmmm.
As someone who's chronically ill (my body basically feels like it has the flu all the time) I love the idea of more of these kinds of recipes! Chicken soup when you're sick is not really a thing where I'm from, but I'll definitely try this, thank you 🥰

I would love to see speed scratch become a regular series. My wife and I were just talking about how often we succumb to door dash after work because we are exhausted and don't feel like cooking an extravagant meal. So we're planning on figuring out a couple "easy days" each week and this series would fit into that perfectly.

Love these 15 min videos. For me, all the cheat codes I can get. Working all day and getting home at night, the last thing I want to do is worry about cutting veggies and dealing with cleaning extra cutting boards, knives, and plates. Might be lazy, but If I can get similar results in a quarter of the time and a quarter of the mess and cleanup, it's a win!

Speed Scratch seems to be exactly the type of recipes I tend to use being just a 2 person household, it's all about finding the best 'almost there' ingredients. I hope you'll do more in this genre, haven't seen the concept explored much on TH-cam so far.
My grocery store has fresh pre cut mirepoix as well as celery, carrots and onions separately. It’s so handy. I love the Better Than Best chicken, beef and vegetable. Use less salt for sure. It’s pretty tasty. At Costco I can find pre-chopped kale. Anything that’s pre-prepared as a single person is so much easier. So this kind of recipe is great for me.

Chard is delish! To make it even speedier, crack open a container of what's marketed as "Power Greens" blend in the salad section and place a generous handful of those into a big bowl and pour the hot soup directly on top. Mixed greens will wilt, no need to chop. (Yeah, there's the big plastic container, so reuse it.)
Speed scratch is the method I prefer to use most of the time.

Love the term speed scratch and I've been doing this for years. I have in my freezer many cooked and non cooked ingredients already chopped and ready to be thrown in a pot of soup. My favorite short cuts in my freezers are: pre chopped garlic, ginger and green scallion. (Your video just gave me idea of making my own frozen mirepoix), cooked potato and white rice.
Adding my voice to the choir here to say YES to the speed scratch theme! Don’t get me wrong, I live for your long form vids and recipes. If I had to pick one or the other, I’d pick those over speed scratch, but why not both! So many times there’s just no room for the long version in life. Speed scratch is a seriously under-represented area in TH-cam cooking and to be honest, it's more likely to be the kind of thing i'd make most days. More speed scratch means I can pick up more speed scratch tricks for my own recipes. Yes! Do more!
Interestingly about the frozen mirepoix, down here in Louisiana, we buy frozen bags of the Holy Trinity- onion, celery, and bell pepper. It's an incredible time saver, and we use it in place of mirepoix as traditional ingredients in our cuisine.
Also, I've been doing speed scratch style cooking for years and never knew it had a name! Pretty neat!

Speed Scratch would be an excellent series. I don’t plan beforehand what to have for dinner every single night, so it’d make it much easier to have a few ingredients on hand (such as the frozen veggies) to whip up something quick.
Shoutouts to the wife for chicken soup when sick, but glad that now this spawned a recipe for us to make WHENEVER, because anytime's a good time for chicken soup
