How to make Turkish sweet tulumba - fried dough with sugar syrup - easy best Turkish sweet recipe

  • ingredients
    for the dough
    * 1 lt water [ in video I accidentally say 500 ml water but it’s 1 litre water ]
    * 500 gr plain flour
    * 375 gr corn flour or [ wheat flour]
    * 11 eggs
    * 125 ml syrup
    * 125 ml sunflower oil
    for the syrup
    * 3 lt water
    * 3 kg sugar
    * 1 table spoon lemon juice
    For the fried 1,5 lt sunflower oil
    Hi everyone
    in this video I’m going to show you how to make piped dough, very popular in Turkey it called Tulumba.
    You’ll like this very delicious fried doughs with sugar syrup
    It’s taste like crispy and melted in your mouth
    Directions for the syrup; transfer water into a large pot over medium heat, add sugar. When starts boiling add lemon juice and boiled another 20 minuets and turn the heat of.
    For the dough boiled 500 ml water add 125 ml oil and 125 ml syrup. Then when the water boiling add flour and stir it on the medium heat. When it becomes unsticky and soft transfer the dough to another bowl for cool down.
    Transfer the cooled dough to the mixing bowl of a stand-mixer.Then start adding your eggs gradually mix well until it will be come smooth, then add corn flour and mix well until smooth.
    Fill your piping bag with dough. Pipe the dough into oil. The oil must be room temperature, not hot. Cut the dough with an oiled scissors. Do not use knife. Turn up the heat low-temperature. When they are turn fully golden browned take them out and directly transfer into sweet syrup. Keep them in the syrup for couple minutes. Then take them out of the syrup, transfer into a plate.
    Tulumba are ready to eat.

    God bless you for this recipe, I am of Macedonian background and my mum has been making Tulumbi since I can remember , over 40 years .
    I just made these for Orthodox Easter and they are so much better than my mums .
    I will surprise her on Sunday when I go over for lunch and bring these Tulumbi with me .

    What size tip are you using and where did you buy it. All tulumba makers are available on ebay from Serbia but I don't trust to buy from them for some reason. I need to know the number on the tip.

      Hi I didn’t add anything without the recipe.
      Only add some more cornstarch if your eggs big size and you feel like dough is to soft

      А что тут непонятного,тесто почти,как на эклеры,просто сначала нужно сварить шербет,1:1 пропорционально сахар с водой и добавить ст.ложку лимонного сока,полностью остудить.
      Далее на литр воды налить 125 гр.подсолнечного масла и 125гр.,того же шербета,когда вода закипит насыпать 0,5кг муки,хороенько замесить заварное тесто ,остудить добавить 11 шт.,яиц и 350 гр.,кукурузного крахмала ,замесить однородное тесто,жарить в холодном масле,не то подгорит,если я вас удовлетворила,буду очень рада🌷

      It's because you need to consume them the same day. If you dont eat them they get soggy the next day it's normal 😂 only maybe you can add more lemon but i don't think it will make more difference

      If you like the crispy touloumba for a long time you have to make the heavy syrup. The ratio is 2 cups sugar/ 1 cup water and boil for 10 minutes. Cool it for a night in the fridge before you use it.

      Didnt cook them enough or heated the oil before cooking. You have to put them in cold oil then cook

      Make a heavy syrup with 2 cups of sugar and 1 cup of water and boil it for 10 minutes. Cool it for a night in the fridge before using.

    My dough was still sticky and I had stirred it on med-low heat for 20 mins. I just couldn’t get it to the same consistency as your video 😔

      maybe it’s over cook 10-15 minutes is enough for good consistency. Also make sure kept stir when cooking the dough

    Do you add any vanilla powder to the dough?
    Is it essential to add the syrup when making the pastry dough in the first step, or can i just add the syrup at the end? I've never seen people put syrup inside the dough, only at the end once they are fried.

      This is the original recipe from one of the best pastry shops in Turkey please follow all the steps in the video to get best result.
      Also because of the egg size if dough softer then my dough at video, you can add little bit more extra corn flour.

      But ingredients different I don’t have butter and saffron in my recipe also I have corn flower and more eggs in this recipe
      We call Tulumba in Turkish this is our one of the traditional sweets
